ഒരു സ്പെഷ്യൽ ബീഫ് ബിരിയാണി റെസിപ്പി | Beef Biryani Recipe


 Ingredients:
 To cook beef:-
  • Beef 1 kg
  • Ginger garlic crushed 1 tbs
  • Curry leaves 2 sprigs
  • Turmeric powder 1/2 tsp
  • Pepper powder 3/4 tsp
  • Garam masala (homemade) 1/2 tsp
  • Salt 1.5 tsp
  • Chilli powder 1 tsp
 For masala:-
  • Onion 4 (400g)
  • Tomato 3 (300g)
  • Ginger 20g
  • Garlic 30g
  • Green chilli as needed
  • Garam masala 1tsp
  • Pepper 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Mint leaves
  • Coriander leaves
  • Beef stock 3/4 cup
 For rice:
  • Jeerakasala rice 4 cups (900g)
  • Water 6 cups (1500 ml)
  • Beef stock 1 cup (1 cup)
  • Cardamom 6, cloves 3, cinnamon stick 1" piece, sajeera 1/2 tsp, mace a small piece, star anise 2 petals
  • Ghee 5 tbs (75g)
  • Oil 1 tbs
  • Ginger garlic crushed 1 tsp
  • Onion 2 tbs
 For layering:-
  • Fried cashew
  • Fried raisins
  • Fried onion
  • Mint leaves & coriander leaves
Method:
  • Cook beef with ingredients listed under ' to cook beef '
  • Drain from stock and shallow fry for 4-5 minutes
  • Saute sliced onion until golden
  • Add crushed ginger, garlic and green chilli
  • Saute for 2 minutes
  • Add tomatoes and cook until very soft
  • Add turmeric powder, garam masala and pepper powder
  • Add fried beef and stock
  • Mix well and cook covered for 3 minutes
  • Open the lid, add garam masala, coriander leaves, mint leaves and fried onion
  • Mix well and keep aside
  • To make rice, soak the rice for 30 minutes and then drain from water
  •  Heat up ghee and oil in a heavy bottomed vessel
  • Add whole spices, crushed ginger-garlic, and onion
  • Add water and beef stock
  • Let this boil
  • Add salt as needed
  • Add rice and cook without lid until rice and water become same level
  • Cover the pot and cook on low heat for 8 minutes
  • Turn off the heat and open the pot after 10 minutes
  • Layer the rice and beef masala
  • Add fried cashews, raisins, onion, mint laves , coriander leaves and garam masala in each layer
  • Cook on low heat for 10 minutes
  • Turn off the heat
  • Serve after 30 minutes

ക്രിസ്മസിനും ന്യൂ ഇയറിനും ഉണ്ടാക്കാൻ ഒരു സ്പെഷ്യൽ കേക്ക് റെസിപ്പി | Yule Log Cake Recipe


Ingredients:
 For sponge cake:-
  • Eggs 4
  • Sugar 80g (5 tbs +2 tsp)
  • Maida 80g (8 tbs)
  • Cocoa powder 6g (1 tbs)
  • Lemon juice / Vinegar 10 ml (2 tsp)
  • Pinch of salt
  • Milk 40ml (2 tbs + 2 tsp)
  • Oil 40ml (2 tbs + 2 tsp)
  • Vanilla essence 1/2 tsp
   Butter cream filling:-
  • Butter 50g
  • Powdered sugar 100g
  • Vanilla essence 1/2 tsp
  Chocolate ganache:-
  • Milk chocolate 50g
  • Dark chocolate 50g
  • Fresh cream 60 ml
  Meringue mushrooms
  • Egg whites 2
  • Sugar 75g (5 tbs)
  • Pinch of salt
  • Lemon juice 1 tsp
Method:
 Sponge cake
  •  Mix together maida and cocoa powder; Keep this aside
  • Separate white and yolk of eggs
  • To the yolk, add salt and lemon juice
  • Beat them until frothy
  • Now add 40g of sugar in three batches
  • Beat well until it reach stiff peak
  • To the yolk, add vanilla essence and remaining sugar
  • Beat well until thick and creamy
  • Now add milk and oil
  • Beat well
  • Add flour to this mix
  • Combine gently and make a smooth batter 
  • Add 1/3 portion of meringue (beaten egg white) and combine gently
  • Combine this with the remaining meringue 
  • Transfer this to a baking tray lined with baking paper
  • Spread the batter evenly
  • Bake at 180 degree Celsius for 25 minutes
  • Take out from the oven
  • Allow the cake to cool completely
 Butter cream filling:
  • Beat together butter , vanilla and powdered sugar until smooth and creamy
 Chocolate ganache:
  • Chop the chocolate
  • Heat the cream
  • Pour the hot cream over the chocolate
  • Let this sit for 2 minutes
  • Then stir with a spatula
  • Smooth ganache is ready
  • Let it sit until thick
  Meringue Mushrooms:
  • To the egg whites, add salt and lemon juice
  • Beat until frothy
  • Add sugar in batches and beat well
  • Stop beating when it reach stiff peak
  • Pipe this to baking tray lined with baking paper and make cap and stem of mushrooms
  • Bake this at 120 degree Celsius for 2 hours
  • Take out from oven
  • Allow them to cool
  • They should be stored in refrigerator
 Assembling
  • Apply filling to the cake and roll it
  • Cut a small piece of cake
  • Place it on the side of big piece
  • Apply ganache all over the cake
  • Make lines using a fork to look like tree bark
  • Decorate with meringue mushrooms and powdered sugar
  • Delicious Yule Log Cake is ready to serve

പാവയ്ക്കാ കൊണ്ട് ഇങ്ങനെ ഉണ്ടാക്കിയിട്ടുണ്ടോ | Pavakkai Recipe


Ingredients:
  • Bitter gourd 1 small (120g)
  • Onion 1 small (75g)
  • Ginger a small piece (8g)
  • Green chilli 3
  • Curry leaves
  • Curd 1 cup (250 ml)
  • Salt as needed
 Method:
  • Heat up coconut oil in a pan
  • Crack mustard seeds
  • Add onion, ginger, green chilli and curry leaves
  • Saute for 2 minutes
  • Add chopped bitter gourd and salt
  • Stir and cook on medium heat until turn golden
  • Add to curd and mix well
  • Adjust salt
  • Serve with rice

