Christmas Star Bread Recipe

 Ingredients :

  for the dough

  • all purpose flour/maida - 2 cups (290g)
  • salt - 1/2 tsp
  • warm milk - 1/2 cup ( 120 ml)
  • sugar - 3 tbs
  • active dry yeast - 1/2 tsp
  • egg - 1
  • melted butter - 3 tbs (45 g)

  for filling


  • sugar - 4 tbs
  • cinnamon powder - 1 tsp
  • melted butter for brush on top

  Method


   step 1 : prepare dough

  • take 1/2 cup warm milk (110 degree F ) in a bowl
  • add in 1 tbs sugar and yeast and mix well
  • keep this aside until frothy
  • in a mixing bowl add the yeast dissolved milk, 2 tbs sugar, egg and butter
  • mix well
  • add in flour and salt
  • make a dough and knead this for 5 minutes

  step 2 : first proofing

  • then transfer this into a greased bowl, turning once to grease the top
  • cover it and keep in a warm place until double in size, for me it took 2 hours
  • then punch the air out

  step 3 : shaping

  • cut the dough into 4 equal parts
  • shape them into balls
  • cover and let them rest for 10 minutes
  • meanwhile prepare cinnamon - sugar by mixing both of them together
  • then roll each ball into 8 inch circle
  • transfer the disc onto a parchment paper
  • apply melted butter all over followed by spreading 1/3 cinnamon- sugar mix
  • roll the second ball and place this on top of first circle
  • repeat the layering process
  • do the same with the third circle
  • then roll the fourth ball and keep it bare
  • place a 2 inch cutter at the centre and mark a circle
  • then using a sharp knife, cut 16 equal strips
  • grasp two adjacent strips and twist them two times outward
  • pinch the edges
  • repeat the same with remaining strips
  • now you have a star with 8 points
  • transfer this onto a baking tray

  step 4 :second proofing


  • cover the shaped dough and keep in a warm place until puff up
  • it may take around 40 - 45 minutes
  • then give egg wash

  step 5 : baking 


  • bake in a preheated oven at 170 degree Celsius for 25 - 28 minutes
  • once it is done remove from oven
  • sprinkle some powdered sugar on top
  • serve this delicious sweet bread warm

Lamingtons Recipe | Lamington Cake Recipe | Australian Chocolate Cake Recipe

Lamington Cake

 Lamington is an Australian cake,made of squares of sponge cake, coated in an outer layer of chocolate icing and desiccated coconut.

Ingredients :

 for sponge cake

  • eggs - 3
  • powdered sugar - 1 cup
  • oil/butter - 1/2 cup
  • vanilla essence - 1/2 tsp
  • all purpose flour/maida - 1 cup
  • baking powder - 1 tsp
  • salt - a pinch

  for chocolate icing

  • powdered sugar - 1.5 cup
  • cocoa powder - 1.5 tbs
  • unsalted soft butter - 1 tsp
  • hot milk - 3 tbs

  for coating 

  •  desiccated coconut 1 cup or as needed

 Method

  step 1 : prepare cake tin

  • grease an 8 inch pan with butter or oil and dust it with flour
  • remove the excess flour and keep this aside

  step 2 : preheat oven

  • preheat the oven at 180 degree Celsius
  • you can bake this on stove top also

 step 3 : prepare sponge cake

  • in a large mixing bowl beat the eggs and sugar
  • add the sugar gradually 
  • beat until the mix become thick and light cream in colour
  • add the oil and vanilla essence and beat until well combined
  • sift in flour, baking powder and salt
  • fold in gently
  • pour this into the prepared baking tin and tap 3 - 4 times
  • bake this in the preheated oven at 170 degree Celsius for 25 - 30 minutes
  • once the cake is done remove from oven
  • after 10 minutes remove the cake from cake tin and allow it to cool completely
  • then cut them into 5 cm squares

 step 4 : prepare chocolate icing

  • in a bowl mix together powdered sugar and cocoa powder
  • add in butter and milk
  • add milk gradually 
  • the mix should not be too thick or too thin

 step 5 : coating

  • dip each cake squares in the chocolate icing
  • shake to remove the excess
  • then roll in desiccated coconut 
  • allow them to dry for some time and then serve

Basbousa Recipe

 Basbousa is a Middle Eastern sweet cake soaked in sugar syrup.

Ingredients :

 for cake batter


  • semolina/rava - 1 cup
  • all purpose flour/maida - 1 cup
  • desiccated coconut - 1/2 cup
  • curd/yogurt - 1 cup
  • vegetable oil - 3/4 cup
  • lemon zest of 1 lemon
  • eggs - 3
  • powdered sugar - 1 cup
  • baking powder - 1 tsp
  • salt - a pinch

 for sugar syrup


  • sugar - 3/4 cup
  • water - 1 cup
  • lemon juice - 1 tbs

 Method

  step 1 : prepare cake tin

  • grease a cake tin with oil, I used a rectangle tin, you can cake tin of any shape

  step 2 : preheat the oven

  • preheat the oven at 180 degree Celsius
  • you can bake this cake in stove top also

  step 3 : prepare cake batter

  • into a mixing bowl combine sugar and eggs
  • then add in coconut, semolina and curd
  • mix well
  • now sift in flour, baking powder and salt
  • mix in gently
  • transfer this batter into the prepared tin 

  step 4 : baking

  • bake this in the preheated oven at 180 degree Celsius for 40 - 45 minutes  

  step 5 : prepare sugar syrup

  • while the cake is baking, prepare sugar syrup
  • add in sugar and water in a sauce pan
  • bring to boil until the sugar is dissolved
  • add in lemon juice and boil this for another 2 - 3 minutes
  • then switch off the flame and and allow the syrup to cool completely

  step 5 : soaking

  • when the cake is done remove it from oven
  • make cuts of desired shape
  • pour the cool sugar syrup over the hot cake
  • let the cake sit for minimum 10 minutes
  • then garnish with pistachio, coconut, cashew or almonds
  • now you can serve this delicious super soft cake
