പഞ്ഞി പോലെ സോഫ്റ്റ് വട്ടയപ്പം | Soft Vattayappam Recipe


Ingredients:
  • Ragi flour 1 cup (150g)
  • Rice flakes 1/2 cup (20g)
  • Sugar 6 tbs (90g)
  • Salt 1/4 tsp
  • Instant yeast 1/2 tsp
  • Cardamom 4 pods
 Method:
  • Grind together all the ingredients along with 1 cup of water
  • Keep aside for fermentation (about  2 1/2 hours)
  • Transfer the batter into a greased tin
  • Steam for 15 minutes
  • Take out from the steamer and allow to cool completely
  • Slice and enjoy!

ബദാം കുക്കീസ് | Almond Cookies Recipe


Ingredients;
  • Maida 200g (around 1.5 cups)
  • Baking powder 2g (1/2 tsp)
  • Salt 1/4 tsp
  • Milk powder 5g (2 tsp)
  • Sugar 90g (6tbs)
  • Butter 100g
  • Vanilla essence 1/2 tsp
  • Egg 50g (1)
 Method:
  • Mix together maida, salt, baking powder and milk powder
  • Beat butter and egg until creamy and fluffy
  • Add egg and vanilla essence and mix well
  • Add flour mix and combine well
  • Divide the dough into small portions weighing 20g each
  • Give them a disc shape and arrange on a baking tray
  • Place chopped almonds on top and press gently
  • Bake at 180 degree Celsius for 20 - 25 minutes
  • Take out from the oven and allow them to cool completely
  • Delicious almond cookies are ready!

പെപ്പർ ചിക്കൻ റെസിപ്പി | Pepper Chicken Recipe


Ingredients:
  • Chicken 750g
  • Chilli powder 1 1/2 tsp
  • Turmeric powder 3/4 tsp
  • Salt 1 1/2 tsp
  • Curd 3 tbs (60g)
  • Onion 3 (250g)
  • Ginger 1 piece (10g)
  • Garlic 15 cloves (15g)
  • Green chilli 2 (10g)
  • Curry leaves 3 sprigs
  • Coriander leaves

For masala
  • Pepper corns 1 tbs
  • Fennel seeds 1 tbs
  • Cumin 1/4 tsp
  • Cardamom 6 pods
  • Cloves 2
  • Cinnamon 
  • Coriander seeds 1 tbs
 Method
  • Marinate chicken with chilli powder, turmeric powder, salt and curd
  • Keep aside for 1 hour
  • Dry roast the ingredients listed under 'for masala' for 2 minutes
  • Remove from flame and allow it to cool
  • Add to small mixer jar 
  • Powder the masala and keep aside
  • After 1 hour half fry the chicken pieces in hot coconut oil
  • To the same oil add sliced onion 
  • Sauté the onion till soft
  • Add crushed ginger, garlic and green chilli
  • Add curry leaves
  • Sauté for 2 minutes
  • Add 1/2 tsp chilli powder, turmeric powder and mix well
  • Add half fried chicken and 3/4 portion of prepared masala and mix well
  • Add 1/4 cup of water
  • Cover and cook on low flame for around 15 minutes
  • Finally add the remaining masala and coriander leaves 
  • Delicious pepper chicken is ready to serve

മിനിറ്റുകൾക്കുള്ളിൽ സോഫ്റ്റ് ഉണ്ണിയപ്പം | Easy Soft Unniyappam Recipe


Ingredients:
  • Wheat flour (atta) 2 cups (300g)
  • Jaggery 250g
  • Coconut flakes 2 tbs
  • Cardamom powder 1/2 tsp
  • Sesame seeds 1/2 tsp
  • Cumin seeds 1/2 tsp
  • Baking soda 1/4 tsp
  • Salt 1/4 tsp
 Method:
  • Add crushed jaggery into a sauce pan
  • Add 1 cup of water
  • Boil and melt the jaggery
  • Once it come to boil, turn off the flame and keep aside for 5 minutes
  • Meanwhile Combine together flour, baking soda and salt
  • To this add the hot jaggery syrup, a little at a time and stir well
  • Then add normal water to adjust the consistency
  • Make it a smooth batter without any lumps
  • Fry coconut flakes in ghee and add this to the batter
  • Add cardamom powder, sesame seeds and cumin seeds
  • Heat up oil/ ghee in unniyappachatti
  • When the oil is hot enough (180 degree C) pour the batter
  • Deep fry till they get dark brown color
  • Remove from oil and repeat this process till the entire batter is finished
  • Delicious super soft unniyappam is ready within minutes!!