നല്ല നാരങ്ങാ അച്ചാർ എങ്ങനെ ഉണ്ടാക്കാം | Naranga Achar Recipe | Lemon Pickle Kerala Style Recipe | Lime Pickle Recipe


Ingredients:
  • Lime 10 (500g)
  • Ginger a big piece (20g)
  • Ginger bulbs (30g)
  • Green chilli 3
  • Curry leaves 3 sprigs
  • Kashmiri chilli powder 3 tbs
  • Spicy chilli powder 1 tbs
  • Turmeric powder 1/2 tsp
  • Asafoetida 1.5 tsp
  • Fenugreek powder 1/4 tsp
  • Mustard seeds 2 tsp
  • Fenugreek seeds 1/2 tsp
  • Vinegar 1/4 cup
  • Salt
  • Sugar 1/2 tbs
  • Gingelly oil 1/2 cup
  • Cardamom 1, cloves 1, cinnamon a small piece
Method:
  • Steam the lime for 8 minutes
  • Remove from steamer and allow them to cool
  • Once cool slice them to small pieces
  • Add salt and sugar
  • Keep aside for minimum 30 minutes
  • Heat up gingelly oil in a pan
  • Add cardamom, cloves and cinnamon
  • Add mustard seeds and fenugreek seeds
  • Add ginger, garlic, green chilli and curry leaves
  • Fry until golden
  • Reduce flame to low
  • Add chilli powder, fenugreek powder , turmeric powder and asafoetida
  • Add vinegar and let it boil
  • Add sliced lemon and mix well
  • Add 1/4 cup of water and allow to boil
  • Adjust salt and turn off the gas
  • Store in clean and dry bottle

പാറ ബൺ | Rock Bun Recipe


Ingredients:
  • Maida 1.5 cups (225g)
  • Baking powder 1 tsp
  • Salt 1/4 tsp
  • Custard powder 1 tbs (10g)
  • Butter 100g
  • Sugar 6 tbs (90g)
  • Egg 1
  • Milk 3 tbs
  • Vanilla essence 1/2 tsp
  • Lime zest
  • Tutti frutti (or any dry fruit of your choice 75g)
Method:
  • Mix together maida, baking powder, salt and custard powder
  • Add butter and rub with flour until it resembles bread crumps
  • Add sugar, lemon zest and sugar
  • Mix well
  • Combine egg, milk and vanilla essence
  • Add this to flour mix
  • Combine gently and form a sticky dough
  • Arrange small portions of dough in a baking tray
  • Bake at 180 degree Celsius for 20 - 25 minutes
  • Take out from oven
  • Allow to cool
  • Serve with tea or coffee

ഒരു സ്പെഷ്യൽ പുലാവ് റെസിപ്പി | Special Vegetable Pulao Recipe


Ingredients:
  • Jeerakasala rice/Basmai rice 2 cups
  • Cardamom 2
  • Cinnamon 1 stick
  • Cloves 2
  • Coconut milk of medium thickness 3 1/4 cups
  • Soya chunks 1 cup
  • Carrot 1 
  • Potato 1
  • Cauliflower 1/4 cup
  • Green peas 1/4 cup
  • Onion 1
  • Tomato 1
  • Ginger 1 small piece
  • Garlic 10 cloves
  • Green chilli as needed
  • Pepper 1 tsp
  • Fennel seeds 1 tsp
  • Coriander leaves
  • Mint leaves
  • Curd 1/4 cup
  • Turmeric powder 
  • Garam masala 1 tsp
  • Cashew 25g
 Method:
  • Soak soya chunks in hot water for 15 minutes; Then squeeze out from water and keep aside.
  • Crush ginger, garlic and green chilli and keep aside
  • Powder pepper and fennel seeds and keep aside
  • Pour 1/4 cup of curd in a bowl
  • Add salt, turmeric powder, crushed ginger garlic 1 tsp and garam masala to this
  • Add soya chunks and other vegetables to this
  • Keep marinated for 30 minutes
  • Soak rice in water for 30 minutes then drain and keep aside
  • Heat some ghee and coconut oil in a pot
  • Add whole spices and splutter them
  • Add cashews and fry until golden
  • Add crushed ginger, garlic and green chilli
  • Add crushed pepper and fennel seeds 
  • Add sliced onion and fry until soft
  • Add tomato and saute until very soft
  • Add rice and mint leaves and coriander leave s
  • Combine gently
  • Add coconut milk 
  • Adjust salt
  • Boil without lid until water and rice reach same level
  • Then place the lid
  • Cook on low flame for 8 minutes
  • Then turn off the gas
  • Open the pot after 15 minutes
  • Delicious vegetable pulao is ready to serve
  • Serve with raita, pappad and pickle

കാരറ്റ് മഫിനുകൾ എങ്ങനെ ഉണ്ടാക്കാം- ഒരു മികച്ച പാചകക്കുറിപ്പ് | Carrot Muffins Recipe


Ingredients:
  • Carrot 2 grated (175g) 
  • Maida 2 cups (260g)
  • Baking powder 1 tsp (4g)
  • Baking soda 1.2 tsp (2g)
  • Salt 1/4 tsp
  • Garam masala 1/2 tsp
  • Eggs 3
  • Oil 1/2 cup (120 ml)
  • Jaggery powder 1/2 cup (100g)
  • Sugar 6 tbs (90g)
  • Butter milk 1 cup
  • Lemon zest 1tsp
Method:
  • Combine all the ingredients together
  • Transfer to muffin molds 
  • Bake at 180 degree Celsius for 22 - 25 minutes or until internal temperature is 92 degree Celsius.

