Ingredients:
- Maida 1.5 cups (loosely packed) (180g)
- Corn flour 2 tbs (20g)
- Baking powder 1 tsp(4g)
- Baking soda 1/4 tsp
- Salt 1/4 tsp
- Butter 100g (1/2 cup)
- Sugar 13 tbs (195g)
- Eggs 2
- Fresh orange juice 1/4 cup (60ml)
- Curd 5 tbs (100g)
- Vanilla essence 1/2 tsp
- Orange zest 1 tbs
- Sift together maida, corn flour, baking powder, baking soda and salt; Keep this aside
- Mix orange juice and curd and keep aside
- Add sugar to a bowl
- Mix this with orange zest
- Now add butter and beat for 4-5 minutes until creamy and fluffy
- Add eggs one at a time and beat well
- Now add half portion off the flour mix and fold in gently
- Add orange juice + curd
- Add the remaining flour and fold in gently
- Pour this into the cupcake molds until 3/4 portion is filled
- Bake at 180 degree Celsius for 20-22 minutes
- Take out from the oven
- Soft and delicious orange cupcakes are ready to be served
