ചില്ലി മഷ്റൂം ഉണ്ടാക്കുന്ന വിധം | Chilli Mushroom Recipe


Ingredients:
  • Mushroom 200g
  • onion 1/2 cup
  • Capsicum 1 cup
  • Green chilli 3
  • Garlic 1 tbs
  • Ginger 1/2 tbs
  • Spring onion
  • Coriander leaves
  • Soya sauce 1 tbs
  • Red chilli sauce 1 tbs
  • Tomato sauce 1 tbs
  • Vinegar 1 tsp
  • Sugar 1 tsp
  • Salt & pepper as needed
 Method:
  • Heat up 2 tbs of oil in a pan
  • Add chopped garlic, ginger and white part of spring onion
  • Stir for 30 seconds
  • Add mushrooms and green chilli
  • Stir for 3 minutes
  • Add cubed capsicum and onion
  • Stir for 2-3 minutes
  • Add salt and pepper as needed
  • Add soya sauce, red chilli sauce, tomato sauce, vinegar and sugar
  • Add 2 tbs of water
  • Stir for 1 minute
  • Finally add spring onion and coriander leaves
  • Serve hot

കള്ളപ്പം ഉണ്ടാക്കുന്ന വിധം | Kallappam Recipe


Ingredients:
  • Rice flour 2 cups
  • Grated coconut 2 cups
  • Sugar 3 tbs
  • Salt 3/4 tsp
  • Instant yeast 1 tsp
  • Shallots 3
  • Cumin 1/2 tsp
Method:
  • Take 3 tbs of rice flour in a vessel
  • Add 1 1/2 cups of water 
  • Stir and cook till it is thick
  • Add sugar and salt to this and mix well: Allow this to cool.
  • Grind together coconut, shallots, cumin and yeast to a smooth paste
  • Add this paste to the prepared roux
  • Add 3/4 cup of water
  • Add rice flour to this mix
  • Stir and combine everything well
  • Grind this again to make it smooth; Batter should not to be too thick or too thin.
  • Pour the batter to a big vessel
  • Cover and keep in a warm place for 3-4 hours
  •  Once it is fermented, heat a tawa
  • Pour one ladle full of batter and spread a little (do not make it too thin)
  • Once bubbles appear on top cover and cook till it is done
  • The soft and fluffy kallappam is ready
  • Serve with your favorite curry.

നെയ്യപ്പം പെർഫെക്റ്റായി എങ്ങനെ ഉണ്ടാക്കാം | Neyyappam Recipe


Ingredients:
  • Raw rice 1 1/2 cups (380g)
  • Jaggery 250g
  • Baking soda 3 pinches
  • Salt 1/4 tsp
  • Cumin 1/2 tsp
  • Sesame seeds 1 tsp
  • Cardamom 6 pods
  • Ghee 1 tbs
  • Wheat flour 1/2 cup (60g)
 Method:
  • Soak the rice for minimum 4 hours
  • Grind rice to smooth paste along with salt and cardamom seeds
  • Transfer this to a large bowl
  • Melt the jaggery along with 1/4 cup of water
  • Turn off the flame when the syrup is thick
  • Filter the syrup directly into the rice paste
  • Simultaneously stir well
  • Add wheat flour and make a thick batter of flowing consistency
  • Add cumin, sesame seeds, baking soda and ghee
  • Mix well
  • Heat up oil/ghee in a deep kadai
  • Pour a ladleful of batter to the hot oil
  • Deep fry until it reaches a light brown colour
  • Remove from oil
  • Repeat the same with remaining batter
  • Serve the neyyappam as a tea time snack

ചിക്കൻ ബൺ ഉണ്ടാക്കുന്ന വിധം | Chicken Bun Recipe


Ingredients:
 For the dough:
  • Maida 300g
  • Water 160ml
  • Instant yeast 1 tsp
  • Sugar 1 tbs (15g)
  • Butter 2 tbs (20g)
  • Milk Powder 1 tbs (10g)
  • Salt 3/4 tsp
 For filling:
  • Chicken 300g
  • Salt
  • Turmeric powder 1/2 tsp
  • Garam masala 1/2 tsp
  • Pepper 1/2 tsp
  • Curd 1 tbs
  • Chilli powder 3/4 tsp
  • Coriander powder 1 tsp
  • Giger garlic paste 1 tsp
  • Coriander leaves
  • Green chilli 3
  • Onion 1
  • Cabbage a small piece chopped
  • Carrot 1 small
  • Kasoori methi 1/2 tsp
Method:
 Filling:-
  • Marinate chicken with salt, turmeric powder, ginger garlic paste, pepper powder and curd
  • Keep aside for 20 minutes
  • Now, heat up some oil in a pan
  • Add sliced onion and green chilli
  • Stir and cook until the onion turns soft
  • Add turmeric powder, chilli powder, coriander powder and garam masala
  • Stir for a few seconds
  • Add marinated chicken and stir on high flame for 5 minutes
  • Add 2 tbs water 
  • Cover and cook for 2 minutes
  • Now add cabbage and carrot 
  • Stir for 2 minutes
  • Finally add coriander leaves and kasoori methi
  • Turn off the flame
  • Set aside to cool completely
Bread dough:-
  • Combine all the ingredients for the dough
  • Knead for 3 minutes
  • Keep aside for 1 1/2 hours
  • Again knead lightly
  • Divide into 10 equal pieces
  • Shape each pieces into balls
  • Roll them into a circle
  • Place filling as needed; You can add some cheese if you like.
  • Close the edges
  • Arrange in a baking tray
  • Keep aside for 45 minutes
  • Now give egg wash
  • Sprinkle some sesame seeds on top
  • Bake at 190 degree Celsius for 22 minutes
  • Take out from oven
  • Serve warm with tea