Ingredients:
 To cook chicken:-
  • Chicken 650g
  • Turmeric powder 1/2 tsp
  • Salt 3/4 tsp
  • Pepper powder 1 tsp
  • Garam masala 1/2 tsp
  • Ginger garlic paste 1 tsp
  • Curry leaves 1 sprig
 To make thoran:-
  • Shallots 30 (100g)
  • Onion 1 (75g)
  • Ginger a small piece (8g)
  • Garlic 10 cloves (10g)
  • Green chilli 2 (10g)
  • Pepper 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Chilli powder 1/2 tsp
  • Coriander powder 1 tsp
  • Garam masala 1/2 tsp
  • Coconut 1cup
  • Curry leaves
  • Coriander leaves
  • Mustard seeds 1/2 tsp
  • Fennel seeds 1/2 tsp
  • Red chilli 2
  • Lemon juice 1 tbs
Method:
  • Cook chicken with all the listed ingredients
  • When done, remove from pan and make it small pieces
  • Heat up coconut oil in a pan
  • Crack mustard seeds
  • Then add fennel seeds followed by dried red chilli
  • Add shallots and onion
  • Stir until change in colour
  • Add crushed ginger, garlic and curry leaves
  • Add chilli powder, coriander powder, turmeric powder, garam masala and pepper powder
  • Stir for a few seconds
  • Add shredded chicken and coconut 
  • Stir well and cook on low flame for 2 minutes
  • Finally add coriander leaves and lemon juice
  • Turn off the flame
  • Serve after 30 minutes

മാർബിൾ കേക്ക് ഉണ്ടാക്കുന്ന വിധം | Marble Cake Recipe


Ingredients:
  • Maida 140g (1cup)
  • Baking powder 2g (1/2 tsp)
  • Salt 1g (1/4 tsp)
  • Milk powder 5g (1/2 tbs)
  • Butter 150g (3/4 cup)
  • Sugar 120g (1/2 cup)
  • Eggs 4
  • Vanilla essence 1/2 tsp
  • Cocoa powder 7g (3 tsp)
  • Oil 10g (2 tsp)
 Method:
  • Swift together maida, baking powder, milk powder and salt; Keep this aside
  • Beat together butter and sugar until soft and fluffy (3-4 minutes)
  • Add 4 eggs 1 at a time and beat until well incorporated
  • Add sifted flour and fold in gently
  • In another bowl, combine cocoa powder and oil
  • To this fold in half of the prepared cake batter
  • Line a 7" cake tin with baking paper
  • Add the vanilla batter and cocoa batter alternatively until the batter is finished
  • Shake the tin to level the batter
  • Tap 3-4 times to remove the big air bubbles
  • Bake in a preheated oven at 180 degree Celsius for 30 - 35 minutes (until a tooth pick inserted at the center of the cake comes out clean or the internal temperature becomes 92 degree Celsius)
  • Once done take out from oven
  • Remove from tin
  • Allow the cake to cool down completely and then slice and enjoy.

ബട്ടർ ചിക്കൻ പെർഫെക്റ്റായി വീട്ടിൽത്തന്നെ ഉണ്ടാക്കാം | Butter Chicken Recipe


Ingredients:
 To marinate:-
  •  Chicken 650g
  • Juice of half lemon
  • Ginger garlic paste 1 tsp
  • Kashmiri chilli powder 2 tsp
  • Garam masala 1/2 tsp
  • Roasted cumin powder 1/4 tsp
  • Kasoori methi 1 tsp
  • Hung curd 1 tbs
 For gravy:
  • Cinnamon 1"
  • Cloves 2
  • Cardamom 6
  • Garlic 10 cloves (10g)
  • Ginger a small piece (8g)
  • Kashmiri chilli 4
  • Green chilli according to taste
  • Cashew 25 (30g)
  • Tomato 3 (320g)
  • Salt 1 tsp
  • Sugar 1 tsp
  • Kashmiri chilli 1 tsp
To cook gravy:
  • Ginger garlic paste 1 tsp
  • Kashmiri chilli 1 tsp
 To add finally:
  • Garam masala 1/2 tsp
  • Kasoori methi 1 tsp
  • Fresh cream 2 tsp
  • Honey 1 tsp
 Method:
  • Marinate chicken with salt, lemon juice and ginger garlic paste
  • Keep aside for 20 minutes
  • Then marinate with ingredients listed under 'second marination'
  • Keep aside for 30 minutes (or up to 24 hours in refrigerator)
  • To make gravy, add 2 tbs oil and 2 tsp butter in a heavy bottomed kadai
  • Add  all the ingredients listed under 'For gravy'
  • Cook until they are soft (about 15 - 20 minutes)
  • Once ingredients are cooked, turn off the flame and allow them to cool
  • Once the ingredients are cool transfer to a grinder jar and grind to a fine paste
  • Once the chicken been marinated, heat up some oil in a pan
  • Add the chicken pieces and fry for about 12 minutes (turn in between)
  • Once the chicken is cooked remove from pan and keep aside
  • Heat some oil and 1 tsp butter in a heavy bottomed kadai
  • Add ginger garlic paste and cook for 2 minutes
  • Add kashmiri chilli powder and stir for a few seconds
  • Add ground paste and cook for 5 minutes
  • Add 1 cup of water and cook for another10 minutes
  • Adjust salt
  • Add fried chicken and cook for 6 - 7 minutes
  • Finally add kasoori methi, garam masala, honey, 1 tsp butter and fresh cream
  • Mix well and turn off the flame
  • Delicious butter chicken is ready to serve

ഒരു തനി നാടൻ നാലുമണി പലഹാരം | Poruthalada Recipe | പൊരുത്തലട


Ingredients:
  • Rice flour 1 cup
  • Salt 1/4 tsp
  • Coconut 2 cups
  • Sugar 4-5 tbs
 Method:
  • Mix flour and salt together
  • Add hot boiling water little by little and make a soft dough
  • Prepare filling by combine together coconut and sugar together
  • Take a small portion of dough and spread thinly on banana leaf
  • Add filling and fold it
  • Transfer to hot pan and cook each side 3-4 minutes
  • Serve with tea

