Chicken Salad Recipe | Healthy Salad Recipe For Weight Loss



Chicken Salad

 Try this crunchy, colourful and healthy salad..you are really going to love it..

 Ingredients :


  • chicken 300 g
  • salt
  • pepper powder as needed
  • lemon juice
  • ginger garlic paste - 1 tsp
  • thick curd/yogurt - 1 cup
  • apple cider vinegar - 1 tbs
  • carrot (thinly sliced) - 1 medium
  • cucumber (chopped) - 1 medium
  • spring onion chopped - 2 tbs
  • capsicum sliced - 2 tbs
  • cabbage chopped - 1/2 cup
  • tomato ( sliced) - 1 medium
  • apple (chopped) - 1
  • pomegranate - 3 tbs
  • coconut flakes - 2 tbs
  • roasted peanut - 3 tbs

 Method


 step 1 : preparing chicken


  • marinate the chicken pieces with salt, pepper powder and lemon juice
  • keep it aside for 15 - 20 minutes
  • then cook them along with 1/4 cup of water
  • when they are done, allow them to cool down
  • cut them into small pieces

 step 2 : salad dressing



  • add 1 cup of curd/yogurt into a bowl
  • add in salt, pepper powder and apple cider vinegar
  • mix very well, salad dressing is ready 

 step 3 : assembling



  • add in rest of the ingredients into the salad dressing
  • add in chicken pieces
  • mix very well
  • quick and healthy salad is ready to serve

Instant Rava Idli Recipe | Sooji Idli Recipe | How To Make Rava Idli Batter At Home |



Instant Rava Idli

 Ingredients :


  • rava / sooji - 1 cup
  • mustard seeds - 1tsp
  • urad dal - 1 tsp
  • green chilly chopped - 1 tsp
  • curry leaves
  • ginger - 1 small piece chopped
  • carrot chopped - 1/4 cup
  • curd - 1/2 cup
  • coriander leaves
  • salt
  • baking soda - a generous pinch
  • oil 

 Method :


  step 1 : preparation of batter


  • heat up 2 tbs oil and crack some mustard seeds
  • add in urad dal and saute until colour changed slightly
  • add in chopped green chilly, curry leaves and ginger
  • saute them for a while
  • add in onion and carrot and saute for 3 - 4 minutes
  • add in rava and roast on medium heat until nice aroma comes ( 3 4 minutes)
  • now turn off the flame and let the mixture cool down
  • when it is cool add in coriander leaves, curd and 3/4 - 1 cup of water
  • let the mixture to stand for 15 minutes
  • add in salt and baking soda
  • consistency of batter should not be too thick or thin

  step 2 : steaming



  • boil water in a steamer
  • grease the idly mould with oil
  • pour in the batter into the pits
  • steam for 8 - 10 minutes or a tooth pick inserted came out clean
  • remove from steamer and allow them to cool for a few minutes
  • then remove from idli tray and serve with coconut chutney

How To Make Butterscotch Ice Cream At Home



Butterscotch Ice Cream Recipe

 Ingredients :


  • heavy cream - 1 cup ( for heavy cream recipe : https://youtu.be/fUmqC6vwWoY )
  • sweetened condensed milk - 1/2 cup
  • butterscotch sauce - 2 tbs (for butterscotch sauce recipe : https://youtu.be/o-bi0dqPWOk )
  • praline * - as needed

 Method



  •  beat the cream until get thickened ( do not over - beat the cream )
  • add in condensed milk, butterscotch sauce and praline
  • beat for 3-4 sec
  • pour into a freezer safe container and cover with a tight lid
  • place in the freezer for 5 hours 
  • easy homemade butterscotch ice cream is ready
  • while serving garnish with some butterscotch sauce and praline

 * How to make praline ?



  • add 4 tbs sugar and 1 tbs water in a saucepan
  • cook on low medium flame until golden
  • it may take around 4 - 5 minutes
  • when it got a golden shade, switch off the flame 
  • add in 2 tbs cashews
  • pour the mixture immediately on to a greased foil or plate and allow it to cool completely
  • once it is cool, make it a coarse powder 
  • praline is ready to use


Homemade Butterscotch Sauce Recipe



Butterscotch Sauce

 Ingredients :


  • brown sugar - 1/2 cup*
  • unsalted butter - 4 tbs
  • fresh cream - 1/2 cup
  • salt - 1/2 tsp
  • vanilla essence - a few drops

 Method



  • add butter into a saucepan
  • melt it on low medium heat
  • add in sugar and stir well
  • add in the cream
  • bring to a boil and simmer for 3 minutes
  • turn off the heat and stir in vanilla and salt
  • transfer into a container to cool
  • you can store it in refrigerator up to 2 weeks

 Notes :



