Easy Eggless Whole Wheat Chocolate Cake Recipe | chocolate truffle cake | चॉकलेट केक बनाने की विधि




Chocolate Truffle Cake

 Ingredients :

For cake :-

 Atta – 1+1/2 cups (or you can use maida)
Corn flour – 3 tbs
Cocoa powder – ¼ cup
Baking soda -1 tsp
Salt – ½ tsp
Water  - 1 cup
Sugar  - 1 cup
Vegetable oil – 1/3cup
Lemon juice – 1 tbs
Vanilla essence - 1 tsp
For icing :-
Dark compound chocolate grated – 4 cups
Fresh cream – 2 cups
Unsalted butter – 1 tbs

Method

 Step 1 :  Baking

 i)  Preparation of dry ingredients

·         Remove 3 tablespoons of flour from 1+1/2 cups of flour *
·         Add in corn flour, cocoa powder, baking powder and salt.
·         Sift them 3 – 4 times  and keep aside

ii) Preparation of wet ingredients

·         Into a bowl pour 1 cup of water
·         Add in vegetable oil, sugar, lemon juice and vanilla essence
·         Stir well till combined

iii) Addition of dry ingredients into wet ingredients

·         Add in the sifted flour mix into the wet mixture slowly
·         Mix them gently so that no lumps are formed

iv) Baking

·         Pour the cake batter into a prepared cake tin (9 inch)*
·         Bake at 1800 C for 30 minutes in a preheated oven
·         Check the doneness by inserting a skewer at the center of the cake
·         If it came out clean the cake is baked completely
·         Keep it in the cake tin for 10 minutes
·         Then transfer into a wire rack and allow to cool completely

Step 2 : Icing

i) Preparation of Ganache
  • ·       Pour 2 cups of fresh cream into a sauce pan
  • ·         Add in 1 tablespoon of butter
  • ·         Bring just to a boil in low flame y stirring continuously
  • ·         Switch off the flame and pour it over the grated chocolate*
  • ·         Set aside for 2-3 minutes so that the chocolate get melted
  • ·         Then mix gently with a wooden spoon
  • ·         Keep it in room temperature till it get thickened (minimum 3 hours)
ii) Assembling the cake

  • ·         Split the cake into two layers
  • ·         brush some sugar syrup on the first layer
  • ·         spread the thick ganache over it
  • ·         then place the second layer on top
  • ·         brush sugar syrup and then spread ganache till it coated completely
  • ·         place it in the refrigerator for 10 minutes
  • ·         again  take it out and spread the ganache all over it
  • ·         place it in the refrigerator for 10 minutes
  • ·         heat up the ganache in double boiler or microwave it till  become thin
  • ·         take out the cake from refrigerator
  • ·         pour the ganache over it
  • ·         do some decoration according to your imagination
  • ·         lovely chocolate truffle cake is ready to serve

Notes*


  1. -         I used atta for this cake
  2. -         Corn flour is used to make the cake light
  3. -          For preparing the cake tin grease it with butter or oil ;then line it with utter paper
  4. -         Grate the chocolate finely so that it get melted nicely

Beef Stew Kerala Style Recipe | How to Make Beef Stew With Potatoes And Carrots



Meat Stew  Kerala Style

 Ingredients

  cooked beef/mutton : 300g (*see notes)
  boiled and cubed potato - 2
  boiled and cubed carrot - 2
  thin coconut milk - 2 cups (*see notes)
  thick coconut milk - 1+1/2 cups
  onion sliced - 1
  green chillies - 5
  pepper powder - 1 tsp (adjust as per taste)
  whole spices (1' cinnamon,4 cloves, small piece of star annise,seeds of 4 cardamom)
  curry leaves
  ginger crushed 1"
  garlic crushed 3
  salt
  coconut oil

 Method

 - heat up 2 tbs oil in a kadai and crack whole spices
 - saute onion till get softened
 - add in ginger and garlic and saute till raw smell gone
 - add in green chillies and curry leaves and saute well
 - add in pepper powder and mix well
 - add in thin coconut milk and cook till get boiled and slightly thickened
 - add in thick coconut milk
 - cook in low medium flame till begin to boil
 - switch off flame and serve after 5 minutes
 - best combination with appam, chapati,bread, vattayappam etc.

*Notes

  - meat with fat is better for making stew
  - cook the meat along with salt,pepper powder,garam masala,and ginger garlic paste
  - stew become thick as it sit ; so adjust the amount of coconut milk
  - use coconut oil for authentic taste

Onion Paratha Recipe | pyaz ka paratha | प्याज का पराठा रेसिपी



Onion Paratha | Pyas ka Paratha

 Ingredients :

  wheat flour/atta - 2 cups
  garam masala - 1/2 tsp
  chilly powder - 1 tsp
  ajwain - 1 tsp
  salt - as needed
  ghee - t tbs + for brushing
  onion - chopped 1 big
  coriander leaves - 2 tbs
  water as needed

Method

 step 1 : preparing the dough

  - combine all the ingredients
  - add in water little by little and make dough which is a little bit harder than chapati dough

  step 2 : cooking

   - heat up a tawa
   - take ball sized dough
   - roll it using a rolling pin into 6" diameter
   - place it on the hot tawa
   - flip it when one side is almost cooked
   - brush some ghee or oil and press gently
   - turn it again and apply ghee on that side as well
   - when there appear golden spot on both sides remove from tawa
    - repeat the same with remaining dough
     - serve hot as itself or with favourite curry

Note

 - make paratha as soon as the dough is ready because the moisture from onion will make the dough sticky if it sit for a long time.

