Homemade Potato Smiley Recipe



Potato Smiley

 Ingredients 


  • boiled potatoes - 2 big
  • corn flour - 4 tbs + for dusting the surface
  • bread slices - 4 (powder them)
  • salt as needed
  • chilly powder - 1 tsp
  • oil for deep frying

 Method


  step 1 : making the dough


  • mash the potatoes
  • add in corn flour, bread crumbs, salt and chilly powder
  • knead into a soft non sticky dough ( add in extra bread crumbs and corn flour if more sticky)
  • cover it and keep in refrigerator for 1 hour

 step 2 : shaping smilies



  • dust the surface with corn flour
  • place the dough and spread it (not too thin or too thick)
  • cut the round using a cookie cutter or a glass
  • use straw to make eyes and spoon to make smile 

 step 3 : frying



  • heat up oil in a pan
  • when it is hot enough fry the smilies in batches
  • fry on medium flame stirring occasionally
  • when golden brown and crisp drain into snack napkin
  • serve hot with tomato sauce or mayonnaise

Bread Omelette Recipe



Bread Omelette

 Ingredients :


  • eggs - 2
  • salt as needed
  • pepper powder - 1/2 tsp
  • chopped onion - 1 tbs
  • chopped green chilly - 1 tsp
  • chopped coriander leaves - 1tbs
  • water - 1 tbs ( to make omelette soft)
  • oil - 1 tsp
  • bread - 1 slice

 Method



  • crack 2 eggs into a bowl
  • add in salt, pepper powder and water mix well
  • dip the read slice in it and set aside
  • to the remaining egg mixture add in onion,coriander leaves and chilly
  • combine well
  • heat up 1 tsp oil in a pan
  • pour the egg mixture and spread thinly
  • place the egg coated bread slice
  • fry for 30 seconds and then turn
  • cook the other side for 30 seconds
  • transfer into a serving plate and tuck in the omelette from all 4 sides
  • serve hot

Whole Wheat Plum Cake Recipe | Easy Plum Cake Without Alcohol | Instant Plum Cake



Instant Wheat Plum Cake

 Ingredients:

  for caramel:-


  • sugar - 1 cup
  • hot water - 1 + 1/2 cup

  fruits & nuts


  • 1/2 cup black raisins, 1/2 cup golden raisins, 1/2 cup dates chopped, 1/2 cup cherries chopped
  • 1/2 cup cashews chopped, 1/2 cup walnuts chopped, 1/2 cup almonds chopped

  dry ingredients


  • 1 + 1/2 cup wheat cake flour *
  • baking powder - 1tsp
  • baking soda - 1/2 tsp

  spices

  •  1 piece of cinnamon, 2 cardamom, 2 cloves and a small piece of nutmeg (powder them finely)
  • 1 tsp dry ginger powder

  wet ingredients

  • cold eggs - 3 (separate whites and yolk )
  • sugar powdered - 1 cup
  • melted unsalted butter - 1/2 cup
  • orange zest - 1 tbs
  • orange juice - 2 tbs

  Method

  step 1 : preparing caramel

  • add 1 cup of sugar in a heavy bottomed pan
  • heat up it on medium high flame
  • swirl the pan in between
  • when it get adequate colour add in the hot water slowly
  • let it cool down

  step 2 : boiling dry fruits

  • add the dry fruits into the warm caramel
  • add in 1 tsp spices and 1/4 tsp salt and mix well
  • boil it in low flame for 5 minutes
  • turn off the flame
  • allow it to cool completely

  step 3 : preparing nuts

  • chop the nuts
  • add 1 spoon of wheat flour into it and mix well
  • it will prevent the sinking of nuts into bottom while baking

  step 4 : preparing dry ingredients

  • add baking powder and baking soda into the cake wheat cake flower
  • sieve them and keep aside