ചായക്കൊപ്പം കഴിക്കാൻ ഒരു പുതിയ ഐറ്റം | Egg Pide Recipe | Snacks Recipes


Ingredients:
 Dough:-
  • Maida 300g (2 cups pressed)
  • Water 160 ml
  • Sugar 30g (2 tbs)
  • Salt 5g (3/4 tsp)
  • Instant yeast 3g (1 tsp)
  • Butter 30g (2 tbs )
  • Milk powder 10g (1 tbs)
 Filling:-
  • Eggs 5
  • Onion 1 (100g)
  • Tomato 1 (75g)
  • Green chilli 2 (10g)
  • Pepper powder 1 tsp
  • Garam masala 1/2 tsp
  • Coriander leaves
  • Salt
  • Cumin seeds 1/8 tsp
Method:
  • Prepare dough by mixing all the ingredients listed under 'dough'
  • Knead the dough for 6 -7 minutes
  • Allow this to rest for 1 hour
  • To make filling crack eggs into a bowl
  • Add salt as needed 
  • Beat the eggs very well and keep aside
  • Heat up 2 tbs oil in a pan
  • Add cumin seeds 
  • Add chopped onion and green chilli
  • Stir and cook for 5-6 minutes
  • Add tomato and salt 
  • Stir until tomato is very soft
  • Add pepper and garam masala
  • Add beaten eggs and stir well for 2 minutes
  • Finally add coriander leaves and mix well
  • Filling is ready, keep this aside
  • After 1 hour knead the dough lightly
  • Divide into 8 equal portions
  • Shape them into balls
  • Allow them to rest for 15 minutes
  • Now roll each ball into an oval shape
  • Add 2 tsp tomato sauce
  • Add prepared egg filling
  • Add some cheese
  • Fold the sides and pinch the ends
  • Give egg wash and sprinkle sesame seeds
  • Bake at 190 degree Celsius for 15 - 18 minutes
  • Take out from oven
  • Allow them to cool slightly
  • Slice and enjoy

Ingredients:
 To marinate:-
  • Beef 400g
  • Chilli powder 1 tsp
  • Ginger garlic paste 1/2 tsp
  • Salt 1/2 tsp
  • Garam masala 1/2 tsp
  • Pepper powder 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Lime juice 2 tsp
  • Curry leaves 1 sprig
 Second marination:-
  • Kashmiri chilli powder 2 tsp
  • Chilli flakes 2 tsp
  • Turmeric powder 1/4 tsp
  • Ginger garlic paste 1 tsp
  • Garam masala 1/4 tsp
  • Fennel powder 1/2 tsp
  • Corn flour 2 tbs
  • Beef stock as needed
  • Salt as needed
 To garnish:-
  • Curry leaves 2 sprigs
  • Green chilli 4-5
 Method:
  • Marinate beef chunks with mentioned ingredients
  • Keep aside for 30 minutes
  • Pressure cook the marinated beef until 90% is cooked
  • Once the beef is cool, cut them into thin and long strips
  • Prepare second marination with mentioned ingredients
  • Marinate the beef strips with prepared marinade
  • Keep aside for 15 - 20 minutes
  • Deep fry in hot oil until crisp enough
  • Drain from oil
  • Fry curry leaves and green chilli
  • Add them to the fried beef
  • Serve hot

മുട്ട കുറുമ ഉണ്ടാക്കുന്ന വിധം | Mutta Kurma Recipe | Egg Kurma Recipe


Ingredients:
  • Boiled eggs 5
  • Onion 1(100g)
  • Ginger garlic paste 2 tsp
  • Green chilli 3(15g)
  • Tomato paste 1/2 tbs
  • Pepper powder 1/2 tsp
  • Garam masala 1/8 tsp
  • Turmeric powder 1/4 tsp
  • Grated coconut 1/2 cup
  • Fennel seeds 1 tsp
  • Cashews 5
  • Coriander leaves
  • Whole spices:- cardamom 4, cinnamon 1", cloves 2, star anise a small piece
 Method:
  • Add some coconut oil to a pan
  • Add the whole spices and splutter them
  • Add sliced onion and green chilli
  • Saute until the onion turns golden
  • Meanwhile grind together coconut, fennel seeds and cashews to a fine paste
  • When the onion turns golden, add ginger garlic paste
  • Saute for 1 minutes
  • Add pepper powder and turmeric powder
  • Stir for a few seconds
  • Add tomato paste and some some hot water
  • Cook for 2 minutes
  • Add prepared coconut paste and add water to adjust thickness of the gravy
  • Add salt 
  • Add garam masala and coriander leaves
  • Finally add eggs
  • Combine with gravy gently
  • Turn off the flame
  • Allow this to rest for 10 minutes
  • Delicious is egg kurma is ready
  • This curry is an excellent cobination for appam, pathiri, nolappam , chapati etc.

ചിക്കൻ ആൽഫ്രെഡോ പാസ്ത | Chicken Alfredo Pasta Recipe


Ingredients:
  • Pasta 200g*
  • Chicken 300g
  • Mushroom 200g
  • Onion 1 (100g)
  • Garlic 10 cloves (10g)
  • Fresh cream 1 cup
  • Pepper 1 tsp
  • Green chilli 2
  • Curd 2 tsp
Method:
  • Marinate the chicken with salt, pepper and curd
  • Keep aside for 15 minutes
  • Mean while boil 2 litre of water
  • Add salt
  • Add pasta and cook according to packet instructions
  • When it is done, strain the pasta and keep aside
  • Heat up 1 tbs oil and 2 tsp butter
  • Add marinated chicken and fry for 5-6 minutes
  • Remove from pan and keep aside
  • Add more oil and 2 tsp butter to the same pan
  • Add chopped onion and green chilli
  • Saute till the onion become transparent
  • Add chopped mushroom and crushed garlic
  • Cook for 6-7 minutes until they become brown in color
  • Add 1 cup of pasta cooked water and fresh cream
  • When it begin to boil add cooked pasta and fried chicken
  • Mix well 
  • Add some coriander leaves
  • Cover the pot and cook on low heat for 5 minute
  • Turn off the flame
  • Allow it to rest for 10 minutes
  • Open the pot and serve the delicious pasta hot.
* Any type of pasta can be used. I used spaghetti for this recipe.

