Cheesecake
Ingredients :
- biscuit crumbs - 1 cup
- melted unsalted butter - 1/3 cup
- sugar - 1/4 + 1/2 cup (for crust & for topping)
- cream cheese - 2 cups ( at room temperature )
- vanilla essence - 1 tsp
- whipping cream - 1 + 1/4 cup
Method
- combine biscuit crumbs, butter and 1/4 cup sugar
- transfer into a spring form pan 7"( or 9")* and spread evenly
- press with a glass and keep it in refrigerator for 15 minutes
- take cream cheese, 1/2 cup sugar and vanilla essence in a bowl
- beat well until creamy
- take whipping cream in a separate bowl and beat until thickened
- mix in the cream cheese and combine well
- pour it over the biscuit crust
- cover it and refrigerate until set
- as there is no gelatin it needs to be refrigerated overnight
- when it is set cut and serve cold
Note :
- If you don't have a spring form pan use a sieve with its net for this purpose
- I used homemade cream cheese in this recipe. You can use any unsalted cream cheese of your favourite brand
