കള്ളപ്പം ഉണ്ടാക്കുന്ന വിധം | Kallappam Recipe


Ingredients:
  • Rice flour 2 cups
  • Grated coconut 2 cups
  • Sugar 3 tbs
  • Salt 3/4 tsp
  • Instant yeast 1 tsp
  • Shallots 3
  • Cumin 1/2 tsp
Method:
  • Take 3 tbs of rice flour in a vessel
  • Add 1 1/2 cups of water 
  • Stir and cook till it is thick
  • Add sugar and salt to this and mix well: Allow this to cool.
  • Grind together coconut, shallots, cumin and yeast to a smooth paste
  • Add this paste to the prepared roux
  • Add 3/4 cup of water
  • Add rice flour to this mix
  • Stir and combine everything well
  • Grind this again to make it smooth; Batter should not to be too thick or too thin.
  • Pour the batter to a big vessel
  • Cover and keep in a warm place for 3-4 hours
  •  Once it is fermented, heat a tawa
  • Pour one ladle full of batter and spread a little (do not make it too thin)
  • Once bubbles appear on top cover and cook till it is done
  • The soft and fluffy kallappam is ready
  • Serve with your favorite curry.

നെയ്യപ്പം പെർഫെക്റ്റായി എങ്ങനെ ഉണ്ടാക്കാം | Neyyappam Recipe


Ingredients:
  • Raw rice 1 1/2 cups (380g)
  • Jaggery 250g
  • Baking soda 3 pinches
  • Salt 1/4 tsp
  • Cumin 1/2 tsp
  • Sesame seeds 1 tsp
  • Cardamom 6 pods
  • Ghee 1 tbs
  • Wheat flour 1/2 cup (60g)
 Method:
  • Soak the rice for minimum 4 hours
  • Grind rice to smooth paste along with salt and cardamom seeds
  • Transfer this to a large bowl
  • Melt the jaggery along with 1/4 cup of water
  • Turn off the flame when the syrup is thick
  • Filter the syrup directly into the rice paste
  • Simultaneously stir well
  • Add wheat flour and make a thick batter of flowing consistency
  • Add cumin, sesame seeds, baking soda and ghee
  • Mix well
  • Heat up oil/ghee in a deep kadai
  • Pour a ladleful of batter to the hot oil
  • Deep fry until it reaches a light brown colour
  • Remove from oil
  • Repeat the same with remaining batter
  • Serve the neyyappam as a tea time snack

ചിക്കൻ ബൺ ഉണ്ടാക്കുന്ന വിധം | Chicken Bun Recipe


Ingredients:
 For the dough:
  • Maida 300g
  • Water 160ml
  • Instant yeast 1 tsp
  • Sugar 1 tbs (15g)
  • Butter 2 tbs (20g)
  • Milk Powder 1 tbs (10g)
  • Salt 3/4 tsp
 For filling:
  • Chicken 300g
  • Salt
  • Turmeric powder 1/2 tsp
  • Garam masala 1/2 tsp
  • Pepper 1/2 tsp
  • Curd 1 tbs
  • Chilli powder 3/4 tsp
  • Coriander powder 1 tsp
  • Giger garlic paste 1 tsp
  • Coriander leaves
  • Green chilli 3
  • Onion 1
  • Cabbage a small piece chopped
  • Carrot 1 small
  • Kasoori methi 1/2 tsp
Method:
 Filling:-
  • Marinate chicken with salt, turmeric powder, ginger garlic paste, pepper powder and curd
  • Keep aside for 20 minutes
  • Now, heat up some oil in a pan
  • Add sliced onion and green chilli
  • Stir and cook until the onion turns soft
  • Add turmeric powder, chilli powder, coriander powder and garam masala
  • Stir for a few seconds
  • Add marinated chicken and stir on high flame for 5 minutes
  • Add 2 tbs water 
  • Cover and cook for 2 minutes
  • Now add cabbage and carrot 
  • Stir for 2 minutes
  • Finally add coriander leaves and kasoori methi
  • Turn off the flame
  • Set aside to cool completely
Bread dough:-
  • Combine all the ingredients for the dough
  • Knead for 3 minutes
  • Keep aside for 1 1/2 hours
  • Again knead lightly
  • Divide into 10 equal pieces
  • Shape each pieces into balls
  • Roll them into a circle
  • Place filling as needed; You can add some cheese if you like.
  • Close the edges
  • Arrange in a baking tray
  • Keep aside for 45 minutes
  • Now give egg wash
  • Sprinkle some sesame seeds on top
  • Bake at 190 degree Celsius for 22 minutes
  • Take out from oven
  • Serve warm with tea

മട്ടൻ ഉലർത്തിയത് | Mutton Fry Recipe


Ingredients:
  • Mutton 1 kg
  • Ginger 20g
  • Garlic 30g
  • Green chilli 4
  • Chilli powder 1 3/4 tsp
  • Coriander powder 1 tbs
  • Turmeric powder 1/2 tsp
  • Garam masala 3/4 tsp
  • Pepper powder 3/4 tsp
  • Shallots 200g
  • Coriander leaves
  • Salt
  • Curry leaves
 Method:
  • Cook mutton with crushed ginger & garlic, green chilli, curry leaves, turmeric powder, pepper powder, coriander powder,chilli powder and garam masala
  • Heat up some coconut oil in a pan
  • Add shallots and curry leaves
  • Stir and cook till the shallots turn soft
  • Add cooked mutton along with gravy
  • Cook on high flame till the gravy is dried
  • Then reduce flame to low and cook on low heat for 20 minutes or the mutton pieces turn light brown in colour; Stir occasionally.
  • Finally add chopped coriander leaves.
  • Delicious mutton fry is ready to serve.

