Ingredients:
- Wheat flour 3 1/4 cup (500g)
- Rice flakes 1 cup (40g)
- Sugar 3 tbs (45g)
- Salt 1 tsp
- Instant yeast 1 tsp
- Grated coconut 1 cup (120g)
- Cinnamon powder 1/2 tsp (optional)
- Grind together soaked rice flakes, sugar, salt, yeast, coconut and cinnamon powder with enough water to a fine paste.
- Combine this with wheat flour
- Add more warm water to make a batter of flowing consistency
- Grind the batter again to make it smooth
- Keep the batter in a big vessel and keep in a warm place until fermented ; It may take 2 to 3 hours
- Once the batter is fermented pour a ladle full of batter to hot appachatti and make appam
- Serve this soft delicious appam with your favorite curry
