Ingredients:
To cook beef:-
- Beef 1 kg
- Ginger garlic crushed 1 tbs
- Curry leaves 2 sprigs
- Turmeric powder 1/2 tsp
- Pepper powder 3/4 tsp
- Garam masala (homemade) 1/2 tsp
- Salt 1.5 tsp
- Chilli powder 1 tsp
- Onion 4 (400g)
- Tomato 3 (300g)
- Ginger 20g
- Garlic 30g
- Green chilli as needed
- Garam masala 1tsp
- Pepper 1/2 tsp
- Turmeric powder 1/2 tsp
- Mint leaves
- Coriander leaves
- Beef stock 3/4 cup
- Jeerakasala rice 4 cups (900g)
- Water 6 cups (1500 ml)
- Beef stock 1 cup (1 cup)
- Cardamom 6, cloves 3, cinnamon stick 1" piece, sajeera 1/2 tsp, mace a small piece, star anise 2 petals
- Ghee 5 tbs (75g)
- Oil 1 tbs
- Ginger garlic crushed 1 tsp
- Onion 2 tbs
- Fried cashew
- Fried raisins
- Fried onion
- Mint leaves & coriander leaves
- Cook beef with ingredients listed under ' to cook beef '
- Drain from stock and shallow fry for 4-5 minutes
- Saute sliced onion until golden
- Add crushed ginger, garlic and green chilli
- Saute for 2 minutes
- Add tomatoes and cook until very soft
- Add turmeric powder, garam masala and pepper powder
- Add fried beef and stock
- Mix well and cook covered for 3 minutes
- Open the lid, add garam masala, coriander leaves, mint leaves and fried onion
- Mix well and keep aside
- To make rice, soak the rice for 30 minutes and then drain from water
- Heat up ghee and oil in a heavy bottomed vessel
- Add whole spices, crushed ginger-garlic, and onion
- Add water and beef stock
- Let this boil
- Add salt as needed
- Add rice and cook without lid until rice and water become same level
- Cover the pot and cook on low heat for 8 minutes
- Turn off the heat and open the pot after 10 minutes
- Layer the rice and beef masala
- Add fried cashews, raisins, onion, mint laves , coriander leaves and garam masala in each layer
- Cook on low heat for 10 minutes
- Turn off the heat
- Serve after 30 minutes
