Ingredients:
- Carrot 2 medium
- Potato 1 big
- Ash gourd 3/4 cup
- Yard long beans 1 1/2 cup
- Raw banana 1 big
- Drumstick 4 medium
- Red chilli powder 1 tsp
- Turmeric powder 1/2 tsp
- Grated coconut 1 1/2 cup
- Cumin 3/4 tsp
- Birds eye chilli 20
- Garlic 4 cloves (small)
- Shallot 3
- Curd 1/2 cup
- Curry leaves
- Cut the veggies lengthwise
- Add them to a heavy bottomed vessel
- Cook them along with salt, chilli powder, curry leaves, turmeric powder and a little water
- Meanwhile grind together coconut, cumin, garlic, shallots, turmeric, birds eye chilli and salt to a coarse paste
- Add this to the cooked veggies
- Mix well and cook for 2 minutes
- Add curd, coconut oil and fresh curry leaves
- Mix well and turn off the flame after 1 minute