ചെമ്മീനും പച്ചമാങ്ങയും ചേർത്ത് ഒരു കിടിലൻ ഒഴിച്ചുകറി | Chemmeen Manga Curry Kerala Style | Prawns Mango Curry Recipe


Ingredients:
  • Prawns 120-150g
  • Raw mango 1 (75g, without seed)
  • Coconut 3/4 cup (75g)
  • Green chilli 5 (15g)
  • Shallots 10 (40g)
  • Curry leaves
  • Ginger 20g
  • Garlic 5 cloves
  • Chilli powder 2 1/2 tsp
  • Coriander powder 1 tsp
  • Turmeric powder 1/2 tsp 
  • Fenugreek powder 1/4 tsp
 Method:
  • Rub together crushed ginger and garlic, green chilli, curry leaves, chilli powder, coriander powder, salt, turmeric powder and 1 tbs of coconut oil
  • To this add 1.5 cups of water 
  • Cook this mix 
  • When it begin to boil add cubed mango and cook for 1 minute
  • Add prawns and cook for 6 minutes
  • Then add coconut paste
  • Turn off the flame when it begin to boil
  • Add fenugreek powder and mix well
  • Heat up some coconut oil and fry 4-5 chopped shallots and 2 sprigs of curry leaves
  • Pour this over the curry
  • Cover the pot  let this sit for 30 minutes
  • Serve with rice, appam or puttu

മത്തങ്ങ കൊണ്ട് പ്രതീക്ഷിക്കാത്ത രുചിയിൽ ഒരു കിടിലൻ സ്‌നാക്ക് | Monkey Bread Recipe


Ingredients:
 For the dough:-
  • Atta 1 cup (150g)
  • Maida 1 cup (150g)
  • Pumpkin puree 3/4 cup (200g)
  • Instant yeast 1tsp
  • Sugar 2 tbp (30g)
  • Ghee 2 tbs (30g)
  • Salt 3/4 tsp
 For coating:
  • Brown sugar 3 tbs (45g)
  • White sugar 3 tbs (45g)
  • Cinnamon powder 1 tsp
  • Melted butter 5 tbs
 Method:
  • Mix together atta, maida, pumpkin puree, yeast, sugar, salt and ghee
  • Knead for 10 minutes and keep aside until double in size
  • Prepare coating by combine together brown sugar, white sugar and cinnamon powder; Keep this aside
  • When the dough become double in size, deflate it and roll it into a thick sheet
  • Cut into small pieces
  • Roll the dough pieces in cinnamon-sugar mixture to coat them
  • Then arrange them in a greased baking tin
  • After finishing the first layer, drizzle 2 tbs melted butter over them
  • Again place the dough pieces as the next layer until you finish all of them
  • Drizzle 2 tbs melted butter over the dough pieces
  • Cover the tin and let it sit in a warm place for 45 minutes
  • Pour 1 tbs of melted butter over them
  • Bake at 180 degree Celsius for 40-42 minutes
  • Remove from the oven
  • Allow this to rest for 5-6 minutes in the tin itself 
  • After that invert into a serving plate
  • Delicious pumpkin monkey bread is ready to serve

നെയ്‌ച്ചോർ രുചികരമാക്കാൻ ഇങ്ങനെ ഉണ്ടാക്കി നോക്കൂ | Neychoru recipe | Ghee Rice Recipe


Ingredients:
  • Jeerakasala/Basmati rice 2 cups (480g)
  • Water 3.5 cups (875ml)
  • Ghee 50g
  • Onion 1 small
  • Ginger a small piece (4g)
  • Garlic 5 cloves (6g)
  • Green chilli 2
  • Carrot a small piece (30g)
  • Cashews 30g
  • Coriander leaves
  • Salt 1.5 tsp
  • Whole spices      (cardamom 3 pods, cinnamon 1", mace 1, cloves 2, star anise 1/2, fennel seeds 1/4 tsp, bay leaf 1)
 Method:
  • Rinse and soak the rice for 30 minutes; Then strain and keep aside
  • Heat up ghee and 1 tbs coconut oil in a pot
  • Add the whole spices and let them splutter
  • Add onion, crushed ginger and garlic, and green chilli
  • Stir for a couple of minutes
  • Add water and bring to boil
  • Now add salt, carrot and coriander stems followed by rice
  • Cook on high flame without lid, till the water and rice become same level
  • Now lower the flame, cover the pot and cook on the lowest heat for 8 minutes
  • After 8 minutes, turn off the flame and let the rice sit for 15 minutes
  • After 15 minutes, open the pot and fluff the rice using a fork
  • Garnish with fried onion cashews and coriander leaves
  • Your delicious neychor is ready to serve.