  step 5 : preparing wet ingredients

  • beat egg white till frothy
  • add in 1 tsp lemon juice and 1/4 cup powdered sugar in batches
  • eat them till peaks are formed
  • keep aside
  • add in 3 egg yolks into a bowl
  • add in 3/4 cup powdered sugar
  • beat well until fluffy
  • add in orange zest and orange juice and mix well
  • add in melted butter and beat until fluffy
  • add in cool fruit - caramel mixture and combine well
  • sift in the dry ingredients and fold in gently
  • now add in the nuts and mix gently
  • add in the egg white as 3 batches and combine well gently
  • cake batter is ready

  step 6 : baking

  • pour the batter into prepared cake tin
  • I used 8 inch round pan and loaf pan (greased and lined with utter paper)
  • bake in preheated oven at 180 degree C for 40 - 45 minutes or until a toothpick inserted at the centre came out clean
  • remove them from cake tin after 10 minutes
  • allow them to cool completely before cutting
  • enjoy the healthy fruits & nuts cake with your loved ones

  Notes :

   - To prepare wheat cake flour, take 1 + 1/2 cup wheat flour in a bowl
   - Remove 3 tbs flour from it and replace with 3 tbs corn flour
   - Sieve it 3 - 4 times; wheat cake flour is ready.

Pork Roast Recipe Kerala style | Pork Varattiyathu | Pork Ularthiyathu



Pork Roast

 Ingredients :


  • pork cubed and washed - 1/2 kg
  • crushed ginger-garlic-green chilly - 2 tbs
  • chilly powder - 3 tbs
  • pepper powder - 2 tsp
  • coriander powder - 2 tbs
  • garam masala - 2 tsp
  • turmeric powder - 1 tsp
  • salt - as needed
  • chopped small onion - 1 cup
  • curry leaves - 4 springs
  • grated coconut - 3/4 cup

 Method


  step 1 : cooking of pork


  • add the cubed and washed pork pieces into a pressure cooker
  • add in 1tbs ginger-garlic-chilly paste, 1tbs chilly powder, 1tsp pepper powder, 1/2 tsp turmeric powder, and salt
  • mix very well
  • cook in high flame till one whistle, then cook on low flame for 5-6 minutes
  • keep aside

  step 2 : preparation of masala



  • heat up 1 tsp coconut oil in a pan
  • roast the grated coconut till golden colour
  • powder it coarsely and keep aside
  • then take 2 tbs fat from cooked meat ( or use coconut oil)
  • add in 1 cup chopped small onion and curry leaves
  • saute till soft
  • add in 1 tbs ginger- garlic- chilly paste and saute till the raw smell gone
  • now reduce flame to low
  • add in coriander powder and stir for 10 seconds
  • add in 2 tbs chilly powder ( adjust according to taste )
  • now add in 1/2 tsp turmeric powder and garam masala
  • next, add in the powdered coconut and cooked meat (drain the excess fat from the meat)
  • mix everything well
  • cook on low flame until the pork pieces get deep brown colour, stirring occasionally (15-20 minutes)
  • finally sprinkle some pepper powder and garam masala 
  • yummy pork roast is ready now
  • serve hot with rice

Padavalanga Theeyal Recipe | Padavalanga Varutharacha Curry



Padavalanga Theeyal

 Ingredients :

  •   chopped padavalanga/snake gourd - 1 + 1/2 cup
  •   small onion chopped - 1/2 cup
  •   green chilly - 2
  •   turmeric powder - 1/2 tsp
  •   salt as needed
  •   fenugreek powder - 1/4 tsp
  •   tamarind - a gooseberry size
  for masala :-
  •   grated coconut - 1 cup
  •   coriander powder - 2 tbs
  •   chilly powder - 1 + 1/2 tbs
  •   pepper powder - 1/2 tsp
  for tempering
  •   coconut oil - 2 tsp
  •   mustard seeds - 1/2 tsp
  •   red chilly - 2
  •   curry leaves - 1 spring