Quick And Easy Potato Cheese Balls Recipe | आलू चीज़ बॉल्स रेसिपी



Potato Cheese Balls

Ingredients :

 Boiled and mashed potato – 1 big
 Garam masala – ¼ tsp
 Pepper powder – ½ tsp
 Salt – as needed
 Finely chopped coriander leaves – 2 tbs
 Besan flour – ½ cup
 Grated cheese – ½ cup
 Rice flour – 2 tbs  
    
Method

Step 1 : preparing the mixture

-          Mix together mashed potato, garam masala,pepper powder,salt and besan flour
-          Then add in the cheese and mix well
-          Finally add in the rice flour and mix well
-          Check for salt and spice level
-          Apply some oil on palms and make small balls from the mix

Step 2 : frying

-          Heat up oil in a frying pan
-          Put each balls into the hot oil
-          Turn them to get fried evenly
-          When become golden and crisp, drain into  snack napkin

-          Serve hot with tomato ketchup

Carrot Balls Recipe | Diwali Special Sweets



Carrot Balls

 Ingredients:

Carrot – ¼ kg (peeled and grated)
Grated coconut – 1 cup
Sugar – 1 cup
Milk – 1 cup
Ghee – 2 tsp
Cardamom powder – ½ tsp
Cashews – ½ cup
Bread crumps – Of 5 slices


Method

-          Into a heavy bottomed vessel add carrot, coconut, sugar and milk
-          Switch on the flame and bring the mixture to boil
-          Stir constantly on medium flame
-          When the moisture reduce to half add 1 tsp ghee
-          Continue stirring
-          When 80% of moisture get evaporated again add 1 tsp ghee
-          When the mixture get thickened add cardamom powder, cashews and bread crumps
-          Combine well and switch off the flame
-          Allow the mixture to cool down

-          Then shape them into small balls and enjoy.

Note: For me it took around 20 minutes to get the thickened mixture

Potato Egg Curry Kerala Style | Thenga Varutharacha Urulakizhangu Mutta curry



Varutharacha Urulakizhangu Mutta Curry

 Ingredients :

  boiled potato - 2 medium
  hard boiled eggs - 3
  dessicated coconut - 1/2 cup( or use 1 cup of fresh coconut)
  shallots (kunjully) chopped - 2-3
  crushed ginger-garlic - 1 tsp(1/2 inch ginger and 3 garlic cloves)
  a few curry leaves
  enough salt

  powder masalas:

    coriander powder - 2 tbs
    chilly powder 1 tbs
    garam masala - 1 tsp
    pepper powder - 1/2 tsp
    turmeric powder - 1/2 tsp

 Method

  step 1 : prepare the ingredients

  - heat up 2 tsp coconut oil in a frying pan
  - roast the coconut,shallots,ginger garlic and curry leaves till dark brown colour(*refer notes)
  - reduce flame and then add the powder masalas and roast till the raw smell gone
  - switch off flame and let it cool down
  - grind into a fine paste without adding water and keep aside
  - cut the boiled potato into small cubes and keep aside
  - remove shell of the eggs and make small cuts on them and keep aside

 step 2 : preparation of curry

  - add the ground coconut paste into a kadai and add in 1 cup of hot water
  - add in enough salt
  - when it boil add in the potato and eggs and mix gently
  - cover and cook till the oil separate (about 1 minute) and switch off the flame
  - fry some chopped shallots and curry leaves and pour it over the curry
  - it may get thickened as it sits and so adjust the thickness by adding more or less water
  - it is a very good combination with rice

*Notes

 - when roasting  the coconut stir continuously on medium flame
 - before adding the powder masalas reduce the flame to avoid burning of masalas
 - when boiling the eggs add a few salt into the water to prevent leakage of the eggs

Cheese Garlic Bread Without Oven

 Ingredients:

  bread slices - 4
  salted butter - 2 tbs(*see notes)
  minced garlic - 1/2 tsp
  grated cheese - 1/2 cup
  chilly flakes - a few
  pepper powder - a few
  dried herbs (oregano/coriander leaves/mint leaves/Italian herbs)

 Method

 step 1

  - mix the minced garlic with butter and combine well
  - apply it on one side of the bread slices
  - spread the grated cheese generously
  - sprinkle some chilly flakes,pepper powder and dried herbs

 step 2

  - heat up the garlic flavoured butter on a tawa
  - place the bread slices
  - cover it and cook on low flame till the cheese melt and sides become crisp
  - transfer into the serving plate and serve with tea

*Notes

 - use  butter which is at room temperature
 - if using unsalted butter add a little salt to the butter

Broken Wheat Upma | Nurukku Gothambu Upma



 It is an easy and healthy breakfast recipe.

Ingredients :

  broken wheat - 1 cup
  shallots chopped - 1/4 cup
  carrot chopped - 1/2 cup
  grated coconut - 1/2 cup
  finely chopped ginger - 1/2 tsp
  cashews - a handful
  red chillies - 2
  curry leaves
  salt
  water - 3 cups
  mustard seeds - 1 tsp
  ghee - 2 tsp
  coconut oil - 2 tsp

Method

 step 1

  - wash the broken wheat 3 - 4 times
  - put into a small pressure cooker
  - add in 3 cups of water and enough salt
  - cook for 2 whistles

 step 2

  - heat up 2 tsp ghee and 2 tsp oil
  - fry the cashews till golden and then drain and keep aside
  - to the remaining oil crack mustard seeds
  - saute the shallots till softened
  - add in the chillies,ginger,curry leaves and carrot
  - add in enough salt and cook it covered for a few minutes (till the carrot get softened)
  - then add in the cooked wheat,grated coconut and fried cashews
  - mix well and cook it on low flame for 2 minutes
  - healthy and easy upma is ready to serve
  - serve hot
