Ingredients:
- Boiled eggs 5
- Onion 1(100g)
- Ginger garlic paste 2 tsp
- Green chilli 3(15g)
- Tomato paste 1/2 tbs
- Pepper powder 1/2 tsp
- Garam masala 1/8 tsp
- Turmeric powder 1/4 tsp
- Grated coconut 1/2 cup
- Fennel seeds 1 tsp
- Cashews 5
- Coriander leaves
- Whole spices:- cardamom 4, cinnamon 1", cloves 2, star anise a small piece
- Add some coconut oil to a pan
- Add the whole spices and splutter them
- Add sliced onion and green chilli
- Saute until the onion turns golden
- Meanwhile grind together coconut, fennel seeds and cashews to a fine paste
- When the onion turns golden, add ginger garlic paste
- Saute for 1 minutes
- Add pepper powder and turmeric powder
- Stir for a few seconds
- Add tomato paste and some some hot water
- Cook for 2 minutes
- Add prepared coconut paste and add water to adjust thickness of the gravy
- Add salt
- Add garam masala and coriander leaves
- Finally add eggs
- Combine with gravy gently
- Turn off the flame
- Allow this to rest for 10 minutes
- Delicious is egg kurma is ready
- This curry is an excellent cobination for appam, pathiri, nolappam , chapati etc.