സദ്യ സ്പെഷ്യൽ കുറുക്കു കാളൻ | Kurukku Kalan Recipe | Kerala Style Sadya Special


Ingredients:
  • Raw plantain 1 (120g)
  • Elephant yam a small piece (100g)
  • Green chilli 2
  • Turmeric powder 1/2 tsp
  • Chilli powder 1/4 tsp
  • Salt
  • Bird's eye chilli 8 - 10
  • Cumin 1/2 tsp
  • Pepper corns 1 tsp
  • Grated coconut 1 cup
  • Curd 1 cup
  • Fenugreek powder 2 pinches
  Tempering:
  • Mustard seeds 1/2 tsp
  • Fenugreek seeds 1 pinh
  • Curry leaves
  • Dried red chilli 2
  • Ghee
 Method
  • Add plantain and yam in a vessel
  • Add salt, green chilli, turmeric powder, chilli powder and salt
  • Cook till the veggies are tender
  • Grind together cumin seeds, bird's eye chilli, turmeric powder, pepper, coconut, turmeric powder along with 1/4 cup of curd
  • Add this to cooked veggies and cook for 2-3 minutes
  • Now add remaining curd 
  • Stir and cook till the mixture turn to a thick texture
  • Turn off the flame 
  • Add fenugreek powder and mix well
  • Heat up some ghee in another pan
  • Crack mustard seeds, fenugreek seeds, curry leaves and dried red chillies
  • Pour this to the curry and mix well

സദ്യ സ്പെഷ്യൽ ഓലൻ എങ്ങനെ ഉണ്ടാക്കാം | Olan Recipe | Kerala Style Sadya Special


Ingredients:
  • Thinly sliced ash gourd 2 1/2 cups (250g)
  • Green chilli 3 (15g)
  • Second extract coconut milk 1 cup (250 ml)
  • First extract coconut milk 1/2 cup (120 ml)
  • Coconut oil 1 tbs (15g)
  • Curry leaves 1 sprig
  • Salt 
 Method
  • Add ash gourd, green chilli, salt and thin coconut milk to a pan
  • Cook covered till the ash gourd is tender
  • Remove the lid and cook until the entire liquid get evaporated
  • Reduce flame to low, and add thick coconut milk
  • Turn off the flame when it begin to boil
  • Add coconut oil and curry leaves
  • Cover the pan and let it sit for 15 minutes
  • Delicious olan is ready to serve !

ചോക്ലേറ്റ് കേക്കുകളുടെ രാജാവ് OPERA CAKE വീട്ടിൽത്തന്നെ ഉണ്ടാക്കാം


Ingredients:
 Almond Sponge Cake
  • Almond flour 100g
  • Powdered sugar 75g (5 tbs)
  • Eggs 3
  • Egg whites 4
  • Vinegar 2 tsp
  • Granulated sugar 30g(2 tbs )
  • Maida 30g (3tbs)
  • Melted butter 15g (1 tbs)
 Coffee Syrup
  • Water 250 ml (1 cup)
  • Sugar 60g (4 tbs)
  • Coffee powder 2 tsp
  • Vanilla essence 1/2 tsp
  • Rum essence 3 drops
 Coffee Butter Cream
  • Milk 150 ml (1/2 cup+ 2 tbs)
  • Coffee powder 2 tsp
  • Egg yolks 4 
  • Sugar 75g (5 tbs)
  • Soft butter 200g
 Chocolate Ganache
  • Milk chocolate 100g
  • Dark chocolate 100g
  • Fresh cream 100g
 Chocolate Glaze
  • Dark chocolate 50g
  • Milk chocolate 50g
  • Oil 15g (1 tbs)
Method:
 Almond Sponge Cake/Jaconde Biscuit
  • Take egg whites in a clean & dry bowl
  • Add vinegar and start beating using a clean beater blade
  • When it begin to froth add granulated sugar in 3 batches
  • Stop beating when it reach stiff peak stage and keep aside
  • In another bowl, combine together almond flour, eggs and powdered sugar
  • Beat this mixture for about 4- 5 minutes, until fluffy
  • Fold in 1/3 portion of meringue to this
  • Combine this with the remaining meringue 
  • Add flour and fold in gently
  • Add melted butter and combine gently
  • pour this to a baking tray (11 x 14 inches) lined with baking paper
  • Level the top
  • Bake at 190 degree Celsius for 10 - 12 minutes, until top is golden
  • Take out from oven and allow this to cool
  • Cut into 3 portions and keep aside
 Coffee Syrup
  • Boil water along with sugar
  • Add coffee syrup , vanilla essence and rum essence
  • Allow this to cool
 Coffee Butter Cream
  • Boil milk and add coffee powder
  • Turn off the flame and allow this to cool for 3 minutes
  • Mix together egg yolks and sugar
  • Add hot coffee little by little to the yolk and combine well
  • Pour back this to the sauce pan
  • Stir on low flame until thickened
  • Allow this to cool
  • Take soft butter in a bowl
  • Add cool coffee custard in batches, into the butter and beat well
  • Keep this aside
 Chocolate Ganache
  • Take chopped chocolate in a clean bowl
  • Heat up cream in a sauce pan
  • Pour the hot cream to the chocolate
  • Let this sit for 1 minute
  • Then stir with a clean & dry spatula until everything is well combined
 Assembling:
  • Take one portion of cake
  • Wet this very well with coffee syrup
  • Add 1/2 portion of coffee butter cream as next layer
  • Place the second portion of cake
  • Wet with coffee syrup
  • Next layer is chocolate ganache
  • Over this place the third portion of the cake
  • Wet with coffee syrup
  • Add remaining coffee butter cream 
  • Refrigerate for minimum 2 hours or overnight
 Chocolate Glaze
  • Take Chocolate in a clean bowl
  • Melt this over Bain Marie
  • Add oil and mix well
  • Pour this over the cold cake and level it immediately
  • Refrigerate for 30 minutes
 Slicing
  • Dip a sharp knife in hot water and wipe it
  • Trim the edges of the cake
  • Slice the cake and enjoy

ചപ്പാത്തിക്കൊപ്പം കഴിക്കാൻ മഷ്‌റൂം പെപ്പർ മസാല | Mushroom Pepper Masala Recipe


Ingredients:
  • Mushroom 400g
  • Onion 2 (100g)
  • Ginger garlic paste 1 tsp
  • Tomato paste 1 tbs
  • Green chilli 3 (15g)
  • Capsicum 1/2 (50g)
  • Pepper 1.5 tsp
  • Garam masala 3/4 tsp
  • Turmeric powder 1/2 tsp
  • Coriander leaves
  • Fennel seeds 1 tsp
 Method:
  • Heat up oil in pan
  • Add fennel seeds followed by chopped onion and green chilli
  • Once it become golden in color, add ginger garlic paste
  • Saute for 1 minute
  • Add turmeric powder, garam masala and pepper
  • Sir for a few seconds
  • Add tomato paste and mix well
  • Add capsicum and stir for 2 minutes
  • Add chopped mushroom and mix well
  • Add salt as needed
  • Add 1/4 cup of hot water 
  • Cover and cook for 4 minutes
  • Open the pan and add coriander leaves
  • Serve hot

