Vegetable Samosa Recipe | സമൂസ വളരെ എളുപ്പത്തിൽ വീട്ടിൽ ഉണ്ടാക്കാം


Ingredients:
  • Boiled potato 2 (150g)
  • Carrot 1 (120g)
  • Frozen green peas 1/2 cup (100g)
  • Cabbage 1/2 cup (50g)
  • Onion 2
  • Ginger garlic paste 1 tsp
  • Green chilli 2
  • Chilli powder 1/2 tsp
  • Coriander powder 3/4 tsp
  • Garam masala 1/2 tsp
  • Chaat masala 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Coriander leaves 
  • Samosa sheet
  • Refined flour 2 tbs
  • Water 50ml
 Method
  • Heat up oil in a pan
  • Add onion and stir and cook for 4 minutes
  • Add ginger garlic paste and stir & cook for 1 minute
  • Add carrot, cabbage and green peas
  • Stir well and sprinkle some water
  • Cover and cook for 5 minutes
  • Add boiled potato and coriander leaves
  • Add salt as needed
  • Mix well
  • Turn off the heat and allow the filling to cool down completely.
  • Mix refined flour and water and make a paste.
  • Fold and shape the samosa sheet
  • Fill the prepared vegetable filling
  • Use the flour paste to seal the ends
  • Deep fry in moderately hot oil till golden color
  • Remove from oil 
  • Serve the delicious crispy samosa with tea

Vegetable Biryani Recipe വെജിറ്റബിള് ബിരിയാണി ഉണ്ടാക്കുന്ന വിധം


Ingredients :
 For masala:-
  • Carrot 2 (150g)
  • Potato 2 (150g)
  • Beans 15 (150g)
  • Green piece 1/4 cup (50g)
  • Onion 3 large (500g)
  • Ginger 2" piece (15g)
  • Garlic 30g
  • Green chilli 4
  • Chilli powder 3/4 tsp
  • Garam masala 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Curd 1/2 cup
  • Fresh coriander leaves
  • Fresh mint leaves
 For rice:-
  • Jeerakasala rice 500g
  • Whole spices (cardamom 4, cinnamon 2 inch stick, annie seed 1, mace 1, bay leaf 1)
 Method
  • Rinse and soak the rice for 30 minutes
  • Slice onion and deep fry until golden. Then remove from oil and keep aside
  • Cut vegetables into large pieces
  • Heat up 1/4 cup oil (in which onion was fried) in a heavy bottomed vessel
  • Add the veggies and stir on high flame for 5 minutes
  • Add the powdered spices, crushed ginger-garlic- green chilli, coriander leaves, mint leaves and3/4 portion of fried onion.
  • Stir and cook for 1 minute
  • Add beaten curd and stir till the oil separates.
  • Add 1/2 cup of hot water 
  • Cover and cook for 5 minutes.
  • Turn off the gas and keep aside
  • After 30 minutes of soaking, add the rice to boiling water in which whole spices and salt were added.
  • Boil the rice for 5 minutes (until 75% is cooked)
  • Mix1/2 tsp of turmeric powder in 1/4 cup of milk and keep aside
  • Layer 1/2 portion of rice over the vegetable masala 
  • Add some garam masala, fried onion, coriander leaves , mint leaves and 2 tbs of milk+ turmeric mixture.
  • Layer the remaining rice 
  • Add 3 tbs of ghee
  • Repeat layering with garam masala, fried onion, milk - turmeric mixture, coriander leaves and mint leaves
  • Add 1/2 cup of rice cooked water
  • Cover the pot with an aluminum foil
  • Cover with a tight lid
  • Cook on low flame for 20 minutes
  • Open the pot after 10 minutes of rest'
  • Serve this delicious biryani with raita and pickle.

ഇന്ന് ഞാൻ ഉണ്ടാക്കിയ സ്പെഷ്യൽ നാലുമണി പലഹാരം ഇതാണ് | Spring Roll Recipe in Malayalam


