നല്ല സോഫ്റ്റ് പാലപ്പം (വെള്ളയപ്പം) എങ്ങനെ ഉണ്ടാക്കാം | Palappam Recipe


Ingredients:
  • Raw rice 2 cups (460g)
  • Coconut milk (medium thickness) 1.5 cups (370ml)
  • Sugar 3 tbs (45g)
  • Salt 1 tsp (6g)
  • Instant yeast 1/2 tsp (2g)
 Method
  • Wash and soak the rice for minimum 2 hours
  • Then drain the rice
  • Grind it along with coconut milk to a very smooth paste
  • Pour this into a large vessel
  • Now take 4 tbs (86g) of rice paste to a saucepan
  • Add 1.5 cups (370ml) water and mix well
  • Cook this on med-high heat, stirring continuously till it become thick
  • Allow this roux to cool down to room temperature
  • When it is cool transfer to a grinder jar
  • Grind this to a smooth paste along with sugar, yeast and salt
  • Add this to the previously ground rice paste
  • Mix everything very well
  • You may need to add 1 tbs of extra water or coconut milk to adjust the consistency
  • Cover the vessel and leave it in a warm place for fermentation
  • For me it took 3.5 hours to get the batter ready
  • Stir gently
  • Pour a ladleful of batter to a hot appachatti
  • Swirl the pan 
  • Cover the pan when holes appear on top
  • Cook on medium heat for 1 minute
  • Then remove the appam to a plate and then to a casserole
  • Repeat this process till the bater is finished
  • Serve the delicious soft appam with your favorite curry.

പ്ലം കേക്ക് ഉണ്ടാക്കുന്ന വിധം | Plum Cake Recipe


Ingredients:
 Dry ingredients:-
  • Maida 1.5 cups (225g)
  • Baking powder 3/4 tsp (3g)
  • Salt 1/2 tsp
  • Cloves 1/4 tsp
  • Cinnamon powder 1/4 tsp
  • Dry ginger powder 1/4 tsp
  • Cardamom powder 1/4 tsp
  • Nutmeg powder 1/4 tsp
 Dry fruits & nuts
  • Black raisins 100g
  • Golden raisins 100g
  • Tutti frutti 100g
  • Dates 4-5
  • Cashews 25g
  • Almonds 25g
 Wet ingredients:-
  • Butter 3/4 cup (170g)
  • Brown sugar 1/2 cup (100g)
  • Eggs 3
  • Caramel syrup 1/3 cup
  • Orange marmalade 1/3 cup
  • Vanilla essence 1/2 tsp
  • Rum essence a few drops
  • Plum essence a few drops
  • Pineapple essence 1/4 tsp
  • Orange zest 1 tbs
 For caramel syrup:-
  • Sugar 1/2 cup (100g)
  • Water 2 tsp 
  • Hot water 1/4 cup (60ml)
Method
  • To prepare caramel syrup, heat up sugar and 2 tsp water till become light brown in colour
  • Add 1/4 cup of hot water little by little
  • Boil for 1 minute and turn off the flame
  • Let the caramel to cool down completely
  • Mix together maida, baking powder, salt and spice powder and keep aside
  • Mix together dry fruits and nuts and keep aside
  • Beat sugar and butter till become creamy and fluffy
  • Add the eggs one at a time and beat well
  • Now add the cool caramel, orange marmalade, essence of vanilla, rum, pineapple, and plum
  • Mix well
  • Add 1/3 portion of flour mix and 1/3 portion of fruit mix
  • Fold in gently
  • Again add next 1/3 portion of flour mix and fruit mix
  • Fold in gently
  • Finally add the remaining flour and fruit mix
  • Fold in gently
  • Transfer this batter to an 8 inch pan lined with baking paper
  • Level the top and place some cashews on top
  • Bake at 160 degree Celsius for 1hour and 30 minutes or till the internal temperature become 95 degree Celsius
  • Take out from the oven
  • Allow the cake to cool down completely
  • The flavor and taste of the cake increase as it sits
  • You can cut and enjoy the cake 2 or 3 days after baking the cake.

മുട്ടയില്ലാതെ സോഫ്റ്റ് ടൂട്ടി ഫ്രൂട്ടി കേക്ക് | Tutti Frutti Cake Recipe


Ingredients:
  • Maida 1.5 cups (225g)
  • Baking powder 1 tsp (4g)
  • Baking soda 1/2 tsp
  • Salt 1/4 tsp
  • Cinnamon powder 1/2 tsp
  • Curd 1 cup (250ml)
  • 1/4 cup (160g)
  • Oil 1/2 cup (120ml)
  • Tutti frutti 50g
  • Cherry 4-5
 Method
  • Sift together maida, baking powder, baking soda, salt and cinnamon powder; Keep this aside
  • Beat together curd, sugar and oil until combined well
  • Add half portion of the flour mix and dry fruit mix
  • Fold in gently
  • Add the remaining flour and fruit mix
  • Mix well and the cake batter is ready now
  • Transfer this to a baking tin lined with baking paper
  • Bake at 180 degree Celsius for about 40- 45 minutes or until the internal temperature reaches 95 degree Celsius
  • Take it out from the oven
  • Allow this to cool down completely
  • Slice and enjoy!

