Madakku Recipe | Madakku San | Madakku Seva | Ainas | Khaja


Ingredients
  • Maida 1 1/2 cups (200g0
  • Salt 1/2 tsp (3g)
  • Water 100ml (6 tbs + 2 tsp)
  • Yellow food colour a few drops
 For the syrup
  • Sugar 1/2 cup (100g)
  • Water 1/4 cup (60ml)
 Method
  • Add food color to water
  • Combine together flour, salt and water
  • Cover and allow it to rest for minimum 30 minutes
  • Divide the dough into 5 equal pieces
  • Shape them to smooth balls
  • Spread some rice four on the counter top
  • Roll out each ball to 6 inch circles
  • Apply some ghee and then sprinkle rice flour over each dough circles
  • Stack them and roll into a rectangle shape
  • Again brush some ghee and sprinkle rice flour over it
  • Now roll this to get a log shape
  • Cut this into 1 inch pieces
  • Roll out each pieces slightly and deep fry in hot oil
  • Keep the flame to medium and fry them until very crispy
  • When they are ready, remove from oil and allow them to cool down completely
  • To make the sugar syrup, add sugar and water to a vessel
  • Boil till it reaches one string consistency
  • Dip each fried kaja in the syrup
  • Allow them to dry 
  • And the delicious , flaky and crunchy kaja / madakk is ready to serve

Easy Egg Roast
  • Boiled eggs 4
  • Garlic cloves 6
  • Chilli powder 1.5 tbs
  • Turmeric powder 1/2 tsp
  • Vinegar 1 tbs
  • Salt
Method
  • Add oil in a pan
  • When it is hot enough add crushed garlic and sauté for a while
  • Add chilli powder and turmeric powder 
  • Stir for a few seconds till the raw smell disappear
  • Add vinegar, salt and 2 tbs of water
  • add the boiled and halved eggs
  • Turn after 30 seconds
  • Switch off the flame after 20 seconds
  • Serve hot with hot rice

ഞൊടിയിടയിൽ ഒരു നല്ല പരിപ്പ് കറി | Parippu Curry Kerala Style


Ingredients
  • Toor dal 3/4 cup (150g)
  • Onion 1/2 of 1
  • Green chilli 1
  • Tomato 1 small
  • Shallots 4 (20g)
  • Garlic 8 cloves (10g)
  • Curry leaves 2 sprig
  • Chilli flakes 3/4 tablespoon
  • Turmeric powder 1/2 tsp
  • Water 1.5 cups
  • Salt 1 tsp
  • Coconut oil 2 tablespoon
 Method
  • Cook the rinsed dal along with onion, tomato, green chilli, salt and water in a pressure cooker
  • Crush the shallots and garlic
  • Heat up oil in a pan and add crushed shallots, garlic and curry leaves
  • Fry them until slightly brown in color
  • Add chilli flakes and turmeric powder
  • Stir for  few seconds
  • Add cooked dal and combine well.
  • Serve hot with rice or chapati

അപ്പത്തിനും ചപ്പാത്തിക്കും ഒരു കിടിലൻ മുട്ടക്കറി | Mutta curry Recipe


Ingredients:
  • Boiled eggs 4
  • Onion 1 (100g)
  • Tomato 1small (50g)
  • Green chilli 4
  • Ginger garlic paste 2 tsp
  • Red chilli powder 1/2 tsp (adjust according to taste)
  • Pepper 1/2 tsp
  • Fennel powder 1/2 tsp
  • Garam masala 1/2 tsp
  • Coriander powder 2 tsp
  • Curry leaves 1 sprig
  • Coriander leaves
  • Kasoori methi
  • Oil 3 tbs
  • Salt as needed
  • Thick coconut milk 3/4 cup
 Method
  • Heat up oil in a pan
  • Add onion and stir for 4-5 minutes until slightly golden in color
  • Add ginger garlic paste, green chilli, and curry leaves
  • Stir and cook for 2 minutes
  • Add tomato and salt
  • Cook till the tomato is soft
  • Add the spice powders and stir on low heat for 1 minute
  • Further add 1.5 cups of water
  • When it begin to boil, add the eggs, coconut milk, coriander leaves and kasoori methi
  • Cover and cook for a couple of minutes and turn off the heat.
  • Delicious egg curry is ready to serve
  • This egg curry is an amazing combination with chapati, idiyappam, appam etc.
