Ingredients:
For sponge cake:-
- Eggs 4
- Sugar 80g (5 tbs +2 tsp)
- Maida 80g (8 tbs)
- Cocoa powder 6g (1 tbs)
- Lemon juice / Vinegar 10 ml (2 tsp)
- Pinch of salt
- Milk 40ml (2 tbs + 2 tsp)
- Oil 40ml (2 tbs + 2 tsp)
- Vanilla essence 1/2 tsp
- Butter 50g
- Powdered sugar 100g
- Vanilla essence 1/2 tsp
- Milk chocolate 50g
- Dark chocolate 50g
- Fresh cream 60 ml
- Egg whites 2
- Sugar 75g (5 tbs)
- Pinch of salt
- Lemon juice 1 tsp
Sponge cake
- Mix together maida and cocoa powder; Keep this aside
- Separate white and yolk of eggs
- To the yolk, add salt and lemon juice
- Beat them until frothy
- Now add 40g of sugar in three batches
- Beat well until it reach stiff peak
- To the yolk, add vanilla essence and remaining sugar
- Beat well until thick and creamy
- Now add milk and oil
- Beat well
- Add flour to this mix
- Combine gently and make a smooth batter
- Add 1/3 portion of meringue (beaten egg white) and combine gently
- Combine this with the remaining meringue
- Transfer this to a baking tray lined with baking paper
- Spread the batter evenly
- Bake at 180 degree Celsius for 25 minutes
- Take out from the oven
- Allow the cake to cool completely
- Beat together butter , vanilla and powdered sugar until smooth and creamy
- Chop the chocolate
- Heat the cream
- Pour the hot cream over the chocolate
- Let this sit for 2 minutes
- Then stir with a spatula
- Smooth ganache is ready
- Let it sit until thick
- To the egg whites, add salt and lemon juice
- Beat until frothy
- Add sugar in batches and beat well
- Stop beating when it reach stiff peak
- Pipe this to baking tray lined with baking paper and make cap and stem of mushrooms
- Bake this at 120 degree Celsius for 2 hours
- Take out from oven
- Allow them to cool
- They should be stored in refrigerator
- Apply filling to the cake and roll it
- Cut a small piece of cake
- Place it on the side of big piece
- Apply ganache all over the cake
- Make lines using a fork to look like tree bark
- Decorate with meringue mushrooms and powdered sugar
- Delicious Yule Log Cake is ready to serve