കിടിലൻ കോളിഫ്ലവർ മസാല കറി | Cauliflower Masala Curry Recipe


Ingredients:
  • Cauliflower 300g
  • Garlic 10 cloves
  • Green chilli 3 (15g)
  • Salt 1/2 tsp
 To grind:
  • Tomato 3 (200g)
  • Kashmiri chilli 4
  • Coriander stem 
  • Garlic 10 cloves (10g)
  • Ginger small piece (10g)
  • Cashew nut 10
  • Chilli powder 1/2 tsp
  • Turmeric powder 1/4 tsp
  • Coriander powder 3/4 tsp
  • Cumin powder 1/4 tsp
  • Salt
 For masala
  • Onion 3 (250g)
  • Chilli powder 1/4 tsp
  • Turmeric powder 1/4 tsp
  • Garam masala 1/2 tsp
  • Sugar 2 pinches
  • Kasoori methi 1 tsp
  • Coriander leaves
 Method:
  • Add coconut oil in a pan
  • Add cauliflower florets
  • Stir & cook for 6 - 7 minutes
  • Add crushed garlic and slitted green chillies
  • Saute for 2 minutes
  • Remove from pan and keep aside
  • Add more oil to the same pan
  • Add finely chopped onion and saute until golden
  • Meanwhile grind together all the ingredients listed under "to grind"
  • Once the onion become golden, add chilli powder, turmeric powder and garam masala
  • Saute till the raw smell gone
  • Add the ground paste
  • Stir and cook till the mix begin to release oil
  • Add 1.5 cups of hot water
  • Add fried cauliflower florets 
  • Add sugar
  • Cover and cook for 3 minutes
  • Finally add chopped coriander leaves, 1/4 tsp garam masala and kasoori methi
  • Delicious cauliflower masala is ready to serve

പെർഫെക്റ്റ് ബട്ടർ നാൻ വളരെ എളുപ്പത്തിൽ വീട്ടിലുണ്ടാക്കാം | Garlic Butter Naan Recipe


Ingredients:
  • Maida 2 cups (300g)
  • Whole wheat flour 1 cup (150g)
  • Curd 1/4 cup (72g)
  • Water 6 tbs (90g)
  • Milk 1/2 cup (120g)
  • Oil 1 tbs (15g)
  • Salt 3/4 tsp
  • Baking powder 1 tsp
  • Baking soda 1/4 tsp
  • Sugar 2 tbs (30g)
  • Grated garlic
  • Chopped coriander leaves
  • Melted butter
 Method:
  • Mix all the ingredients together
  • Knead for 10 minutes
  • Apply some oil on top
  • Cover the dough and allow it to rest for minimum 30 minutes
  • Divide the dough into small balls (8-10)
  • Apply some oil on top
  • Cover them and give rest for 20 minutes
  • Roll each balls into circles of a thickness of 2 chappati
  • Spread grated garlic and coriander on top and press gently
  • Transfer to hot tawa and cook both sides until brown spots appear
  • Remove from tawa and brush melted butter on top
  • Serve these delicious butter garlic naan with your favorite curry

ചെമ്മീൻ റൈസ് | Chemmeen Rice | Prawns Rice Recipe


Ingredients:
  • Basmati rice 2 cups (420g)
  • Prawns stock 2 cups*
  • Thin coconut milk 1.5 cups*
  • Salt 1.5 tsp
 For masala:
  • Prawns 350g
  • Onion 3 (240g)
  • Ginger a small piece (8g)
  • Garlic 10 cloves (12g)
  • Green chilli 3 (15g)
  • Curry leaves 2 srigs
  • Chilli powder 3/4 tsp
  • Coriander powder 1 tsp
  • Turmeric powder 1/2 tsp
  • Pepper powder 1/2 tsp
  • Garam masala 1/4 tsp
  • Coriander leaves
  • Tomato paste 2 tbs
  • Salt
  • Cardamom 4, cloves 2, cinnamon 1 small piece
Method
  • Soak the rice for 30 minutes and then drain
  • Boil prawns stock and coconut milk together
  • Add salt and rice
  • Allow this to boil on high flame till the level of liquid and rice become the same
  • At this point, reduce flame to low and cook covered for 8 minutes
  • Turn off the flame and open the pot after 10-15 minutes
  • Fluff the rice using a fork
 To prepare masala
  • To make masala  heat up some coconut oil and ghee in a thick bottom vessel
  • Add whole spices followed by chopped onion
  • Saute until golden in colour
  • Add crushed ginger garlic, green chilli and curry leaves
  • Saute for 2 minutes
  • Add powdered spices and stir for a few seconds
  • Add tomato paste and combine well
  • Add salt as needed
  • Add prawns and cook for 3 minutes on high flame
  • Add coriander leaves and turn off the flame
  • Add rice to prepared masala and combine gently
  • Delicious prawns rice is ready to serve
 * Prawns stock and coconut milk can be substituted with 3 1/2 cups of plain water

തേങ്ങാപ്പാൽ ചേർത്തുണ്ടാക്കിയ പഞ്ഞി കേക്ക് | Coconut Milk Sponge Cake Recipe


Ingredients:
  • Maida 80g (8 tbs)
  • Corn flour 20g (2 tbs)
  • Baking powder 1/2 tsp
  • Cardamom powder 1/2 tsp
  • Sugar 80 g (5 tbs)
  • Salt 1/4 tsp
  • Eggs 5
  • Coconut oil 60g (4 tbs)
  • Coconut milk 60g (4 tbs)
  • Vanilla essence 1/4 tsp
  • Vinegar 2 tsp (10ml)
 Method:
  • Mix together maida, corn flour , salt, baking powder and cardamom powder
  • Separate egg white and yolk
  • To the yolk, add vanilla essence and half portion of sugar
  • Beat for 2-3 minutes
  • Add coconut oil, coconut milk and flour mix
  • Combine well and keep aside
  • To the egg white, add vinegar
  • Beat well until frothy
  • Add the remaining sugar in three batches
  • Beat for 5-6 minutes 
  • Add 1/3 portion of meringue with the wet mixture and fold in gently
  • Add this to the remaining meringue and fold on gently
  • Pour this to the prepared tin
  • Place this in a tray and pour hot water into the tray
  • Bake at 150 degree Celsius for 90 minutes
  • Take out from the oven
  • Remove the cake from the tin and allow this to cool upside down
  • Slice when it is completely cool