മാവ് കുഴയ്ക്കാതേയും പരത്താതേയും ഒരു കിടിലൻ സ്‌നാക്ക് | Chicken Tikka Cheese Cup Recipe


 Ingredients:
  • Chicken 250g
  • Salt
  • Ginger garlic paste 1 tsp
  • Kashmiri chilli powder 1 tsp
  • Garam masala 1/2 tsp
  • Chaat masala 1/2 tsp
  • Turmeric powder 1/4 tsp
  • Kasoori methi 1 tsp
  • Coriander leaves
  • Onion 3 tbs
  • Capsicum - red, yellow and green, 2 tbs each
  • Curd 1 tbs
  • Bread slices
  • Butter
  • Cheese 100g or as needed (I used blend of cheddar and mozzarella cheese)
 Method:
  • Marinate the chicken with salt, chilli powder, turmeric powder, garam masala, chaat masala, kasoori methi, ginger garlic paste and curd
  • Keep aside for minimum 30 minutes
  • Then heat up some ghee in a pan
  • Add the marinated chicken and cook on high flame for 4 minute; Then cover and cook for 2 minutes on low flame
  • Open the lid and add onion and capsicum
  • Stir for 1 minute more
  • Add coriander leaves and turn off the flame
  • Roll the bread slices and cut using a round cookie cutter
  • Apply butter on each pieces
  • Take a cupcake tray and grease each pits
  • Insert the bread slices
  • Bake at 200 degree Celsius for about 8 minutes until they are crisp and golden
  • Take out from the oven and fill with the prepared filling
  • Add cheese on top
  • Garnish with chopped bell pepper
  • Bake at 200 degree Celsius for about 8 minutes until the cheese melts
  • Take out from oven and serve hot

പഞ്ഞി പോലെ മൃദുലമായ പുട്ട് ഉണ്ടാക്കിയാലോ | Paal Puttu Recipe


Ingredients:
  • Puttu podi 1 cup (220g) (I used Ponkathir puttu podi which needs 1 cup water for 1 cup flour)
  • Carrot 1 (100g)
  • Ghee 1.5 tbs
  • Salt 1/2 tsp
  • Grated coconut as needed
  • Coconut milk 1 cup (medium thickness)
 Method
  • Take puttu podi in a bowl
  • Add salt and mix well
  • Add coconut milk and keep aside for 20 miutes
  • Meanwhile add ghee in a pan and sauté the grated carrot for 2 minutes; keep this aside
  • After 20 minutes break the lumps in puttu podi using a fork
  •  Add the sauteed carrot and mix well
  • Now boil water in puttu kudam
  • Place the perforated disc in puttu kutti
  • Add 2 tbs fresh coconut 
  • Now gently fill the puttu podi until half portion is full
  • Add 2 tbs coconut and again fill the remaining portion with  puttu podi
  • Cover it and place over the puttukudam
  • Steam for 5 minutes
  • Delicious super soft paal puttu is ready to serve

പച്ച പപ്പായ കൊണ്ടും ഇതുണ്ടാക്കാം | Milkshake Recipe


Ingredients:
  • Raw papaya 200g
  • Cold milk 2 cups
  • Sugar 4.5 tbs or as needed
  • Cardamom 3 pods
  • Cashew nuts 10
  • Ice cubes 
  • Cherry to garnish
 Method
  • Peel and cube the papaya
  • Pressure cook this along with 1/4 cup of water for 1 whistle
  • Open the cooker when the pressure settles 
  • Allow the papaya to cool
  • Transfer this to a blender jar and blend along with rest of the ingredients
  • Transfer this to serving glasses and garnish with chopped cherry or nuts

