How To Make Murukku At Home


Murukku is a deep fried snack  made with rice flour and urad dal. It is very easy to make at home. You can have it while enjoying rain or when reading your favourite book.Here is the recipe :

Ingredients:

 roasted rice flour - 1 cup
 urad dal (black gram) - 1/4 cup
 chilly powder - 1 tsp or as needed
 cumin seeds - 1/2 tsp
 sesame seeds - 1 + 1/2 tsp
 salt - 1 tsp
 asafoetida - a pinch
 butter - 1 tbs
 water
 oil for deep frying


Method

 step 1 

  - wash and dry roast urad dal till light golden colour
  - when it is cool powder it finely and add into the rice flour

 step 2

  - mix all the ingredients
  - add water gradually and make smooth dough (*see notes)
  - put star shaped disc in the mould and fill it with the dough
  - make spirals by pressing it on a flat lid or foil

 step 3

  - heat oil for deep frying
  - when it is hot enough reduce flame to medium
  - deep fry the murukku till golden and crispy
  - drain on kitchen tissue
   - store in airtight container.

Notes:

 - Use normal water for making dough.
 - To check if the water is enough press the dough through the mould; if it breaks add a little more  water and  knead again.Then make spirals.

Banana Chips Kerala Style

 Ingredients:

  raw plantain (nendra) banana - 1 kg
  turmeric powder - 2 tsp
  salt
  oil - for deep frying

 Method

  - add 2 tsp turmeric powder into a bowl of water
  - apply some oil on hands to prevent discolouration of hands
  - peel the bananas
  - immerse them in the turmeric water for 10 minutes
  - drain and pat dry the banana
  - slice them with a slicer or knife

 for frying :

   - heat up oil for deep frying
  - add 1 tsp salt into the oil
  - deep fry the banana slices in batches till crisp
  - drain into kitchen towel
  - subsequent batches would require less salt
  - let them cool completely and store in an air tight container

Notes:

 - adding salt directly into the oil prevent oil absorption by the chips
 - banana peels can be used to make healthy and tasty thoran or stir fry.

Pumpkin - Red Cow Pea Curry Kerala Style | Mathanga Vanpayar Erissery

 Erissery is a traditional kerala curry.

 Ingredients :

  soaked red cow pea - 1 cup
  diced pumpkin - 1 cup
  grated coconut - 1 cup
  green chillies - as per tolerance
  shallots - 2
  cumin seeds - 1/2 tsp
  turmeric powder - 1tsp

 for frying

  mustard seeds - 1 tsp
  urad dal - 1 tsp
  red chillies - 2-3
  curry leaves - a few
  grated coconut - 1/2 cup

 Method

 step 1

 - cook soaked red cow pea in a pressure cooker along with enough salt and water
 - add the pumpkin into this
 - add 1/2 cup of water and cook till the pumpkin become soft
 - keep aside

 step 2

 - grind together coconut,green chillies,shallots,cumin and turmeric powder into a coarse paste
 - add this into the pumpkin - pea mixture
 - check for salt
 - cook it on low flame for 1 minute

step 3

 - heat up 1 tbs coconut oil in a pan
 - crack mustard seeds
 - add urad dal and fry till golden colour
 - add red chillies and curry leaves
 - add coconut and fry till golden colour
 - add this to the curry
 - tasty erissery is ready
 - serve with rice

Note : 

-You can alter he consistency of his curry by adjusting water.
- Erissery can be made with yam,raw banana, jack fruit etc.

Boondi Payasam Recipe | Boondi Kheer Recipe | बूंदी की खीर बनाने की विधि




Boondi Payasam Recipe

 It is an easy and tasty desert which can be prepared on any festive occation.

