Carrot Dates Cake
Ingredients :
- wheat flour - 1 cup (250 ml cup)
- sugar powdered - 1cup
- baking soda - 3/4 tsp
- salt - 1/2 tsp
- eggs - 2
- veg oil - 3/4 cup
- vanilla essence - 1/2 tsp
- grated carrot - 1 cup
- chopped dates - 1 cup
- chopped cashew - 1/2 cup
for caramel
- sugar - 1/2 cup
Method
step 1 : preparation of caramel
- add 1/2 cup of sugar into a heavy bottomed pan
- heat the sugar on medium flame
- no need to stir it, instead swirl the pan in between to ensure uniform caramelising
- let the caramel get a really dark shade, to the bitter side
- when it is done add in 1/4 cup of hot water to dissolve the caramel
- do not use cold water as it will take long time to dissolve the caramel
- remove from fire and let it cool completely
step 2 : preparation of batter
- prepare the cake tin ( grease with butter, then sprinkle some flour, and remove the excess flour) ; alternatively you can use butter paper
- add baking soda and salt into the flour and sift 2 -3 times
- combine eggs and sugar in a mixing bowl
- stir well until most of the sugar dissolve
- add in the oil and and beat well until creamy
- now add in the cold caramel and vanilla essence and combine well
- add in the flour little by little and fold in gently
- do not mix the batter too much after adding the flour
- add 1 tbs flour into the carrot, dates and cashew ( it will prevent them from sinking into the bottom of the pan). Add this into the cake batter and combine well
- pour the batter into the prepared tin and tap 2-3 times
step 3 : baking
- bake in a preheated oven for 35- 45 minutes at 180 degree C or until a toothpick inserted came out clean
- alternatively you can bake it in cooker
- once it is done, let it cool down completely and keep in refrigerator for a few hours (it will be easy to cut when it is cool)
- then cut it and serve
Notes :
- I used wheat flour in this recipe in order to make it more healthy..You can make it with maida/all purpose flour as well..
Tried out today.. came out really really well!! That too tried with whole wheat flour.. I always wanna keep maida away but cakes are my weakness.. this is a wonderful recipe.. just loved it.. Thank you soo much..
