Kerala Spicy Mixture
Ingredients :
- besan flour - 2 cups
- rice flour - 1/2 cup
- roasted peanut - 3/4 cup
- chana dal - 3/4 cup
- curry leaves - 5 springs or more
- crushed garlic - 1 tsp (optional)
- chilly powder - 1 tbs or as needed
- asafoetida/hing - 1/2 tsp
- salt as needed
- oil
Method
step 1 : preparing dough & batter
- in a bowl mix besan, rice flour, asafoetida, chilly powder and salt
- remove 3/4 cup of flour mixture into another bowl for making boondi
- to the remaining flour mixture add in 2 tbs oil and enough water to make a tight dough (like chapati dough). This is to make sev
- for making boondi add in enough water and 1/4 tsp baking soda and make a batter like dosa batter
step 2 : frying
- heat up oil for deep frying
- once the oil is hot bring flame to medium
- place the small holed disc into the sevanazhi/idiyappam press
- fill it with the dough
- press it into the oil
- fry one side for 30 sec and turn it
- fry the other side also for 30 sec. do not over fry the sev
- then drain and keep aside
- further pour the boondi batter into the oil through a spoon with holes fry them until crisp
- when they are ready drain and keep aside
- similarly fry peanuts,chana dal, curry leaves and garlic
- be careful not to over fry them
step 3 : assembling
- crush the sev with your palms
- combine all fried items into a big bowl
- add in a few salt, chilly powder and asafoetida
- mix everything well
- allow them to cool completely
- tasty spicy mixture is ready
- store them in an air tight container and have the spicy mixture along with tea
