Vegetable Fried Rice Recipe



Vegetable Fried Rice

 Ingredients :


  • cooked biryani rice - 3 cups *(see notes)
  • finely chopped carrot - 1/2 cup
  • finely chopped beans - 1/2 cup
  • finely chopped ginger - 1 tbs
  • finely chopped garlic - 1 tbs
  • chopped capsicum - 1/4 cup
  • chopped spring onion - 1/2 cup
  • soya sauce - 1 tbs*(see notes)
  • vinegar - 1 tbs
  • salt as required
  • a pinch of sugar
  • pepper powder - 1tsp
  • oil - 2 tbs (olive oil/any veg oil)

Method



  • heat up 2 tbs oil in a wok
  • fry ginger and garlic till golden
  • add in carrot and beans
  • stir on high flame for 2 minutes 
  • keep flame on high so that the vegetables retain their colour and crunchiness
  • now add in capsicum and half of spring onion
  • add salt and mix well
  • next add in soya sauce, pepper powder, vinegar and sugar
  • then add in rice and mix well
  • fry on high flame for 2 minutes
  • finally add in the remaining spring onion and mix well
  • yummy vegetable fried rice is ready to serve

 Notes*


  • how to cook rice :- cook the rice in plenty of water along with a few oil ;when 90% is cooked ,drain and allow it to cool completely
  • You can avoid soya sauce if you wish. Keep in mind that the soya sauce contain high level of sodium and avoid its frequent consumption.