  • we may confuse between butterscotch sauce and caramel sauce
  • caramel sauce is made with white refined sugar whereas butterscotch sauce is made with brown sugar
  • the process of making both are almost similar, but taste wise both are different
  • butterscotch sauce is sweeter than caramel sauce
  • brown sugar is of two types :- light brown sugar and dark brown sugar, the presence of molasses gives them the distinctive colour and taste
  • for this recipe I used light brown sugar, but you can use dark brown sugar as well
  • butterscotch thickens as it sits, so do not over - boil the sauce
  • you can decide the consistency of the sauce

Instant Rava Dosa Recipe | Crispy Sooji Dosa Recipe



Rava Dosa

 Ingredients :


  • rava/sooji - 1 cup
  • rice flour - 1/2 cup
  • cumin - 1/2 tsp
  • finely chopped onion - 2tbs
  • green chilly - 2tsp
  • chopped coriander leaves & curry leaves
  • salt
  • curd - 2 tbs
  • water as needed to make a thin batter

 Method


  • mix all the ingredients in a bowl
  • make a thin batter of buttermilk consistency
  • let the batter rest for 15 minutes
  • add more water if needed
  • adjust the salt level
  • heat up a tawa
  • keep the flame high
  • mix the batter
  • pour the batter on hot tawa
  • no need to spread 
  • when top side looks cooked spread 1 tsp oil/ghee to make it more crispy
  • cook till the base become golden and crisp, fold the dosa and remove from tawa
  • make dosa with the remaining batter
  • serve hot with your favourite chutney
  • it can be served without any side also

Milk Bread Recipe | How To Make Milk Bread At Home



Milk Bread

 Ingredients :


  • maida - 2 + 1/2 cup (250 ml cup)
  • milk powder - 4 tbs
  • sugar - 2tbs
  • salt - 1 tsp
  • butter - 4 tbs
  • active dried yeast - 1tsp
  • luke warm water - 200ml

 Method :


  step1 : proofing of yeast


  • take 200 ml luke warm water in a bowl 
  • add in yeast and 1 tsp sugar and mix well
  • keep aside until frothy
  • it may take around 10 - 12 minutes
  • do not use it, if it is not frothy

  step 2 : preparation of dough



  • take maida in a bowl
  • add in all the ingredients and mix well
  • knead it for 15 - 20 minutes until smooth and elastic
  • in the beginning it will be a sticky dough, after kneading it will no longer be sticky

  step 3 : proofing of dough



  • grease a bowl
  • place the dough in it and turn 
  • cover with a plastic wrap or kitchen towel and place in a warm place until double in size
  • do not over proof the dough
  • it may take around 2 hours
  • when it is double in size, punch the air out
  • shape into a loaf and place it in a greased bread tin
  • cover it and allow it to rise ,around 45 minutes to 1 hour

  step 4 : baking



  • bake in a preheated oven at 180 degree C for 35 - 40 minutes
  • place at the lower rack of oven
  • if it turns brown before time, cover with an aluminium foil and continue baking
  • turn the loaf tin  in between to ensure even baking
  • when it is done, brush butter to soften the crust
  • remove from pan and allow it to cool completely
  • when it is completely cool, cut into slices and serve

 Notes:

  • try to use organic maida if possible
  • rising time of dough may vary depending on weather condition

Chilli Potato Recipe | How To Make Potato Chilli At Home



Chilli Potato

 Ingredients :


  • potato - 3 medium (sliced lengthwise)
  • chopped garlic - 1 tbs
  • chopped ginger - 2 tsp
  • chopped green chilly - 2 tsp
  • onion - 1 medium
  • soya sauce - 1 tbs
  • red chilly sauce - t tbs
  • tomato sauce - 2 tbs
  • vinegar - 1 tsp
  • pepper powder - 1 tsp
  • corn flour - 2 tbs + 2 tsp
  • rice flour - 1 tbs
  • salt
  • sugar - 1/2 tsp
  • spring onion chopped - 2 tbs

 Method


  step 1 : boiling potato slices


  • boil 4 cups of water
  • add in enough salt
  • add in potato slices into the boiling water and boil them for 2 minutes
  • it helps to reduce the starch content in potato
  • after 2 minutes drain from water and let them cool down

  step 2 : frying potato slices



  • add the boiled potato slices into a bowl
  • add in 2 tbs corn flour, 1 tbs rice flour, 1/2 tsp pepper powder and salt
  • combine well
  • deep fry them in batches until golden and crisp
  • drain them and keep aside

  step 3 : preparing gravy



  • heat up 2 tbs oil
  • saute garlic, ginger and green chilly until golden
  • saute onion until soft
  • add in soya sauce, chilly sauce, tomato sauce and vinegar
  • mix 2 tsp corn flour with 1/4 cup of water and add into the mix
  • cook it until reduce to half
  • add in 1/2 tsp pepper powder and sugar
  • check the salt and add if needed
  • add in more sauce if needed
  • add in the fried potato and mix well
  • finally sprinkle the spring onion 
  • spicy chilly potato is ready to serve
  • serve hot
