Ingredients:
- Pumpkin puree 300g
- Eggs 2
- Oil 120g
- Sugar 150g
- Curd 60g
- Wheat flour 250g
- Cashews 20g
- Pumpkin seeds (optional)
- Flax seeds powder 1 tbs (optional)
- Vanilla essence 1/4 tsp
- Cinnamon powder 1/2 tsp
- Baking powder 1 tsp (4g)
- Baking soda 1/2 tsp (2g)
- Salt 1/4 tsp
- Mix all the ingredients together
- Transfer to a baking dish
- Bake at 170 degree Celsius for 60 minutes or a toothpick inserted at the centre of the cake comes out clean
- Once done, take out from the oven
- Remove from the pan
- Allow to cool completely
- Slice and enjoy
