Passion Fruit Cake
Ingredients :
whole wheat flour - 1+1/2 cupcorn flour - 3 tbs
soft unsalted butter - 1/2 cup
eggs - 2
baking powder - 1/2 tsp
baking soda - 1/4 tsp
salt - 1/4 tsp
sugar powdered - 3/4 cup + 1 cup
passion fruit - 1/4 cup + 3tbs
Method
step 1 : preparing dry ingredients
- take 1 + 1/2 cup wheat flour in a bowl
- replace 3 tbs wheat flour with 3 tbs corn flour
- add in baking powder, baking soda, and salt
- sift 3-4 times and keep aside
step 2 : preparing wet ingredients
- take butter in big bowl
- add in 3/4 cup powdered sugar
- beat well until fluffy
- beat in 2 eggs 1 at a time
- add in vanilla essence and 1/4 cup passion fruit
step 3 : preparing batter
- sift the dry ingredients into the wet ingredients as 2 batches
- fold in gently
step 4 : baking
- add the cake batter into a loaf pan (greased and lined with butter paper)
- bake in a preheated oven at 180 degree C for 35 - 40 minutes or a skewer inserted at the centre came out clean
- take out from oven
- remove cake from pan after 10 minutes
- allow it to cool completely
step 5 : preparing glaze
- add 1 cup of powdered sugar in a bowl
- add 3 tbs passion fruit into it
- mix very well
- pour it over the cake and let it sit for 15 - 20 minutes
- our healthy and delicious passion fruit cake is ready to serve
