Ingredients
- Fish 350g
- Shallots 10 (50g)
- Green chilli 5 (25g)
- Ginger 20g
- Curry leaves
- Chilli powder 2 tsp
- Coriander powder 1 tsp
- Turmeric powder 1/2 tsp
- Salt
- Raw mango 1 (130g)
- Second extract coconut milk 2 cups
- First extract coconut milk 1/2 cup
- Coconut oil
- Rub together shallots, ginger, green chillies, curry leaves, chilli powder, coriander powder, turmeric powder , 1.5 tbs coconut oil and salt
- Add second extract coconut milk
- Cook for 3-4 minutes
- Add sliced mango pieces followed by fish
- Cook for 5-6 minutes
- Add first extract coconut milk
- Turn off the heat when it start to boil
- Heat some coconut oil in another pan
- Add 4 shallots sliced and 1 sprig of curry leaves
- Fry till the shallots become brown in color
- Add 1 tsp chilli powder and stir for a few seconds
- Pour this over the curry
- Delicious fish curry is ready to serve