ഒരു നല്ല വെജിറ്റബിൾ റൈസ് ഉണ്ടാക്കിയാലോ


Ingredients:
  • Cooked rice 4 cups
  • Carrot 1
  • Cabbage a small piece
  • Beans 10
  • Onion 1
  • Green chilly 2
  • Ginger garlic paste 1 tsp
  • Cashew nut 30g
  • Soya sauce 1tbs
  • Vinegar 2 tsp
  • Sugar 1/2 tsp
  • Pepper 1 tsp
  • Cardamom 4
  • Cinnamon a small stick
  • Cloves 2
  • Sajeera 1/2 tsp
  • Coriander leaves
 Method
  • Heat up 2 tbs ghee and 1 tbs coconut oil in a kadai
  • Add cardamom, cinnamon, cloves and sajeera
  • Add cashews and stir till they turn golden
  • Add sliced onion and green chilly
  • Stir and cook for 2 minutes
  • Add chopped beans and stir for 2 minutes
  • Add Julienned carrot and stir for 1 minute
  • Add thinly sliced cabbage and stir for 1 minute
  •  Add salt, sugar and pepper
  • Combine well
  • Add cooked rice, soya sauce and vinegar
  • Fry for 2 minutes
  • Sprinkle some coriander leaves 
  • Rice is ready!!

പ്രോട്ടീൻ ഡേ സ്പെഷ്യൽ മുതിര ദോശ | Horse gram Dosa Recipe


Ingredients:
  • Rice 1 cup (210g)
  • Horse gram 1/2 cup (120g)
  • Urad dal 1/4 cup (60g)
  • Fenugreek seeds 1 tsp
  • Salt 1 tsp (7g)
  • Cooked rice 3 tbs
 Method:
  • Wash and soak the rice and horse gram for 5 hours
  • Wash and soak urad dal and fenugreek seeds for minimum 2 hours
  • Grind urad dal and fenugreek seeds along with some ice cubes and  salt using the soaking liquid
  • Transfer this to a big bowl
  • Grind the rice and horse gram using the soaking liquid to a smooth paste
  • Mix this with the urad dal paste
  • Mix well the batter  with your hands for 4-5 minutes
  • Cover the bowl and keep aside for fermentation.
  • When the batter is ready pour a ladleful of batter to the hot dosa tawa and spread the batter
  • Sprinkle some ghee and cook till the bottom is golden crisp
  • Serve hot with coconut chutney and sambar

തക്കാളി മുട്ടക്കറി | Thakkali Mutta Curry Recipe


Ingredients:
  • Boiled eggs 5
  • Tomato 3 (300g)
  • Onion 2 (150g)
  • Green chilli 2
  • Ginger 1 small piece
  • Garlic 4-5 cloves
  • Curry leaves 3 sprigs
  • Coconut 1/2 cup
  • Kashmiri chilli powder 2 tsp
  • Spicy chilli powder 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Cumin 1/4 tsp
  • Dried red chilli 2
Method
  • Heat some coconut oil and add cumin seeds
  • Add onion  and stir well till the onions are soft
  • Add green chilli, ginger, garlic and curry leaves
  • Stir for 1 minute
  • Add tomatoes and needed salt
  • Cook till the tomatoes are very soft
  • Add chilli powder and turmeric powder
  • Stir for 2 minutes
  • Add coconut paste and water
  • Add boiled eggs and mix gently
  • Turn off the heat when it begin to boil
  • Add some oil and crack some mustard seeds
  • Add dried red chilli and curry leves
  • Pour it over the curry 
  • Serve with rice

വളരെ എളുപ്പത്തിൽ ഒരു ഈവെനിംഗ് സ്‌നാക്ക്


Ingredients :
  • Maida 1cup (150g)
  • Butter 1/2 cup (100g)
  • Sugar 1/4 cup (50g)
  • Baking soda 2 pinch
  • Salt 1/4 tsp
  For filling:
  • Soft butter 1.5 tbs
  • Sugar 2 tbs
  • Cinnamon powder 1 tsp
 Method:
  • Mix together maida, baking soda and salt
  • Mix 2 tbs sugar and 1 tsp cinnamon powder and keep aside
  • Beat sugar and butter for 5 minutes
  • Add the flour and mix gently
  • Roll this dough to a rectangle sheet
  • Brush soft butter and sprinkle the cinnamon sugar
  • Roll this dough sheet and give a cylinder shape
  • Cling wrap it and keep in freezer for 15 minutes
  • Cut the dough arrange in a baking tray
  • Bake at 180 degree Celsius for 18 - 20 minutes

ചൈനാഗ്രാസ്സോ കോൺഫ്ളവറോ ഇല്ലാതെ ഒരു കിടിലൻ പുഡ്ഡിംഗ് | Caramel Custard Pudding Recipe