മീൻ കറി എന്ന് പറഞ്ഞാല് ഇങ്ങനെ തന്നെ ഉണ്ടാക്കണം | Meen Curry Recipe Kerala Style


Ingredients
  • Fish 350g
  • Shallots 10 (50g)
  • Green chilli 5 (25g)
  • Ginger 20g
  • Curry leaves
  • Chilli powder 2 tsp
  • Coriander powder 1 tsp
  • Turmeric powder 1/2 tsp
  • Salt
  • Raw mango 1 (130g)
  • Second extract coconut milk 2 cups
  • First extract coconut milk 1/2 cup
  • Coconut oil
 Method:
  • Rub together shallots, ginger, green chillies, curry leaves, chilli powder, coriander powder, turmeric powder , 1.5 tbs coconut oil and salt
  • Add second extract coconut milk 
  • Cook for 3-4 minutes
  • Add sliced mango pieces followed by fish
  • Cook for 5-6 minutes
  • Add first extract coconut milk
  • Turn off the heat when it start to boil
  • Heat some coconut oil in another pan
  • Add 4 shallots sliced and 1 sprig of curry leaves
  • Fry till the shallots become brown in color
  • Add 1 tsp chilli powder and stir for a few seconds
  • Pour this over the curry
  • Delicious fish curry is ready to serve

  • Salt as needed
 Method:
  • Marinate the prawns with salt, turmeric powder and curd
  • Keep aside for 10 minutes
  • Grind together all the ingredients listed under 'for masala', along with some water
  • Heat up some coconut oil and add the ground masala
  • Add some curry leaves
  • Stir and cook for 3 minutes
  • Add the marinated prawns and stir on high heat for 3 minutes
  • Easy and tasty prawns roast is ready to serve.

ഇന്നത്തെ സ്പെഷ്യൽ മട്ടൻ കറി | Kerala style Mutton Curry Recipe


Ingredients:
 To cook mutton:-
  • Mutton 1/2 kg
  • Ginger - garlic crushed 1 tbs
  • Curry leaves
  • Pepper powder 1 tsp
  • Turmeric powder 1/2 tsp
  • Garam masala 1/2 tsp
  • Green chilli 1
  • Thin coconut milk 3/4 cup
  • Salt 1 tsp
 To prepare masala:-
  • Onion 1 (100g)
  • Ginger-garlic crushed 1 tbs
  • Green chilli 2 (adjust according to taste)
  • Curry leaves 
  • Tomato paste 1/2 tbs (or 1 small tomato)
  • Turmeric powder 1/2 tsp
  • Spicy chilli powder 3/4 tsp (adjust according to taste)
  • Coriander powder 3 tsp 
  • Pepper powder 1/2 tsp
  • Garam masala 1/2 tsp
  • Thick coconut milk 1/2 tsp
 For tempering:-
  • Shallots 4
  • Dried red chilli 2
  • Curry leaves
Method:
  • Add mutton and all other ingredients listed under 'to cook mutton' to a pressure cooker
  • Cook on high flame for 1 whistle, then reduce the flame to low and cook for 5 minutes
  • Heat up some coconut oil in a pan
  • Add chopped onion and saute until it turn to golden
  • Then add ginger-garlic crushed, green chilli and curry leaves
  • Saute for 2  minutes
  • Add tomato/tomato paste
  • When it is cooked enough add turmeric powder, chilli powder, coriander powder, pepper powder and garam masala
  • Stir for a few seconds
  • Add cooked mutton with stock
  • Cover and cook for 3 minutes and then add the thick coconut milk
  • Sprinkle some garam masala and pepper powder
  • Turn off the heat when it begin to boil
  • Heat up some coconut oil in a pan
  • Fry sliced shallots, red chillies and curry leaves till the shallots turn to golden
  • Pour it over the curry
  • Cover it for 5 minutes
  • Delicious mutton curry is ready to serve

  • Turmeric powder 1/2 tsp
  • Pepper powder 1/2 tsp
  • Tamarind juice 1 tsp
 Method:
  • Heat up some coconut oil in a pan
  • Add chopped onion and shallots
  • Sauté until golden in color
  • Add crushed ginger and garlic, green chilli and curry leaves
  • Stir and cook for 2 minutes
  • Add chilli flakes, turmeric powder and pepper powder
  • Stir for a few seconds
  • Add tamarind juice and salt as needed
  • Stir well
  • Add cleaned prawns and stir on high flame for 3 minutes
  • Turn off the heat
  • Serve after 2 minutes

ചായക്കടയിലെ ബോണ്ട വളരെ എളുപ്പത്തിൽ വീട്ടിലുണ്ടാക്കാം | Bonda Recipe | Undampori Recipe


Ingredients:
  • Maida 250g
  • Baking soda 1/4 tsp
  • Salt 1/4 tsp
  • Instant yeast 1/4 tsp
  • Cumin seeds 1/4 tsp
  • Sugar 5 tbs (75g)
  • Water 95g (3/4 cup + 1 tbs)
 Method:
  • Mix all ingredients and knead for 2 minutes
  • Allow this to rest for minimum 2 1/2 hours
  • Shape the dough using wet hand
  • Deep fry on low flame until they get light brown color (12-15 minutes)
  • Serve with tea

Ingredients:
  • Boiled eggs 5
  • Onion 2
  • Green chilli 3
  • Garlic 7 cloves
  • Pepper powder
  • Turmeric powder 1/2 tsp
  • Garam masala 1/2 tsp
  • Cumin powder 1/4 tsp
  • Curry leaves
 Method:
  • Add 1 tbs coconut oil in a pan
  • Add some pepper powder, turmeric powder and salt
  • Add the eggs and fry both sides for a few seconds
  • Remove from pan and keep aside
  • Add 2 tbs oil and sauté the chopped onions until golden 
  • Add crushed garlic, green chillies and curry leaves
  • Stir and cook for 2 minutes
  • Add pepper powder, garam masala, cumin powder and turmeric powder
  • Stir for a few seconds
  • Add some water and let it boil
  • Add the fried eggs and cook for 1 minute
  • Quick and easy egg pepper fry is ready to serve