ഓറഞ്ച് കപ്പ് കേക്ക് വളരെ എളുപ്പത്തിൽ വീട്ടിൽ ഉണ്ടാക്കാം | Orange Cupcake Recipe


Ingredients:
  • Maida 1.5 cups (loosely packed) (180g)
  • Corn flour 2 tbs (20g)
  • Baking powder 1 tsp(4g)
  • Baking soda 1/4 tsp
  • Salt 1/4 tsp
  • Butter 100g (1/2 cup)
  • Sugar 13 tbs (195g)
  • Eggs 2
  • Fresh orange juice 1/4 cup (60ml)
  • Curd 5 tbs (100g)
  • Vanilla essence 1/2 tsp
  • Orange zest 1 tbs
 Method
  • Sift together maida, corn flour, baking powder, baking soda and salt; Keep this aside
  • Mix orange juice and curd and keep aside
  • Add sugar to a bowl
  • Mix this with orange zest
  • Now add butter and beat for 4-5 minutes until creamy and fluffy
  • Add eggs one at a time and beat well
  • Now add half portion off the flour mix and fold in gently
  • Add orange juice + curd 
  • Add the remaining flour and fold in gently
  • Pour this into the cupcake molds until 3/4 portion is filled
  • Bake at 180 degree Celsius for 20-22 minutes
  • Take out from the oven
  • Soft and delicious orange cupcakes are ready to be served

ഇനി സവാള വഴറ്റി സമയം കളയണ്ട.കുറച്ച് എണ്ണയിൽ കൂടുതൽ രുചിയിൽ ഒരു കിടിലൻ ചിക്കൻ കറി | Easy Chicken Curry Recipe


Ingredients:
  • Chicken 650g
  • Ginger 1 small piece (8g)
  • Garlic 10 cloves (10g)
  • Green chilly 3
  • Chilly powder 1 tsp
  • Coriander powder 2 tbs
  • Turmeric powder 1/2 tsp
  • Pepper powder 1/2 tsp
  • Garam masala 2tsp
  • Vinegar 1/2 tsp
  • Coconut oil 1 tbs
  • Onion 2 medium 
  • Curry leaves 3 sprigs
  • Thin coconut milk 1cup
  • Thick coconut milk 1/2 cup
  • Salt 1.5 tsp
 Method
  • Marinate the chicken with all the ingredients, except coconut milk for 30 minutes
  • Then add the thin coconut milk and cook the chicken on medium flame until tender (20-25 minutes)
  • Finally add the thick coconut milk 
  • Turn off the heat when just begin to boil
  • Serve with appam/chapati/pathiri/noolappam/bread etc.

വെറും മൂന്നു ചേരുവകൾ മതി ഈ അടിപൊളി പുഡ്ഡിംഗ് ഉണ്ടാക്കാൻ ! Caramel Pudding Recipe | Flan Recipe


 Ingredients:
  • Milk 2 cups (500ml)
  • Sugar for caramel 6 tbs (90g)
  • Sugar for custard 1/2 cup (120g)
  • Eggs 3
  • Pinch of salt
  • Vanilla essence 1/2 tsp
 Method:
  • To make caramel, add the sugar along with 2 tbs of water (30ml) to a saucepan
  • Heat the sugar till it reaches a light brown colour
  • Add 2 tbs water and turn off the flame when the caramel dissolve
  • Pour this to 6 ramekin bowls and swirl to spread the caramel evenly
  • Keep them aside
  • Next to make custard, pour the milk to a sauce pan
  • Add sugar to it.
  • Heat the milk till it become hot (no need to boil)
  • Crack 4 eggs to a bowl
  • Add salt and vanilla to this
  • Now add the hot milk slowly and combine well
  • Strain this mixture and pour this to the prepared ramekins
  • Now you can either bake them or steam them
  • To bake the pudding, place the bowls in a tray 
  • Pour hot water into the tray up to quarter portion of the tray
  • Bake in a preheated oven at 170 degree Celsius for 40-45 minutes (or till the internal temperature reaches 80 degree Celsius)
  • To steam the pudding, cover the bowls with aluminum foil
  • Steam for 8 minutes (First 2 minutes on medium flame and then on low flame for 6 minutes;  Turn of the heat and open the steamer after 2 minutes)
  • Once done, remove from oven/steamer
  • Let them cool and then refrigerate for 6 hour or preferably overnight
  • Take out from the refrigerator
  • Run a knife along the sides of the bowl
  • Place a plate over the bowl
  • Turn it upside down 
  • Serve chilled

കുട്ടികൾക്ക് കൊടുക്കാനൊരു കിടിലൻ സ്വീറ്റ് ! Fudge Tart Recipe


Ingredients:
 For tart shell:-
  • Maida 1 cup (140g)
  • Powdered sugar 1 tbs (15g)
  • Salt 1/4 tsp
  • Cold butter 70g
 For filling
  • Sugar 1/2 cup (100g)
  • Butter 2 tbs (30g)
  • Fresh cream 1/2 cup (120ml)
  • Pinch of salt
  • Cashew 1/2 cup
 Method:
  • Mix flour, powdered sugar and salt
  • Rub the butter with the flour till it looks sandy
  • Add 1- 1.5 tbs cold water and form a dough
  • Cover with a cling wrap and refrigerate for 30 minutes
  • Meanwhile prepare filling. For that heat up sugar till it become caramel
  • Add butter and mix well
  • Add cream and mix well
  • Turn off the heat and add cashews
  • Mix well and allow this to cool
  • After 30 minutes, roll out the dough to a sheet of 2-3mm thickness
  • Cut the dough using s cookie cutter
  • Insert the dough into the tart mold and press gently
  • Poke the bottom with a fork to avoid puffing while baking
  • Keep them in the freezer for 10 minutes
  • Bake in a preheated oven at 180 degree Celsius for 20 minutes or until light golden in colour
  • Remove from oven and allow them to cool completely
  • remove from the mold 
  • Fill with the caramel fudge
  • Delicious fudge tart is ready to serve