 Ingredients :

  besan flour - 1 + 1/2 cups
  thick coconut milk - 1 cup
  thin coconut milk - 2 cups
  jaggery syrup - 2 cups
  cashew nuts - 1/2 cup
  raisins - 1/2 cup
  cardamom powder - 2 tsp
  ghee - 3 tbs
  oil - for deep frying

Method

 step 1 : boondi making

  - add water to besan flour to make batter. (batter should not be too thin or too thick)
  - pour it through a perforated ladle into the hot oil.
  - fry them till crisp.
  - drain and keep aside.

 step 2 : preparation of payasam

  - put the fried boondi into a heavy bottomed vessel.
  - add in the thin coconut milk and stir on medium flame until thickened
  - then add in the jaggery syrup and stir on medium flame till thickened.
  - now add in the thick coconut milk and stir for 5 minutes
  - then switch off the flame

 step 3 : garnishing

  - fry the cashews and raisins and pour over the payasam along with ghee.
  - add in the cardamom powder and mix well.
  - tasty payasam is ready now.
  - serve warm or chilled.

Neyyappam Recipe Kerala Style

Ingredient

 slightly roasted rice flour - 1 + 1/2 cup
 wheat flour - 2 tbsp
 jaggery - 3-4 cubes(adjust as per your taste)
 cardamom - 3-4 pods
 sesame seeds - 1 tbs
 baking powder - 1/4 tsp
 salt - 1/4 tsp
 ghee - 1 tbs
 oil - for deep frying

Method

 primary preparations :

 - melt jaggery in 1 cup of water
 - strain and keep aside
 - powder the cardamom with a few sugar and keep aside

step 1 : preparation of batter

 - mix all the ingredients except jaggery syrup
 - add in the jaggery syrup gradually to make thick batter of pouring consistency(like idli batter)
 - keep it for fermentation (at least 2 hours)

step 2 : frying

 -  heat up oil in a deep frying pan
 - pour a ladleful of batter into moderately hot oil
 - turn in between and fry till get deep brown colour
 - drain onto paper towels
 - repeat the process till the batter is finished
 -enjoy the delicious neyyappam with your family

Whole Wheat Pita Bread Recipe Without Oven


 Pita bread is a middle eastern flat bread. It will puff up when it is cooked and collapse as it cools down. You can stuff its pocket with your favourite filling.

Ingredients :

 whole wheat flour - 2 cups
 salt - as needed
 active dry yeast - 1/2 tsp
 sugar - 1 tsp
 olive oil - 1 tbs

Method


step 1:  proofing of yeast

 - dissolve the yeast and sugar in 1/2 cup of warm water
 - let it sit for 10 - 12 minutes to froth

step 2 :  dough making

 - take the wheat flour in a bowl
 - add in salt and mix well
 - add in the yeast dissolved water and enough water (around 3/4 cup) to make a soft sticky dough
 - add in 1 tbs olive oil
 - grease another bowl and transfer the prepared dough into it
 - cover it with a kitchen towel and keep it in a warm place until double in size

 - then transfer it into a floured surface and knead for 2-3 minutes (add more flour if it is too sticky)
 - make medium sized balls
 - cover the balls with a kitchen towel and give rest for 10 minutes
 - then roll into circles of 1/4" thickness
 - again cover the circles and let them rest for 10 minutes

step 3 : cooking

 - heat up a non stick tawa
 - place the pita over it
 - when the bubbles appear on top flip it
 - it will puff up within 2-3 minutes
 - flip it again and cook for 1-2 minutes
 - soft and chewy pita bread is ready
 - repeat the same with the remaining pitas

Mutton Roast Kerala Style

Ingredients:

for cooking the meat:-
 mutton - 1/2 kg (cut into bite sized pieces)
 pepper powder - 1/2 tbs
 turmeric powder - 1/2 tsp
 salt -as per taste

for masala preparation:-
 garlic -8-10cloves
 ginger - 2"piece
 shallots - 1 cup
 curry leaves - 3 springs
 coriander powder - 1 tbs
 red chilly powder - 2 tsp
 pepper powder - 1 tsp
 garam masala - 1 tsp

Method

step 1
-  Cook mutton along with pepper powder, turmeric powder and salt in a pressure cooker for 4-5  whistle.
 - keep aside

step 2
 - heat 2 tbs oil in a kadai
 - saute onion (chopped) along with a few salt till translucent.
 - add in curry leaves
 - add in crushed ginger and garlic and saute till raw smell gone
 - add in coriander powder and saute for few seconds
 - add in chilly powder followed by pepper powder and garam masala
 - then add in the cooked mutton pieces
 - mix well and continue cooking in low flame till it got brown colour.
 - serve hot along with rice,chapati or paratha

