Wheat Naan Recipe At home | Butter Naan Recipe At Home On Tawa



Wheat Naan

 Ingredients :


  • wheat flour - 1 cup
  • maida / all purpose flour - 1 cup
  • salt - 1/2 tsp
  • active dry yeast - 1/2 tsp
  • curd - 2 tbs
  • sugar - 1 tbs
  • nigella seeds (optional) - 1 tsp
  • melted butter - 2 tbs
  • oil - 1tbs 

 Method



  • add yeast into 1/2 cup of luke warm water
  • add in yeast and mix well
  • keep aside for 10 - 12 minutes till the mixture rises
  • into a large owl add in wheat flour, maida, salt and mix well
  • make a well at the centre and add in the yeast mixture, curd and oil
  • combine well
  • add in luke warm water gradually and make a sticky dough
  • knead it for 5 minutes so that the dough become soft
  • apply some oil all over the dough
  • tuck the dough and keep it covered till become double in size
  • for me it took 2 hours and it may vary depending on the weather condition
  • punch it down and knead slightly for 1 minute
  • make balls of equal size
  • roll them into circle or oval shape 
  • do not make them too thin
  • sprinkle some nigella seeds and press gently
  • grease the back side with water so that it will stick to the tawa nicely
  • place it on a hot tawa and press gently* (see notes)
  • cook one side for 1 minute until bubble appear on top
  • then turn the tawa and cook it upside down till golden spots appear all over
  • scrape from the sides and transfer into a plate
  • brush some melted butter 
  • repeat the same with remaining dough
  • serve them hot with your favourite curry

 Note



  • If you don't have an iron tawa , just cook it the way you make phulka
  • Never use damaged non stick tawa for this purpose

Vegetable Fried Rice Recipe



Vegetable Fried Rice

 Ingredients :


  • cooked biryani rice - 3 cups *(see notes)
  • finely chopped carrot - 1/2 cup
  • finely chopped beans - 1/2 cup
  • finely chopped ginger - 1 tbs
  • finely chopped garlic - 1 tbs
  • chopped capsicum - 1/4 cup
  • chopped spring onion - 1/2 cup
  • soya sauce - 1 tbs*(see notes)
  • vinegar - 1 tbs
  • salt as required
  • a pinch of sugar
  • pepper powder - 1tsp
  • oil - 2 tbs (olive oil/any veg oil)

Method



  • heat up 2 tbs oil in a wok
  • fry ginger and garlic till golden
  • add in carrot and beans
  • stir on high flame for 2 minutes 
  • keep flame on high so that the vegetables retain their colour and crunchiness
  • now add in capsicum and half of spring onion
  • add salt and mix well
  • next add in soya sauce, pepper powder, vinegar and sugar
  • then add in rice and mix well
  • fry on high flame for 2 minutes
  • finally add in the remaining spring onion and mix well
  • yummy vegetable fried rice is ready to serve

 Notes*


  • how to cook rice :- cook the rice in plenty of water along with a few oil ;when 90% is cooked ,drain and allow it to cool completely
  • You can avoid soya sauce if you wish. Keep in mind that the soya sauce contain high level of sodium and avoid its frequent consumption.

Aloo Mutter masala Recipe | Aloo Mutter Curry Recipe | aloo mutter sabzi recipe |


Aloo Mutter Masala 

  Ingredients :


  • green peas ( fresh or frozen )- 1/2 cup 
  • potato - 2 big
  • Finley chopped onion - 2 big
  • green chilly - 2
  • ginger garlic paste - 1 tsp
  • tomato puri - of 2 medium sized tomatoes
  • cumin seeds - 1 tsp
  • coriander powder - 2 tsp
  • turmeric powder - 1/2 tsp
  • chilly powder - 1 tsp
  • garam masala - 1 tsp
  • salt as needed
  • coriander leaves - 2 tbs

Method


  • boil potato until soft, then peel and cut into cubes
  • cook green peas with a little water until soft
  • heat up oil in a kadai and add 1 tsp cumin seeds
  • when cumin seeds turn aromatic, add onion and saute until golden brown colour
  • add in green chilly and ginger garlic paste
  • saute until raw smell gone
  • reduce flame and add in coriander powder, turmeric powder, chilly powder and garam masala
  • saute for a few seconds
  • now add in the tomato puri and cook it until oil separates
  • next add in green peas, potato and combine well
  • add in 1 + 1/2 cup water ( or as needed )
  • adjust salt 
  • cook it covered for 6 - 7 minutes
  • add in coriander leaves and mix well
  • yummy aloo mutter masala is ready to serve
  • goes well with chapati, phulka, nan etc.