 Method

  step 1 : preparing masala


  • heat up 1 tsp coconut oil in a pan
  • add in coconut and roast till golden
  • switch off flame and add coriander powder,chilly powder, and pepper powder respectively
  • allow it cool completely and then grind into fine powder

  step 2 : preparing curry



  • heat up 2 tsp coconut oil in a clay pot
  • add in snake gourd, small onion, green chillies, turmeric powder, fenugreek powder and salt
  • saute for 1 minute
  • add in 1/2 cup water and cook till done
  • then add in the ground coconut mix and juice of tamarind 
  • add in enough water; curry will get thickened as it sit, so add in water accordingly
  • bring to a good boil and then switch off the flame

  step 3 : tempering



  • heat up 1 tsp coconut oil
  • crack mustard
  • add chilly and curry leaves
  • pour it over the curry
  • then cover it for 5 minutes 
  • mix well 
  • delicious curry is ready to serve
  • serve with rice

Cashew Snowball Cookies Recipe | Easy Christmas Cookies Recipe



Snowball Cookies

 Ingredients :

  all purpose flour/maida - 1 cup
  sugar - 3 tbs
  finely chopped cashew - 1 cup
  cardamom powder - 1/4 tsp
  salt - 1/4 tsp
  soft unsalted butter - 1/2 cup
  powdered sugar - 1 cup

 Method

 step 1 : preparing dough


  •  add the flour, sugar, cashew, cardamom powder and salt
  • mix well
  • add in the softened utter and mix well
  • knead into a soft dough
  • cover with a clean wrap and refrigerate for 30 minutes

 step 2 : preparing the cookies



  • after 30 minutes make small balls from the dough
  • arrange them in a baking tray lined with butter paper
  • bake them in a preheated oven at 180 degree C for 20 - 25 minutes
  • when the cookies are done  roll them in the powdered sugar ( when they are hot)
  • after 20 minutes again roll them in powdered sugar and serve

Passion Fruit Cake Recipe | Whole Wheat Fruit Cake Recipe



Passion Fruit Cake


 Ingredients :

  whole wheat flour - 1+1/2 cup
  corn flour - 3 tbs
  soft unsalted butter - 1/2 cup
  eggs - 2
  baking powder - 1/2 tsp
  baking soda - 1/4 tsp
  salt - 1/4 tsp
  sugar powdered - 3/4 cup + 1 cup
  passion fruit - 1/4 cup + 3tbs

Method

 step 1 : preparing dry ingredients


  • take 1 + 1/2 cup wheat flour in a bowl
  • replace 3 tbs wheat flour with 3 tbs corn flour
  • add in baking powder, baking soda, and salt
  • sift 3-4 times and keep aside

 step 2 : preparing wet ingredients


  • take butter in big bowl
  • add in 3/4 cup powdered sugar
  • beat well until fluffy
  • beat in 2 eggs 1 at a time
  • add in vanilla essence and 1/4 cup passion fruit

 step 3 : preparing batter


  • sift the dry ingredients into the wet ingredients as 2 batches
  • fold in gently

 step 4 : baking


  •  add the cake batter into a loaf pan (greased and lined with butter paper)
  • bake in a preheated oven at 180 degree C for 35 - 40 minutes or a skewer inserted at the centre came out clean
  • take out from oven
  • remove cake from pan after 10 minutes
  • allow it to cool completely

 step 5 : preparing glaze


  • add 1 cup of powdered sugar in a bowl
  • add 3 tbs passion fruit into it
  • mix very well
  • pour it over the cake and let it sit for 15 - 20 minutes
  • our healthy and delicious passion fruit cake is ready to serve

Thalassery Beef Dum Biryani Recipe | Malabar Style Beef Biryani |



Thalasseri Beef Biriyani


Ingredients :

 for biriyani masala :-

  fennel seeds - 2 tbs
  star anise - 3 pieces
  cardamom - 12 pods
  cinnamon - 2 pieces
  clove - 6-8
  mace - 2 pieces
  nutmeg - 1 small piece

 for marination

  beef - 1 kg
  biriyani masala - 2 tbs
  green chillies - 12-14
  garlic - 20 cloves
  ginger - 2 pieces
  cashew - a handful
  cuscus - 1 tsp
  curd - 1/2 cup
  turmeric powder - 1/2 tsp
  pepper powder - 1 tsp

