Ingredients:
- Roasted rice flour 2 cups (400g)
- Sugar 3 tbs (45g)
- Salt 3/4 tsp
- Instant yeast 1 tsp
- Milk powder 3 tbs (30g)
- Take 3 tbs rice flour to a heavy bottomed vessel
- Add 1 1/2 cups of water to this
- Stir and cook this until thickened
- To this add sugar , salt and 2 cups of water
- Check the temperature of the mix
- If the mix is warm enough add yeast and rice flour
- Mix well
- Add milk powder
- Add 1 cup of water and mix well
- Transfer this to a mixer jar and grind for a few seconds
- Transfer to a big vessel
- Cover and set aside for fermentation (1 1/2 - 2 hours)
- When batter is ready, pour enough batter to appachatti and cook for 2 minutes
- When the edges become light golden color, remove from pan
- Serve appam with favorite curry