How to Make Cream Cheese at Home



Homemade Cream Cheese

 Ingredients :


  • milk - 1 litre
  • lemon juice/vinegar - 3 tbs
  • a pinch of salt

Method



  • heat up milk in heavy bottomed sauce pan on medium high heat
  • stir occasionally
  • when it begin to boil add in the lemon juice little by little 
  • stir continuously until the milk curdles
  • now remove it from heat 
  • place a sieve over a bowl and line it with a muslin cloth
  • strain it
  • keep it for drain about 15 minutes
  • transfer the curd into a mixer jar and add a pinch of salt
  • grind it into a fine paste along with 1-  2 tbs whey
  • now the homemade cream cheese is ready
  • you can store it up to 7 days in refrigerator

 Note :


  • the whey can be used to knead chapati dough or to make gravy

Vegetable Biryani Recipe



Vegetable Biryani

 Ingredients :

  for vegetable masala


  • onion sliced - 2 big
  • crushed ginger & garlic - 2 tbs
  • slitted green chilly - 6 (adjust as per taste )
  • tomatoes chopped - 2 medium
  • carrot chopped - 100g
  • potato chopped - 100g
  • beans chopped - 100g
  • green peas - 100g
  • turmeric powder - 1/2 tsp
  • garam masala - 1 tbs
  • coconut paste - of 1 cup grated coconut
  • coriander leaves - 1/4 cup
  • mint leaves - 1/4 cup

  for rice



  • biryani rice - 3 cups ( I used jeerakasala rice )
  • ghee - 2 tbs
  • spices - 1" cinnamon, 4 clove, seeds of 4 cardamom, 1 bay leaf
  • boiling water - 5 + 1/4 cup ( for 1 cup rice add 1 + 3/4 cup water )
  • salt as needed
  • lemon juice - 1 tbs

  for garnishing :



  • fried cashews, fried raisins and fried onion
  • garam masala
  • bread slices 4 cubed fried

 Method


  step 1 : preparation vegetable masala 


  • heat up 3 tbs oil
  • saute onion till transparent
  • add in ginger - garlic
  • saute until raw smell gone
  • add in green chilly
  • next add in tomatoes and saute until become soft
  • now add in the vegetables ( if using fresh peas add now ;otherwise pressure cook it separately and add later )
  • add in salt and turmeric powder
  • saute for 2 minutes
  • add in 1/2 cup of water and cook until the vegetables are done
  • if using cooked peas add it now
  • add in garam masala and coconut paste
  • cook for 1 minute
  • finally add in coriander leaves and mint leave and mix well
  • vegetable masala is ready now, keep aside 

  step 2 : preparation of rice



  • heat up 2 tbs ghee and saute the spices
  • add in washed and drained rice and stir for 2 minutes
  • add in the water, salt and lemon juice and mix well
  • cook it covered until the entire water get absorbed

  step 3 : set



  • grease a heavy bottomed vessel with ghee
  • layer half of veg masala at bottom
  • layer half of rice on top
  • sprinkle half of fried cashews, raisins and onion
  • sprinkle garam masala
  • layer the remaining veg masala and rice
  • sprinkle the garnishing items
  • cover it and cook on low flame for 10 minutes
  • yummy vegetable biryani is ready now
  • serve hot with raita and papad
  • mix the fried bread slices while serving

 Note :



  • Use vegetables of your choice

Chilli Pork Recipe Kerala Style | Pork Chilli Fry Recipe



Chilly Pork 

 Ingredients :


