Ingredients:
For vada:-
- Urad dal 1/2kg
- Onion 1 small (75g)
- Ginger a big piece (20g)
- Green chilli
- Curry leaves 2 sprigs
- Pepper corns 1 tsp
- Asafoetida 2 tsp
- Salt
- Grated coconut 1 cup
- Green chilli
- Ginger 1 small piece
- Shallots 3-4 pieces
- Salt
- Filter coffee powder 10g
- Hot water 100ml
- Sugar according to taste
- Milk 300ml
To make vada:
- Rinse the urad dal 3-4 times
- Soak for 2 hours
- Grind the soaked dal in batches until smooth and fluffy with minimum water
- Add chopped onion, green chilli, ginger, curry leaves, asafoetida, pepper corns and salt to the batter
- Mix gently
- Shape the vada with wet hand and deep fry until golden brown
- Serve hot with coconut chutney
- Grind together coconut, green chilli, ginger, shallots and salt along with a little water ; You can add mint leaves if you prefer.
- Add filter coffee powder to the upper chamber of the coffee filter
- Gently press with the plunger
- Add hot water to this
- Cover with lid and keep aside for 30 minutes
- Boil milk
- Combine this with sugar and the prepared decotion
- Pour into the glass and serve
