Ingredients:
- Jeerakasala /Basmathi rice 1 cup(210g)
- Mushroom 200g
- Onion 1 (100g)
- Tomato 1 (80g)
- Green chilli 1
- Garlic 10 cloves (10g)
- Turmeric powder 1/2 tsp
- Kashmiri chilli powder 1 tsp
- Pepper powder 1/2 tsp
- Garam masala 1/2 tsp
- Coriander leaves
- Star anise 1
- Cashews 25g
- Wash and soak the rice for 30 minutes
- Then drain and keep aside
- Boil 1.75 cups of water
- Add salt as needed
- Add rice and boil without lid till the rice and water become the same level
- Then cover the pot and cook on low heat for 8 minutes
- Turn off the flame and open the pot only after 10 minutes
- Fluff up the rice using a fork and allow the rice to cool
- Heat 2 tbs of ghee and 2 tbs of oil in a heavy bottomed vessel
- Add star anise fry for a few seconds
- Now add cashews and fry till golden
- Remove them from oil
- Add onion and sauté till golden
- Add crushed garlic and stir for a few seconds
- Add tomato and salt
- Cook till the tomato is very soft
- Now add turmeric powder, chilli powder and pepper powder
- Stir for 1 minutes
- Add sliced mushroom and cook for 7-8 minutes till all the moisture get evaporated
- Add cooled rice
- Sprinkle some pepper powder, garam masala and coriander leaves
- Add fried cashews
- Combine everything very well
- Mushroom rice is ready to serve !!