Ingredients:
 For the sheet:-
  • Maida 2 cups (280g)
  • Water 1/2 cup (115ml)
  • Salt 1/2 tsp
 For the filling:-
  • Carrot 2 large (150g)
  • Piece of cabbage (150g)
  • Cooked chicken 150g
  • Ginger 2 inch piece (10g)
  • Garlic 5 big cloves (15g)
  • Green chili 2 (10g)
  • Onion 1/2 (50g)
  • Spring onion 2 tbs
  • Soya sauce 1 tbs
  • Tomato sauce 1 tbs
  • Vinegar 1 tsp
  • Chili powder 3/4 tsp
 Method
 To make sheets:
  • Make a dough by mixing flour, salt and water
  • Knead for 2 minutes
  • Cover and set aside for minimum 30 minutes
  • After 30 minutes divide the dough into 10 equal parts
  • Shape them into smooth balls
  • Take one ball and roll out into small disc of 4 inch diameter
  • Similarly make two more dough discs
  • Now brush some oil over two discs 
  • Dust some flour over them
  • Now stack three discs
  • Roll out this into a big round (9 inch )
  • Repeat this process with rest of the dough balls
  • To cook them, heat up a pan on medium flame
  • Place a sheet and let this cook for 20 seconds on one side
  • Flip and again cook for 20 seconds
  • Keep flipping until the sheets have cooked partially
  • Take out from the pan
  • Allow this to rest for 3minutes
  • Separate and peel the sheets
  • Keep them covered until use
 To prepare filling:
  • In a small bowl combine soya sauce, tomato sauce ,vinegar and chili powder; Keep this aside.
  • To make filling, heat up 2 tbs of oil and add ginger and garlic
  • Stir and cook for 1 - 2 minutes
  • Add green chilli and carrot
  • Stir and cook for 2 minutes
  • Add cabbage and cook for 1 minutes
  • Add chicken and mix well
  • Add salt as needed followed by prepared sauce mix 
  • Combine well and turn off the heat 
  • Add spring onion and mix well
  • Let this filling to cool down completely
 For sealing:
  • Add some maida and water together to make a thick paste and keep this aside
 Assembling:
  • Place 2 tbs of filling and roll tightly
  • Fold the ends and apply the dough paste at the bottom
  • Again roll and seal the end
 Frying
  • Deep fry on low-medium flame until they turn into golden
  • Remove from oil
  • Serve warm with tomato ketch up

ചായയ്‌ക്കൊപ്പം കഴിക്കാൻ ഒരു സൂപ്പർ പലഹാരം | Chicken Parcel Recipe



Ingredients:
 For filling:-
  • Chicken 250g
  • Chilli powder 1/2 tsp
  • Salt 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Lemon juice 2 tsp
  • Onion 1 (100g)
  • Ginger 1 small piece (7g)
  • Garlic 7-8 cloves (10g)
  • Green chilli 4
  • Pepper powder 1/2 tsp
  • Garam masala 1/2 tsp
  • Coriander leaves 
  • Tomato sauce 1 tbs
  • Cheese 1/2 cup or as needed (mozzarella & cheddar blend)
For bread:-
  • Maida 2 cups (280g)
  • Sugar 2 tbs (30g)
  • Yeast 1 tsp
  • Salt 1/2 tsp
  • Ghee 2 tbs
  • Water 160ml
Preparation
  • Marinate chicken with salt, chilli powder, 1/4 tsp turmeric powder and lemon juice for 20 minutes
  • Mix together all the ingredients for bread and knead for 5 minutes
  • Cover the dough and rest for 45 minutes - 1 hour until double in size.
  • Heat up oil in a pan and add crushed ginger, garlic and green chilli
  • Stir for 2 minutes
  • Add onion and stir for 5 minutes
  • Add pepper, turmeric powder and garam masala
  • Stir for a few seconds and add marinated chicken
  • Cook on high flame for 3 minutes
  • Then lower the flame 
  • Cover and cook for 5 minutes
  • Add coriander leaves and tomato sauce
  • Turn off the gas and allow this to cool completely.
  • After 1 hour of rest, punch out the air from the dough
  • Roll the dough to 11 inch circle 
  • Cut into 8 pieces
  • Place the filling as needed 
  • Add some cheese
  • Fold the ends and close it
  • Arrange in a baking sheet
  • Cover and rest for 30 minutes
  • Give egg wash and bake in a preheated oven at 190 degree Celsius for 20-25 minutes
  • Take out from oven
  • Serve warm.

കാരറ്റ് കൊണ്ട് ഇത് പോലെ ഉണ്ടാക്കി നോക്കൂ


Ingredients:
  • Carrot 2 medium (150g)
  • Milk 4.5 cups
  • Corn flour 2 tbs
  • Sugar 7 tbs (105g)
  • Vanilla essence 1 tsp
  • Cardamom powder 1/4 tsp
  • Basil seeds 1 tbs
  • Cashew 2 tbs
 Method
  • Add the grated carrot into a pan
  • Cook this along with 1/2 cup of milk for about 5 minutes
  • Add the sugar and cook till the water content reduces
  • Add 3.5 cups of milk and bring to a boil
  • Add cardamom powder and vanilla essence
  • Meanwhile combine corn flour with 1/2 cup of milk and mix without any lumps
  • When the carrot - milk mix begin to boil add the corn flour slurry little by little and stir well
  • Turn off the gas when it begin to boil
  • To this add soaked basil seeds and cashews
  • Refrigerate for 1 hour
  • Delicious carrot drink is ready to serve.
