Whole Wheat Carrot Dates Cake Recipe



Carrot Dates Cake

 Ingredients :


  • wheat flour - 1 cup (250 ml cup)
  • sugar powdered - 1cup
  • baking soda - 3/4 tsp
  • salt - 1/2 tsp
  • eggs - 2
  • veg oil - 3/4 cup
  • vanilla essence - 1/2 tsp
  • grated carrot - 1 cup
  • chopped dates - 1 cup
  • chopped cashew - 1/2 cup

  for caramel



  • sugar - 1/2 cup

 Method


  step 1 : preparation of caramel


  • add 1/2 cup of sugar into a heavy bottomed pan
  • heat the sugar on medium flame
  • no need to stir it, instead swirl the pan in between to ensure uniform caramelising
  • let the caramel get a really dark shade, to the bitter side
  • when it is done add in 1/4 cup of hot water to dissolve the caramel
  • do not use cold water as it will take long time to dissolve the caramel
  • remove from fire and let it cool completely

  step 2 : preparation of batter



  • prepare the cake tin ( grease with butter, then sprinkle some flour, and remove the excess flour) ; alternatively you can use butter paper 
  • add baking soda and salt into the flour and sift 2 -3 times
  • combine eggs and sugar in a mixing bowl
  • stir well until most of the sugar dissolve
  • add in the oil and and beat well until creamy
  • now add in the cold caramel and vanilla essence and combine well 
  • add in the flour little by little and fold in gently
  • do not mix the batter too much after adding the flour 
  • add 1 tbs flour into the carrot, dates and cashew ( it will prevent them from sinking into the bottom of the pan). Add this into the cake batter and combine well
  • pour the batter into the prepared tin and tap 2-3 times

  step 3 : baking



  • bake in a preheated oven for 35- 45 minutes at 180 degree C or until a toothpick inserted came out clean
  • alternatively you can bake it in cooker
  • once it is done, let it cool down completely and keep in refrigerator for a few hours (it will be easy to cut when it is cool)
  • then cut it and serve  

 Notes :



  • I used wheat flour in this recipe in order to make it more healthy..You can make it with maida/all purpose flour as well..

Homemade Whole Wheat Noodles

 Ingredients :

  for noodles :-


  • whole wheat flour - 2 cups
  • salt as needed
  • oil - 3 tbs (use olive oil for excellent taste)
  • water

  for preparing veg noodles :-


  You can decide type and quantity of vegetables. Add scrambled egg or shredded chicken if you like. Adjust the sauce and pepper powder according to your taste.

  • carrot sliced (1/2 cup)
  • capsicum sliced (1/2 cup)
  • onion sliced (1 medium)
  • green chilly chopped (2-3)
  • spring onion (both green part & white part)
  • tomato sauce (2 tbs or as needed)
  • soya sauce (1tbs or as needed)
  • pepper powder
  • salt
  • a pinch of sugar

 Method


 preparing noodles


  • Add flour, salt and 2 tbs oil into a bowl.
  • add water little by little and make a soft dough
  • fill the the dough in a greased idiyappam press,placing the big holed disc inside
  • press the dough into a greased plate, do not overcrowd them
  • if you don't have idiyappam press, roll the dough and cut into strips
  •  boil 4 cups of water in a big vessel
  • add in a few salt and 1 tbs oil to the boiling water
  • now add in the fresh noodles
  • cook it open for about 4 minutes or until al dente (cooked so as to be still firm when bitten)
  • don't forget to stir in between
  • drain into cold water to prevent further cooking
  • keep it in cold water till the time of cooking

  cooking noodles



  • heat up 2 tbs olive oil in a kadai
  • saute onion until soften
  • add in green chilly, spring onion
  • now add in vegetables and toss on high flam to retain its colour and crunchiness
  • toss for 2-3 minutes
  • now add in the noodles
  • add in the sauces and pepper powder 
  • adjust the salt
  • add in the sugar to balance the taste
  • yummy ,healthy vegetable noodles is ready to serve
  • serve hot
