Vegetable Biryani Recipe



Vegetable Biryani

 Ingredients :

  for vegetable masala


  • onion sliced - 2 big
  • crushed ginger & garlic - 2 tbs
  • slitted green chilly - 6 (adjust as per taste )
  • tomatoes chopped - 2 medium
  • carrot chopped - 100g
  • potato chopped - 100g
  • beans chopped - 100g
  • green peas - 100g
  • turmeric powder - 1/2 tsp
  • garam masala - 1 tbs
  • coconut paste - of 1 cup grated coconut
  • coriander leaves - 1/4 cup
  • mint leaves - 1/4 cup

  for rice



  • biryani rice - 3 cups ( I used jeerakasala rice )
  • ghee - 2 tbs
  • spices - 1" cinnamon, 4 clove, seeds of 4 cardamom, 1 bay leaf
  • boiling water - 5 + 1/4 cup ( for 1 cup rice add 1 + 3/4 cup water )
  • salt as needed
  • lemon juice - 1 tbs

  for garnishing :



  • fried cashews, fried raisins and fried onion
  • garam masala
  • bread slices 4 cubed fried

 Method


  step 1 : preparation vegetable masala 


  • heat up 3 tbs oil
  • saute onion till transparent
  • add in ginger - garlic
  • saute until raw smell gone
  • add in green chilly
  • next add in tomatoes and saute until become soft
  • now add in the vegetables ( if using fresh peas add now ;otherwise pressure cook it separately and add later )
  • add in salt and turmeric powder
  • saute for 2 minutes
  • add in 1/2 cup of water and cook until the vegetables are done
  • if using cooked peas add it now
  • add in garam masala and coconut paste
  • cook for 1 minute
  • finally add in coriander leaves and mint leave and mix well
  • vegetable masala is ready now, keep aside 

  step 2 : preparation of rice



  • heat up 2 tbs ghee and saute the spices
  • add in washed and drained rice and stir for 2 minutes
  • add in the water, salt and lemon juice and mix well
  • cook it covered until the entire water get absorbed

  step 3 : set



  • grease a heavy bottomed vessel with ghee
  • layer half of veg masala at bottom
  • layer half of rice on top
  • sprinkle half of fried cashews, raisins and onion
  • sprinkle garam masala
  • layer the remaining veg masala and rice
  • sprinkle the garnishing items
  • cover it and cook on low flame for 10 minutes
  • yummy vegetable biryani is ready now
  • serve hot with raita and papad
  • mix the fried bread slices while serving

 Note :



  • Use vegetables of your choice
