Ingredients:
- Chicken 1kg
- Onion 3 (300g)
- Tomato 2 (200g)
- Ginger garlic paste 2 tbs
- Green chilli 10
- Curry leaves 1 sprig
- Chilli powder 1 tbs
- Pepper 1 1/2 tsp
- Garam masala 1 1/2 tsp
- Coriander powder 1 tsp
- Turmeric powder 1 tsp
- Kasoori methi 1 tsp
- Coriander leaves
- Curd 3 tbs
- Salt
- Marinate chicken with salt, 1 tbs ginger garlic paste, chilli powder, 1 tsp pepper, 1 tsp garam masala,turmeric powder and curd. Keep this aside for minimum 30 minutes.
- After that fry the chicken until 75% is cooked
- Filter the chicken fried oil in a heavy bottomed pan
- Add thinly sliced onion and stir and cook until the color changes to golden
- Add 1 tbs ginger garlic paste, crushed green chilli and curry leaves
- Stir for 2-3 minutes
- Add thinly sliced tomatoes and salt as needed for the masala
- Cook until tomatoes turn soft
- Now add pepper , garam masala , turmeric powder and coriander powder
- Stir for 2 minutes
- Add 1/4 cup of water and cook covered on low flame until oil begin to separate
- Add the fried chicken and stir well
- Cook on low flame for 10 minutes or the chicken pieces are cooked perfectly and the oil appears on the sides of the pan
- Finally add some coriander leaves, garam masala and kasoori methi
- Serve this delicious chicken roast with appam, chapati, parotta or ghee rice.
