Tiramisu Recipe

 Tiramisu is a popular italian dessert..Traditionally it is made using eggs..This is an easy, without eggs tiramisu recipe..

 Ingredients:


  • lady finger cookies 
  • whipping cream - 1 cup
  • mascarpone cheese - 1 cup
  • sugar - 1/4 cup
  • vanilla essence - 1/2 tsp
  • warm coffee - 1 cup

 Method



  • beat the whipping cream until soft peaks form
  • add in room temperature mascarpone cheese, sugar and vanilla essence
  • beat them to stiff peaks
  • dip the ladiy finger in warm coffee and arrange in an 8x8 inch pan to form first layer
  • spread half of the cream mixture over them
  • again spread the lady finger cookies and remaining cream mixture to form final layer
  • cover with a plastic wrap and refrigerate for 2 - 4 hours
  • then spread cocoa powder on the top with a sieve and serve

Soft Pathiri Recipe

 Ingredients:


  • roasted rice flour - 1 cup
  • water - 1+3/4 cup*
  • salt as needed
  • oil 1tsp

 Method

  step 1 : make dough

  • boil 1+3/4 cup of water along with salt and oil
  • add in the flour into the boiling water, stirring continuously
  • mix very well
  • turn off the flame and keep it covered for 5 minutes
  • then knead the dough for 10 minutes to make it smooth
  • pathiri will be soft if you knead the dough still it is hot
  • divide the dough into balls of desired size
  • press the balls in a greased pathiri press or roll out into thin circle using a rolling pin

  step 2 : cook pathiri

  • heat the tawa on medium high heat
  • place the shaped pathiri on it
  • when seam appear on top flip it
  • cook for another 30 seconds or small bubbles appear on top
  • turn it again and cook it until puffy
  • do not allow  it to burn; pathiri should be white in colour
  • repeat the same with the remaining dough
  • serve them hot with your favourite curry
  • if not serving immediately keep them in a casserole to keep them warm and soft

 Note:

  • I used homemade rice flour for this recipe; the amount of water needed may vary depending on the type of flour

Easy Fluffy Pancake

 Ingredients :

  For cake base:-

  • all purpose flour / maida - 3 tbs (I used homemade maida for this recipe)
  • egg yolk - 1
  • sugar - 1tsp
  • warm milk - 2tbs
  • oil - 1tbs
  • vanilla essence - 1/2 tsp
  • baking powder - 1/3 tsp
  • a pinch of salt

  For meringue:-


  • egg whites - 2
  • sugar - 1tbs

 Method


  cake base

  • add egg yolk into a bowl
  • add in sugar and combine well
  • add in milk and oil little by little and combine well
  • add in vanilla essence and salt
  • sift in flour and baking powder and mix well
  • this will be a sticky batter; keep aside

  meringue


  • add 2 egg whites into a bowl
  • beat on low speed until frothy
  • add in 1/2 tbs sugar and beat well until shiny
  • add in remaining 1/2 tbs sugar and beat until stiff peaks are formed

  mixing


  • add the meringue into the cake base in three batches and mix gently

  cooking


  • heat up a non stick pan
  • grease well with oil 
  • pour the batter with a ladle, do not spread
  • cook it covered on low flame (about 3 minutes)
  • when one side is golden flip it
  • cover and cook the other side also ( about 1 minute )
  • repeat the same with the remaining batter
  • serve with butter and honey

Healthy Homemade Maida/All Purpose

 A whole grain composed of three parts : bran, endosperm and germ.The bran is the outer shell, which provides Vit.B,fibre and trace minerals. The endosperm is the largest portion of the grain, which provides carbohydrates, protien and small amount of vitamins and minerals.The germ is the embryo,which sprouts into new plant.It contain vit.B, minerals and healthy fats.
 Maida /all purpose flour is made from the endosperm of the grain.The flour is then undergone for chemical bleaching in order to improve its colour and baking properties.
 When we remove bran and germ from whole wheat flour/atta what we get is  maida/all purpose flour..Although the healthy portions are removed, I would like to call it as "healthy" as it is unbleached.
Either grind the whole wheat grain using mixer grinder and then sift to remove the germ and bran, or just sift the whole wheat flour/atta using fine mesh net to make healthy maida at home.
 Use the finest mesh net to sift the flour. I am using a chiffon cloth. Put the germ/bran and flour in separate bowl.Sift the flour in small portions.
 Sift the flour twice to get the consistency more like maida.
 No need to discard the bran and germ..use them in the recipes using whole wheat flour.

