How To Make Onion Rings At Home



Crispy Onion Rings

 An easy to make tea time snack.

 Ingredients


  •  onion 3 (slice into circles of 1/4" thickness )
  • fresh bread crumbs - 3/4 cup 
  • rice flour - 3 tbs
  • corn four - 1 tbs
  • maida - 1 tbs
  • salt as needed
  • chilly powder - 1 tsp
  • finely chopped garlic - 1/2 tsp 
  • oregano - 1/2 tsp
  • coriander leaves for garnishing
  • oil for deep fry 

 Method

  • mix together rice flour, corn four, maida, sat, chilly powder and oregano
  • add in water as needed to make a thick batter of flowing consistency
  • take bread crumbs in a plate
  • dip each ring in the batter
  • coat the dipped rings with bread crumbs
  • arrange them in a plate
  • heat up oil and keep the flame to medium
  • fry the rings on medium flame until golden
  • drain them onto paper towel and garnish with coriander leaves and oregano
  • serve hot with your favourite dip
 Notes
  • use fresh bread crumbs for better result
  • alternativey you can bake them

Easy No Knead Dinner Rolls Recipe | How To Make Milk Bun


Milk Bun/Dinner Rolls 

 Even beginer will not have trouble in making these wonderful soft milk bun.

 Ingredients:


  • warm milk - 160 ml
  • active dry yeast - 1/2 tsp
  • sugar - 4 tbs
  • all purpose flour/maida - 2 cups [280g]
  • salt - 1 tsp
  • softened butter - 50g
  • egg - 1


 Method:


 step 1 : preparing dough


  • into the  warm milk add in yeast and 2 tbssugar and mix well
  • let it stand until frothy(5-6 minutes)
  • pour this solution into a large mixing bowl
  • add in the egg,2tbs sugar and butter
  • mix together flour and salt and add this into the yeast solution
  • mix well until incorporated and sticky dough forms
  • transfer this into a greased bowl and cover with a plastic wrap/towel

 step 2 : proofing



  • keep the prepared dough in a warm place until double in size (about 2 hours)

 step 3 : shaping



  • punch the air out
  • turn this onto a lightly floured surface
  • divide dough and shape into balls
  • place the shaped balls in a greased baking dish
  • cover it with a plastic wrap/towel

 step 4 : second proofing



  • keep the shaped balls in a warm place until double in size ( about 45 minutes - 1 hour)

 step 5 : baking



  • brush the balls with beaten egg
  • bake them in a preheated oven at 200 degree C for 15 - 20 minutes
  • once they are done remove from the baking dish after 10 minutes
  • allow them to cool completely
  • super soft milk buns are ready to serve

 Notes :



  • yeast need wram and sweet enviornment to get activated
  • if the yeast is not frothy discard it
  • baking time may vary depending on the oven

Super Soft No Knead Whole Wheat Bread Recipe



No Knead Whole Wheat Bread

 Ingredients :


  • whole wheat flour - 1+1/2 cups
  • all purpose flour - 1+1/2 cups
  • salt - 1 tsp
  • olive oil - 1 tbs
  • active dry yeast - 1tsp
  • sugar - 1 tbs
  • warm water - approx.550 ml

 Method


 step 1: activating the yeast


  • in half cup of warm water add 1 tsp active dry yeast and suagr
  • stir well and let it stand for 10 - 15 minutes until become frothy

 step 2 : making dough



  • in a large mixing bowl add in all purpose flour, whole wheat flour and salt
  • mix well and make a well at the centre
  • pour in the yeast mixture , oil and 1+3/4 cup of warm water
  • mix well..you will end up with a mass of sticky dough

 step 2 : proofing

  • keep the dough covered in a warm place until double in size
  • for me it took around 3 hours
  •  stir  well with a wooden spoon to degaas the dough
  • transfer into a greased loaf tin 
  • cover it and keep aside for second proofing
  • the dough will rise within 30 to 45 minutes

 step 3 : baking



  • bake it in a preheated oven at 200 degree C for 35 - 40 minutes
  • once it is done brush with some butter to soften the crust
  • allow it to cool completely before cutting

Thrissur Style Mutta Manga Curry



Mutta Manga Curry

 Ingredients :


  • onion - 1 (sliced)
  • shallots - 2 tbs + 3tbs(for tempering)
  • a small piece of ginger crushed
  • mango (with less sourness) - 1(peel and cut into small pieces)
  • green chilly - 4,5
  • chilly powder - 3/4 tbs
  • coriander powder - 1 tbs
  • turmeric powder - 1/2 tsp
  • curry leaves as needed
  • salt
  • boiled eggs - 4
  • thin coconut milk - 2 cups 
  • thick coconut milk - 1 cup

 Method :



  • in a vessel mix together onion, shallots, ginger, mango pieces, green chilly, curry leaves, chilly powder, coriander powder, turmercic powder and salt
  • add in 2 tbs coconut oil and mix well with hands
  • now add thin cocnut milk
  • cook this mix until the mango pieces are soft, about 4 - 5 minutes (do not overcook)
  • reduce flame and add in thick coconut milk
  • bring to a good boil
  • adjust salt
  • now slowly add in eggs and mix gently
  • turn off the flame
  • heat up some coconut oil in a separate pan and fry some shallots and curry leaves until the shallots are golden
  • pour it over the curry and mix gently
  • yummy egg mango curry is ready to serve.
  • serve with rice