മത്തങ്ങാ കൊണ്ട് നല്ല കേക്ക് ഉണ്ടാക്കാം എന്ന് പറഞ്ഞാൽ വിശ്വസിക്കുമോ | Pumpkin Cake Recipe


Ingredients:
  • Pumpkin puree 300g
  • Eggs 2
  • Oil 120g
  • Sugar 150g
  • Curd 60g
  • Wheat flour 250g
  • Cashews 20g
  • Pumpkin seeds (optional)
  • Flax seeds powder 1 tbs (optional)
  • Vanilla essence 1/4 tsp
  • Cinnamon powder 1/2 tsp
  • Baking powder 1 tsp (4g)
  • Baking soda 1/2 tsp (2g)
  • Salt 1/4 tsp
Method:
  • Mix all the ingredients together
  • Transfer to a baking dish
  • Bake at 170 degree Celsius for 60 minutes or a toothpick inserted at the centre of the cake comes out clean
  • Once done, take out from the oven
  • Remove from the pan
  • Allow to cool completely
  • Slice and enjoy

ഉള്ളി സാമ്പാർ ഉണ്ടാക്കുന്ന വിധം | Ulli Sambar | Kerala style recipe


Ingredients:
  • Toor dal 80g
  • Tomato 2 (200g)
  • Turmeric powder 1/2 tsp
  • Asafoetida a small piece (3g)
  • Tamarind 10g
  • Shallots 150g
  • Green chilli 2
  • Garlic 5 cloves (5g)
  • Coriander leaves
  • Sambar powder 3 tbs (30g)
  • Mustard seeds 1/2 tsp
  • Fenugreek seeds 1/4 tsp
  • Curry leaves
Method:
  • Cook the dal along with one tomato, asafoetida, turmeric powder, salt and 1 cup of water and keep aside.
  • Soak the tamarind in 1 cup of water
  • Heat some oil in a vessel
  • Saute shallots, green chilli and curry leaves till the edges of shallots become golden
  • Add crushed garlic and stir for a few seconds
  • Add chopped tomato and add 1/2 tsp salt
  • Stir for 2 minutes
  • Add sambar powder and stir for a few seconds
  • Add tamarind juice to this
  • Bring to a boil
  • Add cooked dal to this
  • Add 1 more cup of water
  • Adjust salt
  • Allow this to boil
  • Add coriander leaves
  • Turn off the flame
  • Add some coconut oil in a pan
  • Crack some mustard seeds
  • Add fenugreek seeds, dried red chillies and curry leaves
  • Pour it over the curry
  • Serve after 30 minutes for better taste

ബേക്കറിയിൽ കിട്ടുന്നതിനേക്കാൾ നല്ല മുട്ട പഫ്‌സ് ഈസിയായി വീട്ടിലുണ്ടാക്കാം | Egg Puffs Recipe



Ingredients:
 For sheet :-
  • Maida 250g
  • Butter 100g
  • Cold water 115 ml
  • Sugar 1 tsp (5g)
  • Salt 1/4 tsp (3g)
  • Ghee 1 tbs (15g)
 For filling (egg puffs):-
  • Boiled eggs 
  • Onion 2 
  • Green chilli 3
  • Curry leaves 1 sprig
  • Garlic 5 cloves
  • Ginger 1" piece
  • Turmeric powder 1/2 tsp
  • Garam masala 3/4 tsp
  • Pepper 1 tsp
  • Salt
 Method:
  • Cut butter into 4 equal pieces and make each butter to 3" square pieces; Keep them in freezer.
  • Make dough by combining together flour, water, salt, sugar and ghee
  • Keep them in refrigerator for 30 minutes
  • After 30 minutes of rest, divide the dough into 4 equal pieces
  • Shape them into balls
  • Roll each ball into a square into a 5" squares
  • Place cold butter blocks on it diagonally and cover with dough
  • Roll them into a rectangle of size 9"x4.5"
  • Fold it (refer video) and keep in freezer for 20 minutes or till the butter is cold and firm enough to roll again
  • Repeat rolling and folding two more times
  • Do this for all four portions 
  • Finally your puffs pastry sheets are ready; You can use it for making puffs with your favorite filling
 To make egg puffs:
  • Heat up oil in a pan
  • Add sliced onion, green chilli and curry leaves
  • Once it turn into golden, add crushed ginger and garlic and stir for 2 minutes
  • At this stage add turmeric powder, pepper powder and garam masala
  • Add salt as needed
  • Turn off the flame and allow this to cool
  • Once it is done, take out prepared puffs pastry sheets from refrigerator
  • Roll them to a rectangle of 8"x4"
  • Place filling and sliced egg
  • Fold it
  • Give egg wash
  • Bake at 250 degree Celsius for 10 minutes and then at 200 degree Celsius for 14 minutes
