Ingredients:
Dry ingredients:-
- Maida 1.5 cups (225g)
- Baking powder 3/4 tsp (3g)
- Salt 1/2 tsp
- Cloves 1/4 tsp
- Cinnamon powder 1/4 tsp
- Dry ginger powder 1/4 tsp
- Cardamom powder 1/4 tsp
- Nutmeg powder 1/4 tsp
- Black raisins 100g
- Golden raisins 100g
- Tutti frutti 100g
- Dates 4-5
- Cashews 25g
- Almonds 25g
- Butter 3/4 cup (170g)
- Brown sugar 1/2 cup (100g)
- Eggs 3
- Caramel syrup 1/3 cup
- Orange marmalade 1/3 cup
- Vanilla essence 1/2 tsp
- Rum essence a few drops
- Plum essence a few drops
- Pineapple essence 1/4 tsp
- Orange zest 1 tbs
- Sugar 1/2 cup (100g)
- Water 2 tsp
- Hot water 1/4 cup (60ml)
- To prepare caramel syrup, heat up sugar and 2 tsp water till become light brown in colour
- Add 1/4 cup of hot water little by little
- Boil for 1 minute and turn off the flame
- Let the caramel to cool down completely
- Mix together maida, baking powder, salt and spice powder and keep aside
- Mix together dry fruits and nuts and keep aside
- Beat sugar and butter till become creamy and fluffy
- Add the eggs one at a time and beat well
- Now add the cool caramel, orange marmalade, essence of vanilla, rum, pineapple, and plum
- Mix well
- Add 1/3 portion of flour mix and 1/3 portion of fruit mix
- Fold in gently
- Again add next 1/3 portion of flour mix and fruit mix
- Fold in gently
- Finally add the remaining flour and fruit mix
- Fold in gently
- Transfer this batter to an 8 inch pan lined with baking paper
- Level the top and place some cashews on top
- Bake at 160 degree Celsius for 1hour and 30 minutes or till the internal temperature become 95 degree Celsius
- Take out from the oven
- Allow the cake to cool down completely
- The flavor and taste of the cake increase as it sits
- You can cut and enjoy the cake 2 or 3 days after baking the cake.