Easy Soft Vattayappam With Rice Flour

Ingredients

 roasted rice flour - 1 cup
 sugar - 1/2 cup
 active dry yeast - 1/2 tsp
 cardamom powder - 1 tsp
 coconut milk - around 1/2 cup
 salt- 1/2 tsp

Method

step 1 : proofing of yeast

 - dissolve the yeast and 1 tsp of sugar in 1/2 cup of warm water and mix well
 - let it sit for 10- 12 minutes until frothy

step 2 : preparation of rice cream

 - add 1 tbs of rice flour into a sauce pan along with 1 + 1/2 cup of water
 - stir it continuously on medium flame until get boiled and thickened
 - then witch off the flame and let it cool

step 3 : preparation of batter

 - to the flour add in salt + cardamom powder + sugar and mix well
 - to this mixture add yeast dissolved water and warm rice cream
 - then add in coconut milk gradually until get a thick batter of pouring consistency (like idli batter)
 - keep it for fermentation in a warm place (I kept for 4 hours)

step 4 : cooking

- keep water in steamer for boiling
- grease a round pan
- pour the batter into it until 1/2 filled
- keep it in the hot steamer (make sure that the steam start to come)
- cook it for 20 minutes
- then switch off flame and remove the vattayappam from steamer
- healthy vattayappam is ready
-  let it warm and unmold into a serving plate
- cut it and serve

Beef Vindaloo Recipe Kerala Style



Beef Vindaloo

 Vindaloo is popuar spicy curry, popuar in India, especially in Goa. Here is a quick and easy recipe of beef vindaoo.

 Ingredients :


  • beef cut into cubes - 1/2 kg
  • tomato - 2 medium
  • onion - 2 medium

      for making paste :



  • ginger - 1" piece
  • garlic - 6 -8 cloves
  • moringa bark - a small piece
  • cinnamon - 2 - 3 small pieces
  • cardamom - 5 -6
  • fennel seeds - 1tsp
  • cloves - 4
  • mustard seeds - 1 tsp
  • chilly powder - 1+1/2 tsp 
  • turmeric powder - 1 tsp
  • vinegar - 2tbs ( or more as needed)
  • salt

 Method


 step 1 : marination


  • make a fine paste with all the ingredients listed under for paste
  • apply this paste over the beef pieces and set aside for minimum 2 hours (overnight for best result)

  step 2 : cooking



  • heat up 2 tbs oil in a pressure cooker
  • saute the sliced onion until soft ( add a few salt at this time to accelerate the cooking process)
  • add in  chopped tomatoes and cook it covered until soft
  • now add in the marinated beef ad stir for 2 minutes
  • pressure cook the meat until done
  • once the pressure settle, open the cooker
  • cook it again until you get a semi - thick gravy
  • this is a best  combination for chapati, paratha, appam, bread, rice etc.
  • the curry tastes better as it sits

Banana Bread

 Ingredients :


  • well ripened banana - 3 ( about 6" long) 
  • wheat flour - 1 cup (250 ml cup)
  • baking powder - 1 tsp
  • salt - 1/2 tsp
  • sugar - 1/2 cup
  • butter - 4 tbs
  • egg - 1
  • vanilla essence - 1 tsp

 Method :



  • sift together wheat flour, salt and baking powder
  • in a separate bowl whisk together butter, egg and sugar until creamy
  • mash banana and add it into the butter mixture
  • add in vanilla and mix well
  • fold in the flour into this mix as 2 batches
  • transfer into a greased loaf pan (8x4)
  • bake in a preheated oven at 180 degree C for 50 - 60 minutes or until a sharp knife inserted came out clean
  • remove from pan and allow it to cool for 10 minutes
  • remove from loaf pan and let it cool completely
  • then cut and serve with 1 cup of tea or coffee
