Pumpkin - Red Cow Pea Curry Kerala Style | Mathanga Vanpayar Erissery
Erissery is a traditional kerala curry.Ingredients :
soaked red cow pea - 1 cupdiced pumpkin - 1 cup
grated coconut - 1 cup
green chillies - as per tolerance
shallots - 2
cumin seeds - 1/2 tsp
turmeric powder - 1tsp
for frying
mustard seeds - 1 tspurad dal - 1 tsp
red chillies - 2-3
curry leaves - a few
grated coconut - 1/2 cup
Method
step 1
- cook soaked red cow pea in a pressure cooker along with enough salt and water- add the pumpkin into this
- add 1/2 cup of water and cook till the pumpkin become soft
- keep aside
step 2
- grind together coconut,green chillies,shallots,cumin and turmeric powder into a coarse paste- add this into the pumpkin - pea mixture
- check for salt
- cook it on low flame for 1 minute
step 3
- heat up 1 tbs coconut oil in a pan- crack mustard seeds
- add urad dal and fry till golden colour
- add red chillies and curry leaves
- add coconut and fry till golden colour
- add this to the curry
- tasty erissery is ready
- serve with rice
Note :
-You can alter he consistency of his curry by adjusting water.- Erissery can be made with yam,raw banana, jack fruit etc.