 Ingredients:
  • Milk  2 cups (500ml)
  • Eggs 4
  • Sugar 4 tbs+ 4 tbs
  • Coffee powder 1 tsp
  • Vanilla essence 1/2 tsp
  • Pinch of salt
 Method:
  • Heat up milk in a pan
  • Add 4 tbs of sugar to another pan
  • Heat this sugar along with 2 tsp water, till it become caramel
  • When it become caramel, add the hot milk
  •  Add 4 tbs sugar 
  • Stir and cook till the caramel and the sugar are dissolved
  • Add coffee powder and combine well
  • Turn off the heat and let this cool for 5 minutes
  • Crack 4 eggs to a bowl 
  • Add vanilla essence and salt and mix well
  • Now add the hot caramel milk a little at a time and mix well
  • Strain this mixture and pour into pudding bowl
  • Cover the bowl and steam this on low medium heat for 8 minutes
  • Turn off the heat and open the vessel only after 10 minutes
  • Remove the pudding from the steamer and allow  to cool
  • You can serve this delicious pudding warm or chilled

നല്ല കട്ട തൈര് എങ്ങനെ ഉണ്ടാക്കാം | Thick Curd Recipe


Ingredients:
  • Milk 2  cups
  • Curd from previous batch 2tsp
Method:
  • Boil the milk 
  • Allow it to cool 
  • When it is cool enough to touch (46 degree C- 50 degree C) add 2 tsp curd and stir well
  • Cover with a lid
  • Keep this in a warm place without any disturbance
  • It may take 4 hours or more to set depending on the weather
  • At this point taste your curd and see if it has enough sourness; If it is right refrigerate and if not let it set for an hour more.
  • If you live in a place that is cold, it may take more time to set.
  • The more the fat percentage in your milk the thicker your curd will be.

പനീർ കൊണ്ട് ഇങ്ങനെ ഉണ്ടാക്കി നോക്കൂ | Shahi Paneer Recipe


Ingredients:
  • Paneer (Cottage cheese) 200g
  • Onion 2 (200g)
  • Tomato 2 ( 200g)
  • Ginger garlic paste 1tsp
  • Turmeric powder 1/4 tsp
  • Spicy chilly powder 1/2 tsp
  • Kashmiri chilly powder 2 tsp
  • Coriander powder  1tsp
  • Garam masala 1/2tsp
  • Kasoori methi 1 tsp
  • Cashew 15
  • Fresh cream 1/4 cup
  • Cumin 1/4 tsp
  • Cardamom 4 pods
  • Cinnamon 1 small piece
  • Cloves 3 
  • Pepper corns 1/4 tsp
  • Green chilly 3
 Method
  • Heat up 1 tbs of ghee and 1.5 tbs of oil in a pan
  • Add cumin, cardamom, cinnamon, cloves and pepper corns
  • Add onion and stir till golden in color
  • Add ginger garlic paste and stir for 1minute
  • Add tomato puri and salt as needed
  • Cook till the tomatoes releases oil
  • Add powdered spices and cook till the raw smell disappear
  • Add cashew paste and stir for 1 minute
  • Add 1 cup of water and cook for 5 minutes
  • Add fresh  cream and cubed paneer
  • Add slitted green chilly and cook covered for 2 minutes
  • Finally add kasoori methi and garam masala
  • Delicious paneer masala is ready to serve

സ്‌കൂളിൽ നിന്നും വരുമ്പോൾ കുട്ടികൾക്ക് കൊടുക്കാൻ ഞാൻ ഉണ്ടാക്കിയ കുക്കീസ് | Cookies Recipe in Malayalam


Ingredients:
  • Maida 1 cup (130g)
  • Whole wheat flour 1 cup (130g)
  • Brown sugar 5 tbs (75g)
  • White sugar 3 tbs 45g)
  • Egg 1
  • Corn flour 2 tbs (20g)
  • Milk powder 2 tbs (20g)
  • Baking powder 1 tsp
  • Baking soda 1/4 tsp
  • Salt 1/4 tsp
  • Butter 3/4 cup (150g)
  • Vanilla essence 1/2 tsp
  • Chocolate chips 130g
 Method:
  • Mix together maida, whole wheat flour, baking powder, baking soda, salt, brown sugar and white sugar
  • Rub with butter and then mix chocolate chips
  • Crack one egg and add vanilla essence
  • Mix with cookie mix
  • Add 1/2 - 1 tbs milk if necessary
  • Make a dough
  • Divide the dough into small portions and shape like discs
  • Arrange in a baking tray lined with baking paper
  • Bake at 180 degree Celsius for 20- 22 minutes
  • Take out from the oven and allow them to cool
  • Enjoy