  • pork - 300g ( avoid fat portions )
  • pepper powder - 1 tsp
  • chilly powder - 1 tsp
  • turmeric powder - 1/4 tsp
  • salt as needed
  • ginger chopped - 2 tbs
  • garlic chopped - 2 tbs
  • chilly flakes - 1/2 tbs
  • green chilly - 2
  • egg - half portion of one egg
  • corn flour - 1 tbs
  • soya sauce - 1 tbs
  • red chilly sauce - 1 tbs
  • tomato sauce - 1 tbs
  • onion diced - 1 medium
  • capsicum diced - 1

 Method


  step 1 : marination


  • cook the cubed pork with enough salt, chilly powder, pepper powder and turmeric powder
  • transfer the cooked meat into a bowl
  • add 1 tbs chopped garlic, 1 tbs chopped ginger, 1/2 tbs chilly flakes, 1 tbs soya sauce, corn flour and egg 
  • combine well and keep it aside for minimum 30 minutes

  step 2 : frying



  • heat up 4 tbs veg oil in a kadai
  • deep fry the marinated pork until brown colour
  • do not over fry them
  • drain and keep aside
  • now add in the diced onion and fry for 30 seconds
  • add in capsicum and fry for 30 seconds 
  • do not over fry them so that they will retain the colour and crunchiness
  • drain and keep aside

  step 3 : final preparation



  • remove excess oil and keep 1 tbs oil in the kadai
  • add in the remaining ginger and garlic
  • add in the green chilly and fry well
  • now add in the fried pork, capsicum and onion
  • mix well
  •  add in red chilly sauce, tomato sauce and 1 tsp soya sauce and mix well
  • check for salt and add in if needed
  • finally sprinkle some pepper powder and a pinch of sugar
  • now tasty chilly pork is ready
  • serve hot as a starter or with fried rice

Note :



  • use salt carefully as soya sauce contain salt

Omana Appam Recipe



Omana Appam

 Ingredients :


  • raw rice - 1+1/2 cup ( soak 4 hours )
  • white poha - 1 cup ( soak 10 minutes )
  • urad dal - 1 tbs ( soak 2 hours )
  • grated coconut - 1 cup
  • sugar - 2 tbs
  • yeast - 1/4 tsp
  • salt and water as needed

 Method



  •  grind together poha and coconut into a fine paste by adding 1 cup of water
  • next grind together rice, urad dal, sugar and yeast with enough water
  • mix it with the coconut - poha paste
  • grind the batter one more time
  • the batter is to be of idli batter consistency
  • cover it and set aside for fermentation ( 5-6 hours )
  • then add in the salt and mix gently
  • pour a ladleful of batter into hot tawa 
  • no need to spread it
  • cook it covered on low medium flame for about 3 minutes
  • repeat the process till the batter finished
  • soft and yummy omana appam can be served with spicy curry of your choice.

Ragi Adai Recipe | Kelvaragu Adai Recipe



Ragi Ada

 Ingredients :


  • ragi - 1 cup
  • grated coconut - 1+1/2 cup
  • grated jaggery - 1/2 cup
  • chana dal - 1 tbs
  • raisins - 1 tsp
  • cashew - 1 tbs
  • cardamom powder - 1/2 tsp
  • ghee - 1/2 tsp

 Method :

  step 1 : extracting ragi milk


  • soak ragi for at least 6 hours
  • wash very well
  • grind into a fine pate along with 1/2 cup of grated coconut and 1/2 cup of water
  • sieve it by adding 1 cup of extra water and collect the milk
  • keep it aside

  step 2 : preparing ada


  • pour the melted and sieved jaggery into a pan
  • boil it 
  • add chana dal,raisins, cashews and cardamom powder
  • boil it for 1 minute
  • add the ragi extract
  • cook on low flame with continuous stir until thickened
  • add 1 cup of grated coconut and combine well
  • now increase the flame and cook until it separate from the sides of the pan
  • when it is ready, place small portions on banana leaf and press gently
  • healthy ragi ada is ready to serve
  • it become firmer as it sits
