Ingredients:
- Maida 80g (8 tbs)
- Corn flour 20g (2 tbs)
- Baking powder 1/2 tsp
- Cardamom powder 1/2 tsp
- Sugar 80 g (5 tbs)
- Salt 1/4 tsp
- Eggs 5
- Coconut oil 60g (4 tbs)
- Coconut milk 60g (4 tbs)
- Vanilla essence 1/4 tsp
- Vinegar 2 tsp (10ml)
- Mix together maida, corn flour , salt, baking powder and cardamom powder
- Separate egg white and yolk
- To the yolk, add vanilla essence and half portion of sugar
- Beat for 2-3 minutes
- Add coconut oil, coconut milk and flour mix
- Combine well and keep aside
- To the egg white, add vinegar
- Beat well until frothy
- Add the remaining sugar in three batches
- Beat for 5-6 minutes
- Add 1/3 portion of meringue with the wet mixture and fold in gently
- Add this to the remaining meringue and fold on gently
- Pour this to the prepared tin
- Place this in a tray and pour hot water into the tray
- Bake at 150 degree Celsius for 90 minutes
- Take out from the oven
- Remove the cake from the tin and allow this to cool upside down
- Slice when it is completely cool
