Wheat Naan
Ingredients :
- wheat flour - 1 cup
- maida / all purpose flour - 1 cup
- salt - 1/2 tsp
- active dry yeast - 1/2 tsp
- curd - 2 tbs
- sugar - 1 tbs
- nigella seeds (optional) - 1 tsp
- melted butter - 2 tbs
- oil - 1tbs
Method
- add yeast into 1/2 cup of luke warm water
- add in yeast and mix well
- keep aside for 10 - 12 minutes till the mixture rises
- into a large owl add in wheat flour, maida, salt and mix well
- make a well at the centre and add in the yeast mixture, curd and oil
- combine well
- add in luke warm water gradually and make a sticky dough
- knead it for 5 minutes so that the dough become soft
- apply some oil all over the dough
- tuck the dough and keep it covered till become double in size
- for me it took 2 hours and it may vary depending on the weather condition
- punch it down and knead slightly for 1 minute
- make balls of equal size
- roll them into circle or oval shape
- do not make them too thin
- sprinkle some nigella seeds and press gently
- grease the back side with water so that it will stick to the tawa nicely
- place it on a hot tawa and press gently* (see notes)
- cook one side for 1 minute until bubble appear on top
- then turn the tawa and cook it upside down till golden spots appear all over
- scrape from the sides and transfer into a plate
- brush some melted butter
- repeat the same with remaining dough
- serve them hot with your favourite curry
Note
- If you don't have an iron tawa , just cook it the way you make phulka
- Never use damaged non stick tawa for this purpose
