How to make Cotton Soft Sponge Cake Recipe | Whole Wheat Sponge cake



Cotton Soft Sponge Cake 

 Ingredients :


  • wheat cake flour *- 1/2 cup + 3 tbs
  • eggs - 4
  • milk - 4 tbs
  • sugar - 3 tbs + 1/4 cup
  • salt - 1/4 tsp
  • veg oil - 3 tbs
  • vanilla essence - 2 tsp
  • lemon juice - 2 tsp

 Method


  step 1 : preparation of cake batter


  • add in salt into the wheat cake flour and mix well
  • into a mixing bowl, add in 4 egg yolks, 3 tbs sugar, 4 tbs milk, 3 tbs oil and vanilla essence
  • combine very well 
  • fold in the flour little by little ad make a smooth batter
  • into a separate clean, dry, wide bowl add in 4 egg whites
  • add in 2 tsp lemon juice and beat on low speed until foamy
  • add in 1/4 cup of sugar little by little and beat until thickens to stiff peak
  • add this into the egg yolk mixture in batches and combine well
  • do not over mix the batter
  • pour this into the cake tin ( i used 6" pan ) lined with butter paper
  • tap to remove any big air bubbles

  step : baking



  • place the cake tin in a big tray
  • pour hot water into the tray
  • bake at 150 degree C for 1 hour and 20 minutes or a tooth pick inserted came out clean
  • remove it from the cake tin and let it cool completely

  *notes :



  • to make wheat cake flour :- take 1 cup  of wheat flour , remove 2 tbs flour from it, add in 2 tbs corn flour, sift 4-5 times...wheat cake flour is ready now.
  • hot water bath is given to make the cake soft and moist
  • i used wheat flour in order to make it more healthy..alternatively you can use all purpose flour/maida/cake flour for this recipe

  1. Hello, there! I just made your cake and wow! It was very light and fluffy. I just substituted the milk with freshly squeezed orange juice to make it dairy free. Only thing is in the video it looks like a bigger cake! Next time to fill an 8" pan I probably will double or triple the recipe. 😉

  3. Looks very delicious and spongy. Got all the ingredients for baking this cake. Adding little baking powder, will it spoil the texture? Please clarify.

  4. I made this cake...came out very bad as no baking powder or baking soda mentioned.my cake was flat like a chappati dough.wasted all my ingredients n that too in this lockdown period.very disappointed.

  5. What is wheat cake flour *- 1/2 cup + 3 tbs? It doesn't make any sense. List whole wheat flour and corn flour seperately in grams. List all other ingridients in grams as well.