 for beef masala

  onion - 4
  tomato - 2
  coriander leaves 1/2 cup
  mint leaves - 1/2 cup

 for rice

  jeerakashala rice - 2 cups
  water - 7 cups
  salt
  lemon juice - 1 tbs
  oil and ghee
  spices ( cinnamin 1 stick, cardamom 4-5 pods, cloves 3-4, star anise 1, bay leaf 1)

 for garnishing

  onion - 2
  cashew nut - 1/2 cup
  raisins - 1/4 cup

Method

 step 1 : preparation of biriyani masala


  •  dry roast the spices for 3-4 minutes
  • when they cool down powder them and keep aside

 step 2 : marination



  • cut the beef into cubes , wash well , drain and keep aside 
  • crush chillies, ginger and garlic together and add into the beef pieces
  • soak a handful of cashews and cuscus, grind into paste and add into the beef
  • then add in turmeric powder, 2 tbs biriyani masala, pepper powder, curd and salt
  • mix everything well and keep it aside for at least 2 hours

 step 3 : frying garnishing items



  • heat up oil in a pan
  • add in thinly sliced onions in batches
  • add in a few salt
  • drain when become golden colour
  • fry cashews till golden and drain them
  • fry raisins and drain them

 step 4 : preparation of beef masala



  • after 2 hours of marination cook the beef in a pressure cooker
  • cook on high flame till first whistle, then cook on low flame for 10- 12 minutes
  • saute 4 sliced onions till translucent
  • add in tomatoes and saute well until the oil separates
  • add in 1/2 tsp turmeric powder, 1 tsp biriyani masala, 1/2 tsp pepper powder and mix well
  • add in the cooked beef along with gravy and cook till the gravy become thick.
  • add in a handful of coriander leaves and mint leaves and mix well
  • masala is ready now; turn off the flame

 step 5 : preparation of rice



  • heat up 1 tbs oil and 1 tbs ghee in a heavy bottomed pan
  • crack all the spices listed above
  • add washed and drained jeerakashala rice and stir for 2 minutes
  • add in 7 cups of hot boiling water ( for 1 cup of rice 1 + 3/4 cups of water) 
  • add in enough salt, lemon juice and mix well
  • cook it covered until the entire water get absorbed ( it may take around 6-8 minutes)

 step 6 : dum



  • into a heavy bottomed pan add in the entire beef masala
  • add some coriander leaves, mint leaves and fried onion
  • spread half of the rice over it
  • sprinkle some fried garnishing items, mint leaves, coriander leaves, biriyani masala
  • then make the second layer of rice leaving a few to spread on the top
  • sprinkle the garnishing items , biriyani masala ,mint leaves and coriander leaves
  • on the top spread the remaining rice
  • sprinkle some biriyani masal and 2 tsp ghee
  • seal the pot with an aluminium foil and cover with a tight lid
  • heat up an old tawa and place the biriyani pot 
  • keep on low flame for 20 minutes
  • open after 10 minutes 
  • tasty beef biriyani is ready now
  • mix the rice and masala and serve hot

Quick Bread Fritters

 It is an easy to make snack using simple ingredients. The original recipe asks for maida, but for healthy purpose I used whole wheat flour (atta). Alternatively you can use besan flour also.

 Ingredients:

  Whole wheat flour /maida– 1 cup
  Salt as needed
  Thick curd – ¼ cup
  Finely chopped onion – ¼ cup
  Finely chopped green chilly – 1tsp or as needed
  Chopped coriander leaves – 1 tbs
  Chopped peanuts – ¼ cup
  Oil for deep frying

 Method

Step 1 : preparation of batter

-          Mix flour and salt
-          Add in curd and water to make a thick dough
-          Let it rest for 30 minutes
-          Then add in the onion, chilly, coriander leaves and peanuts
-          Add in the bread pieces and combine everything well

Step 2 : frying

-          Heat up oil in a heavy bottomed pan
-          Add in the prepared mix with a spoon
-          Fry on medium flame ,turning occasionally
-          When they get golden brown colour drain into snack napkin
-          Serve hot with sauce or chutney
