Ingredients:
For sheet :-
- Maida 250g
- Butter 100g
- Cold water 115 ml
- Sugar 1 tsp (5g)
- Salt 1/4 tsp (3g)
- Ghee 1 tbs (15g)
- Boiled eggs
- Onion 2
- Green chilli 3
- Curry leaves 1 sprig
- Garlic 5 cloves
- Ginger 1" piece
- Turmeric powder 1/2 tsp
- Garam masala 3/4 tsp
- Pepper 1 tsp
- Salt
- Cut butter into 4 equal pieces and make each butter to 3" square pieces; Keep them in freezer.
- Make dough by combining together flour, water, salt, sugar and ghee
- Keep them in refrigerator for 30 minutes
- After 30 minutes of rest, divide the dough into 4 equal pieces
- Shape them into balls
- Roll each ball into a square into a 5" squares
- Place cold butter blocks on it diagonally and cover with dough
- Roll them into a rectangle of size 9"x4.5"
- Fold it (refer video) and keep in freezer for 20 minutes or till the butter is cold and firm enough to roll again
- Repeat rolling and folding two more times
- Do this for all four portions
- Finally your puffs pastry sheets are ready; You can use it for making puffs with your favorite filling
- Heat up oil in a pan
- Add sliced onion, green chilli and curry leaves
- Once it turn into golden, add crushed ginger and garlic and stir for 2 minutes
- At this stage add turmeric powder, pepper powder and garam masala
- Add salt as needed
- Turn off the flame and allow this to cool
- Once it is done, take out prepared puffs pastry sheets from refrigerator
- Roll them to a rectangle of 8"x4"
- Place filling and sliced egg
- Fold it
- Give egg wash
- Bake at 250 degree Celsius for 10 minutes and then at 200 degree Celsius for 14 minutes
