Thalassery Beef Dum Biryani Recipe | Malabar Style Beef Biryani |



Thalasseri Beef Biriyani


Ingredients :

 for biriyani masala :-

  fennel seeds - 2 tbs
  star anise - 3 pieces
  cardamom - 12 pods
  cinnamon - 2 pieces
  clove - 6-8
  mace - 2 pieces
  nutmeg - 1 small piece

 for marination

  beef - 1 kg
  biriyani masala - 2 tbs
  green chillies - 12-14
  garlic - 20 cloves
  ginger - 2 pieces
  cashew - a handful
  cuscus - 1 tsp
  curd - 1/2 cup
  turmeric powder - 1/2 tsp
  pepper powder - 1 tsp

 for beef masala

  onion - 4
  tomato - 2
  coriander leaves 1/2 cup
  mint leaves - 1/2 cup

 for rice

  jeerakashala rice - 2 cups
  water - 7 cups
  salt
  lemon juice - 1 tbs
  oil and ghee
  spices ( cinnamin 1 stick, cardamom 4-5 pods, cloves 3-4, star anise 1, bay leaf 1)

 for garnishing

  onion - 2
  cashew nut - 1/2 cup
  raisins - 1/4 cup

Method

 step 1 : preparation of biriyani masala


  •  dry roast the spices for 3-4 minutes
  • when they cool down powder them and keep aside

 step 2 : marination



  • cut the beef into cubes , wash well , drain and keep aside 
  • crush chillies, ginger and garlic together and add into the beef pieces
  • soak a handful of cashews and cuscus, grind into paste and add into the beef
  • then add in turmeric powder, 2 tbs biriyani masala, pepper powder, curd and salt
  • mix everything well and keep it aside for at least 2 hours

 step 3 : frying garnishing items



  • heat up oil in a pan
  • add in thinly sliced onions in batches
  • add in a few salt
  • drain when become golden colour
  • fry cashews till golden and drain them
  • fry raisins and drain them

 step 4 : preparation of beef masala



  • after 2 hours of marination cook the beef in a pressure cooker
  • cook on high flame till first whistle, then cook on low flame for 10- 12 minutes
  • saute 4 sliced onions till translucent
  • add in tomatoes and saute well until the oil separates
  • add in 1/2 tsp turmeric powder, 1 tsp biriyani masala, 1/2 tsp pepper powder and mix well
  • add in the cooked beef along with gravy and cook till the gravy become thick.
  • add in a handful of coriander leaves and mint leaves and mix well
  • masala is ready now; turn off the flame

 step 5 : preparation of rice



  • heat up 1 tbs oil and 1 tbs ghee in a heavy bottomed pan
  • crack all the spices listed above
  • add washed and drained jeerakashala rice and stir for 2 minutes
  • add in 7 cups of hot boiling water ( for 1 cup of rice 1 + 3/4 cups of water) 
  • add in enough salt, lemon juice and mix well
  • cook it covered until the entire water get absorbed ( it may take around 6-8 minutes)

 step 6 : dum



  • into a heavy bottomed pan add in the entire beef masala
  • add some coriander leaves, mint leaves and fried onion
  • spread half of the rice over it
  • sprinkle some fried garnishing items, mint leaves, coriander leaves, biriyani masala
  • then make the second layer of rice leaving a few to spread on the top
  • sprinkle the garnishing items , biriyani masala ,mint leaves and coriander leaves
  • on the top spread the remaining rice
  • sprinkle some biriyani masal and 2 tsp ghee
  • seal the pot with an aluminium foil and cover with a tight lid
  • heat up an old tawa and place the biriyani pot 
  • keep on low flame for 20 minutes
  • open after 10 minutes 
  • tasty beef biriyani is ready now
  • mix the rice and masala and serve hot
