Banana Chips Kerala Style
Ingredients:
raw plantain (nendra) banana - 1 kgturmeric powder - 2 tsp
salt
oil - for deep frying
Method
- add 2 tsp turmeric powder into a bowl of water- apply some oil on hands to prevent discolouration of hands
- peel the bananas
- immerse them in the turmeric water for 10 minutes
- drain and pat dry the banana
- slice them with a slicer or knife
for frying :
- heat up oil for deep frying- add 1 tsp salt into the oil
- deep fry the banana slices in batches till crisp
- drain into kitchen towel
- subsequent batches would require less salt
- let them cool completely and store in an air tight container
Notes:
- adding salt directly into the oil prevent oil absorption by the chips- banana peels can be used to make healthy and tasty thoran or stir fry.