ഒരു സ്പെഷ്യൽ ചിക്കൻ റോസ്റ്റ് റെസിപ്പി | Chicken Roast Recipe


Ingredients:
 To marinate:-
  • Chicken 1 kg
  • Salt 2 tsp
  • Ginger garlic paste 1 tsp
  • Chilli powder 3 tsp
  • Pepper powder 1 tsp
  • Turmeric powder 1/2 tsp
  • Garam masala 1/2 tsp
  • Curd 3 tbs
 For masala:-
  • Onion 4 (350g)
  • Tomato 3 (280g)
  • Ginger 1 piece (20g)
  • Garlic 30 cloves (30g)
  • Green chilli 4 (15g)
  • Curry leaves
  • Coriander leaves
  • Chilli powder 2 tsp
  • Kashmiri chilli powder 2 tsp
  • Coriander powder 1 tbs
  • Turmeric powder 1/2 tsp
  • Pepper powder 1 tsp
  • Garam masala 3/4 tsp
 Method:
  • Marinate the chicken with all the ingredients listed under 'to marinate'
  • Keep this aside for 30 minutes
  • After 30 minutes shallow fry the chicken (each side for 6 minutes on medium high flame)
  • Add the chicken fried oil into a pan
  • Add chopped onion 
  • Sauté until the color become golden
  • Add crushed ginger & garlic, curry leaves and green chilli
  • Stir and cook for 2 minutes
  • Add chopped tomatoes and salt as needed
  • Cook till the tomatoes become very soft
  • Add powdered masala and stir for about 3 minutes
  • To this add fried chicken and hot water to adjust the consistency
  • Cook covered on low flame for 6-7 minutes
  • Finally add some garam masala and fresh coriander leaves
  • Delicious chicken roast is ready to serve!

Ingredients:
 To grind:-
  • Tomato 2 (175g)
  • Coriander stems
  • Cashews 15
  • Ginger 1 inch piece (10g)

  • Kashmiri chilli powder 1.5 tbs
  • Coriander powder 1 tbs
  • Roasted cumin powder 1/4 tsp
 For masala:-
  • Paneer (400g)
  • Onion 3 (300g)
  • Garlic 10 cloves (10g)
  • Green chilli 4
  • Kashmiri chilli powder 1/2 tsp
  • Spicy chilli powder 1 tsp
  • Turmeric powder 1/4 tsp
  • Coriander leaves
  • Kasoori methi 1 tsp
  • Fresh cream 3-4 tbs
  • Garam masala 1/2 tsp
  • Cumin seeds 1/4 tsp
  • Butter 
  • Salt
  • Pinch of salt
 Method:
  • Grind together all the ingredients Listed under 'to grind'
  • Heat up 2 tbs oil and 1 tbs butter in a pan
  • Add cumin seeds followed by chopped onion
  • Stir and cook till the onion become golden
  • Add crushed garlic and green chilli
  • Sauté for 2 minutes
  • Add chilli powder and turmeric powder
  • Stir for 1 minute
  • Add ground paste and salt
  • Stir and cook for 10 minutes
  • Add hot water and adjust the consistency
  • Add a pinch of sugar
  • Add cubed paneer and stir gently
  • Cook on low flame for 3 minutes
  • Finally add 1/2 tbs butter, coriander leaves, kasoori methi, garam masala and fresh cream
  • Combine everything well
  • Serve hot with chapati, nan or porotta

മുട്ട ചിക്കിയത് | Egg Bhurji Recipe


Ingredients:
  • Eggs 4
  • Onion 1 (100g)
  • Tomato 1 (75g)
  • Green chilli 3
  • Pepper powder 1 tsp
  • Garam masala 1/2 tsp

 Method:
  • Crack eggs into a bowl
  • Add salt and beat the eggs
  • Heat up some coconut oil in a pan
  • Add cumin seeds and let them crack
  • Add chopped onion 
  • Stir and cook for 3-4 minutes
  • Add green chilli and stir for 1 minutes
  • Add tomato and salt
  • And stir till the tomato is soft
  • Add beaten egg and stir and cook for a few minutes
  • Add coriander leaves, pepper and garam masala
  • Stir well and serve hot

ഇത്ര രുചിയോടെ സോയാ ചങ്ക്സ് കഴിച്ചിട്ടുണ്ടോ | Soya Chunks Recipe


Ingredients:
 To marinate:-
  • Soya chunks 1.5 cups (100g)
  • Curd 2 tbs
  • Ginger garlic paste 1 tsp
  • Kashmiri chilli powder 2 tsp
  • Spicy chilli powder 1 tsp
  • Coriander powder 1 tsp
  • Turmeric powder 1/2 tsp
  • Pepper powder 1/2 tsp
  • Garam masala 1/2 tsp
  • Cumin powder 1/4 tsp
  • Kasoori methi 1 tsp
  • Salt 3/4 tsp
 For masala:-
  • Onion 2 (200g)
  • Tomato 2 (175g)
  • Garlic 10 cloves (10g)
  • Green chilli 4
  • Kashmiri chilli powder 2 tsp
  • Spicy chilli powder 1 tsp
  • Turmeric powder 1/2 tsp
  • Coriander powder 1 tsp
  • Garam masala 1/4 tsp
  • Kasoori methi 1/2 tsp
  • Coriander leaves
  • Fresh cream 2 tsp
  • Cashew nuts 10-12
 Other ingredients:-
  • Capsicum cubed 1/4 cup
  • Onion cubed 1/4 cup
Method
  • Boil 1 liter water
  • Add salt and 3 crushed garlic cloves
  • Add soya chunks and boil it for 6 minutes
  • After 6 minutes transfer to normal water and allow to cool
  • Once they are cool , squeeze out gently to remove the excess water
  • Prepare a marinade by mixing all the ingredients listed under 'to marinate' 
  • Add the cooked soya chunks and mix well
  • Keep aside for 30 minutes
  • After 30 minutes, heat up 2 tbs of coconut oil
  • Add the marinated soya chunks
  • Stir & cook on high flame for 4 minutes
  • Add cubed capsicum and cubed onion
  • Stir for 2 minutes
  • Turn off the heat and keep aside