  • Taro leaf chopped 4 cups
  • Onion 1
  • Grated coconut 1/2 cup
  • Green chilly as needed

  • Turmeric powder 1/2 tsp
 Method
  •  Mix together all the ingredients
  • Heat up coconut oil in a pan
  • Add mustard seeds
  • Add the veggie mix and cook till they are soft
  • Serve with rice or chapati

ഗോതമ്പ് പൊടി ചേർത്ത് സോഫ്റ്റ് ബൺ ഉണ്ടാക്കാം | Wheat Bun Recipe


Ingredients:
  • Whole wheat flour 1 cup (150g)
  • Maida 1 cup (150g)
  • Milk 170ml (3/4 cup)
  • Instant yeast 1 tsp (4g)
  • Sugar 2 tbs (30g)
  • Butter/Ghee 3 tbs (45g)
  • Salt 3/4 tsp (5g)
  • Egg 1 (50g)
 Method
  • Mix together all the ingredients
  • Combine well
  • Knead for 10-15 minutes
  • At the end of kneading rub the dough with some ghee or butter and make a ball
  • Cover the bowl and keep aside till the dough become double in size
  • It may take 1 1/2 hours- 2 hours 
  • Now deflate the dough and divide into 10 equal parts
  • Shape into smooth balls and arrange in a baking tray lined with baking sheet
  • Let the balls rise for 30 minutes
  • Now bake in a preheated oven at 190 degree Celsius for 18-20 minutes
  • Take out from the oven and brush them with butter
  • Allow them to cool down to room temperature
  • Delicious soft buns are ready to serve

ചുരക്ക കൊണ്ട് ഇങ്ങനെ ഉണ്ടാക്കി നോക്കൂ | Churakka Recipe


Ingredients:
  • Bottle gourd 400g
  • Onion 1 (100g)
  • Tomato 1(100g)
  • Green chilly 3
  • Curry leaves
  • Turmeric powder 1/2 tsp
  • Chilly powder 1/2 tsp
  • Cumin seeds a pinch
  • Mustard seeds 1/2 tsp
 Method:
  • Heat up 2 tbs oil in a pan
  • Crack mustard and cumin
  • Add chopped onion and stir for 3 minutes
  • Add slitted green chilly and curry leaves
  • Stir for 1 minute
  • Add chopped tomato and cook till very soft
  • Add chilly powder and turmeric powder
  • Stir for a few seconds
  • Add chopped bottle gourd and salt as needed
  • Stir well and cook covered till very soft
  • Serve with rice

ചിക്കൻ നഗ്ഗറ്റ്സ് ഈസിയായി വീട്ടിൽത്തന്നെ ഉണ്ടാക്കാം | Chicken Nuggets Recipe


Ingredients:

 To marinate:-
  • Chicken breast 400g (cut into 1 inch cubes)
  • Garlic powder 1 tsp
  • Onion powder 1 tsp
  • Oregano 1/2 tsp
  • Thyme 1/2 tsp
  • Pepper powder 1 tsp
 For breading:-
  • Bread crumbs 1.5 cups
  • Eggs 2
  • Maida 2/3 cups
        *Garlic powder 1 tsp
        *Onion powder 1 tsp
        *Pepper powder 1 tsp
        *Oregano 1/2 tsp
        *Thyme 1/2 tsp

 For brining (Optional):
  • Curd 1/2 cup
  • Salt 2 tsp
  • Pepper powder 1 tsp
  • Water 2 cups
Method:
  • Prepare brining solution by combining curd, salt, pepper and water
  • Add the chicken pieces in it  and refrigerate for 4 hours - 12 hours. (This step makes the chicken more juicy and flavorful)
  • After 4 hours (or 12 hours) remove the chicken from the solution to a strainer
  • Then marinate them with the ingredients listed under 'to marinate'.
  • Crack 2 eggs into a bowl
  • Keep bread crumbs ready
  • In a separate bowl mix together 2/3 cup of maida, garlic powder, onion powder, pepper, oregano and thyme
  • First coat the chicken pieces with flour mix
  • Then dip in eggs
  • Then coat in bread crumbs
  • Keep them in a plate and rest them for 10 minutes
  • Heat up oil for deep frying (desired temperature 176 degree Celsius)
  • Fry the chicken pieces in batches.
  • Remove from oil after 6-7 minutes
  • Serve hot with ketchup or your favorite dip