 Ingredients :


  •  corn powder - 1 cup
  • wheat flour - 1/2 cup
  • salt as needed
  • carom seed/ajwain - 1/2 tsp
  • turmeric powder - 1/4 tsp
  • oil 2 tbs

 Method :



  • into a bowl mix all the ingredients together
  • add in luke warm water little by little and knead like chapati dough
  • let the dough rest for 30 minutes
  • then divide the dough into balls
  • roll the balls into circle and cut into triangles
  • prick them with a fork
  • deep fry a few at a time, until golden and crisp
  • then drain on to a snack napkin
  • repeat the process until the entire dough is finished

How To Make Cotton Soft Idli With Roasted Rice flour



Soft Idli


Idli with roasted flour?? Yes..You can make cotton soft idli with roasted rice flour..

 Ingredients :


  • roasted rice flour - 1 cup
  • urad dal - 1/2 up
  • salt & water

 Method :



  • wash the urad dal very well and soak for 2 hours
  • I prefer ball type urad dal to split one
  • and I'm using the blender jar to grind the soaked dal
  • grind the soaked dal along with 1 cup of water into a fine paste
  • grinding of dal is very important, take your own time
  • pour it into a deep vessel
  • add  1 cup of roasted rice flour into it
  • add in 1 .5 cups of water and mix well
  • grind them together once more to remove lumps if any
  • the amount of water is very important ( I used 2.5 cups of water in total )
  • now the batter will be very thin, but it will get thickened as it sits
  • if the batter is too thick, proper fermentation will not occur
  • keep it covered in a warm place for fermentation ( 10 - 12 hours )
  • once it is fermented you can see numerous tiny bubbles in the batter
  • this batter yields 18 - 20 idlis
  • now add in enough salt and mix gently without disturbing the bubbles
  • place the greased idli tray in the steamer
  • pour the batter into the pits
  • cover the steamer and cook on medium flame for 8 - 10 minutes
  • now take out the tray from the steamer and allow them cool for 5 minutes
  • after 5 minutes you can remove the idli from the tray using a spoon, without sticking to the sides 
  • cotton soft idlis are ready to serve

Whole Wheat Pound Cake Recipe Without Oven | Wheat Butter Cake Recipe



Whole Wheat Pound Cake

 Ingredients :


  • wheat cake flour * - 200g (1+1/2 cup)
  • softened butter - 200g (1 cup)
  • sugar - 200g (3/4 cup) powdered
  • baking powder - 1 tsp
  • vanilla essence - 1 tsp
  • eggs - 3

 Method


  step 1 : set up stove top oven


  • add 2 cups of sand/salt into a heavy bottomed vessel
  • place a ring inside
  • cover it and preheat on low flame for 10 minutes

  step 2 : preparing cake tin



  • grease the cake tin and line with butter paper

  step 3 : preparing cake batter


        a) dry ingredients

  • add baking powder into the wheat cake flour 
  • sift well and keep aside
     b) wet ingredients

  •  add butter into a mixing bowl
  • add in sugar and beat well until creamy and fluffy 
  • add in eggs 1 at a time; beat for at least 5 minutes after each addition
  • add in vanilla essence and beat for 2 minutes
    c) mixing of dry ingredients with wet ingredients

  • sift the flour mix in 3 batches into the wet mixture
  • mix gently
  • cake batter is ready

  step 4 : baking



  • pour the batter into the prepared cake tin and tap to remove large air bubbles
  • bake in the preheated oven on low flame for 60 - 65 minutes or until a tooth pick inserted at the centre of cake came out clean
  • once it is done, take out of oven and allow it to cool down for 10 minutes
  • then remove from pan and cut it when it is completely cool

   Notes*


  • to make wheat cake flour , remove 3 tbs flour from 1+1/2 cup of wheat flour, then add 3 tbs corn flour into the remaining wheat flour; sift for 4 - 5 times; wheat cake flur is ready.
  • beating butter and egg is very important.
