ക്യാരറ്റ് ഹല്വ ഉണ്ടാക്കിയാലോ | Carrot Halwa Recipe


Ingredients:
  • Carrot 1/2 kg (4 cups)
  • Milk 2 cups (500ml)
  • Sugar 1/2 cup (110g)
  • Cardamom powder 1/2 tsp
  • Ghee 4 tbs
  • Cashews 1 tbs
  • Almonds 1 tbs
  • Raisins 1 tbs
 Method:
  • Heat up 3 tbs ghee and add grated carrot
  • Sauté for 8 minutes
  • Add milk and cook on low medium flame until the entire milk is get evaporated
  • Add sugar followed by cardamom powder
  • Stir and cook for 10 - 12 minutes more
  • Turn off the flame
  • Heat 1 tbs ghee and fry cashews, almonds and raisins
  • Add to the halwa and mix well
  • Delicious carrot halwa is ready to serve

ചിക്കൻ കൊണ്ട് ഒരു സ്പെഷ്യൽ ഐറ്റം ഉണ്ടാക്കിയാലോ | Chicken Kebab Roll Recipe | Seekh Kabab Recipe


Ingredients:
 For seekh kebab:-
  • Ground chicken 500g
  • Salt 1tsp
  • Turmeric powder 1/2 tsp
  • Chilli powder 1 tsp
  • Pepper powder 3/4 tsp
  • Garam masala 1/2 tsp
  • Coriander powder 1 tsp
  • Roasted cumin powder 1/2 tsp
  • Lemon juice 1 tsp
  • Ghee 1 tbs
  • Mint leaves
  • Coriander leaves
 For bread dough:-
  • Maida 300g
  • Warm water 180ml
  • Salt 3/4 tsp
  • Sugar 2 tbs
  • Instant yeast 1 tsp
  • Butter 2 tbs
  • Milk powder 2 tbs
 Method:
 To prepare kebab:-
  • Chop onion, coriander leaves and mint leaves very finely
  • Squeeze and remove water from onion
  • Mix all the ingredients very well
  • Refrigerate for 2 hours
  • After 2 hours shape into kebabs on a skewer or without it
  • Apply oil on a hot tawa
  • Cook the kebabs on medium high heat for 2-3 minutes on each side, until evenly browned
  • Baste with ghee or oil in between
 To prepare bread dough:-
  • Mix all the ingredients listed under 'to make bread dough'
  • Knead for 10 minutes
  • Allow it to rest for 30 minutes
 To make kebab roll:-
  • Later divide the dough into 8 equal sized pieces
  • Shape them into balls
  • Take each ball and roll it into oval shape
  • Then roll and form a long cylinder (18cm)
  • Roll it around the seekh kebab
  • Transfer them to a baking tray
  • Let them rest for 45 minutes
  • Give egg wash and sprinkle some sesame seeds on top
  • Bake at 190 degree Celsius for 20-22 minutes
  • Remove from oven and allow them to cool
  • Delicious kebab rolls are ready!

ബീഫ് ഫ്രൈ എന്ന് പറഞ്ഞാൽ ഇങ്ങനെ തന്നെ ഉണ്ടാക്കണം | Beef Fry Kerala Style Recipe


Ingredients:
 To cook beef:-
  • Beef 1kg
  • Ginger -garlic- green chilli crushed 1 tbs
  • Curry leaves
  • Onion 1
  • Chilli powder 1 tsp
  • Turmeric powder 1/2 tsp
  • Pepper powder 3/4 tsp
  • Garam masala 1/2 tsp
  • Salt 2 tsp
 To fry:-
  • Shallots 15
  • Fennel seeds 1/2 tsp
  • Ginger -garlic-green chilli crushed 1tbs
  • Chilli flakes 1 tsp
  • Chilli powder 1/2 tsp
  • Turmeric powder 1/4 tsp
  • Pepper powder 1/2 tsp
  • garam masala 1/4 tsp
  • Curry leaves
  • Coriander leaves
Method:
  • Pressure cook the beef along with all the ingredients listed under 'to cook beef'
  • Cook till the excess moisture get evaporated
  • Heat up some coconut oil in a pan
  • Add fennel seeds followed by shallots
  • Stir for a few seconds
  • Add ginger-garlic- green chilli crushed and curry leaves
  • Add chilli flakes, chilli powder, turmeric powder and pepper powder
  • Stir for a few seconds
  • Add cooked beef 
  • Stir and cook on low flame for about 20 minutes till the beef get a dark brown color
  • Finally add chopped coriander leaves and garam masala
  • Delicious beef fry is ready to serve

ഒരു സ്പെഷ്യൽ ചിക്കൻ ബിരിയാണി ഉണ്ടാക്കിയാലോ | Chicken Biryani Recipe



Ingredients:
 To marinate:-
  • Chicken 800g
  • Salt 1.5 tsp
  • Turmeric powder 1/2 tsp
  • Chilli powder 1.5 tsp
  • Curd 2 tbs
 For masala :-
  • Onion 4 (400g)
  • Ginger 20g
  • Garlic 30 cloves (30g)
  • Green chilli 12 (50g)
  • Tomato 3 (350g)
  • Cashew paste 2 tbs
  • Coriander leaves
  • Mint leaves
  • Biriani masala 2 3/4 tsp
  • Turmeric powder 1/2 tsp
  • Pepper powder 1 tsp
 For rice:
  • Jeerakasala rice 3 cups (660g)
  • Water 5 1/4 cups (1.3ltr)
  • Whole spices 
  • Salt 13/4 tsp
  • Onion 1/2 (50g)
  • Ginger garlic paste 1 tsp
  • Ghee 3 tbs
  • Oil 3 tbs
 For layering:
  • Fried onion
  • Fried cashews
  • Fried raisins
  • Mint leaves
  • Coriander leaves
  • Biryani masala 
 For biryani masala:
  • Fennel seeds 2 tbs
  • Cardamom 15
  • Cinnamon 2"
  • Cloves 4
  • Sajeera 1 tsp
  • Coriander seeds 1 tsp
  • Pepper 1/2 tsp
  • Mace a small piece
  • Nutmeg a small piece
  • Star anise 1
 Method:
  • Marinate the chicken with all the mentioned ingredients for 30 minutes
  • Later shallow fry them till about 80% is done
  • Soak the rice for 30 minutes and then drain 
  • Deep fry 200g sliced onions until golden colour
  • Fry cashews and raisins and keep aside for later use
  • To make biryani masala, dry roast all the listed spices on medium heat for 2-3 minutes and then turn off the heat; Once they are cool enough to touch, add to a grinder jar and powder them.
  • To prepare chicken masala heat up some oil and add in 200g of sliced onion
  • Saute until light brown in colour
  • Add crushed ginger-garlic- green chilli and stir for 2 minutes
  • Add tomatoes and cook until they are very soft
  • Add turmeric powder, pepper powder and prepared biryani masala
  • Stir for 1 minute
  • Add fried chicken and 1/2 cup water
  • Cover the vessel and cook for 15 minutes ;Stir in between.
  • Finally add cashew paste, 1/4 portion of fried onion, 3/4 tsp biryani masala, coriander leaves and mint leaves
  • Mix everything well and the chicken masala is ready
  • To prepare rice heat up oil and ghee in a biryani pot
  • Add whole spices and stir for 1 minute
  • Add sliced onion and ginger garlic paste
  • Stir for 1 minute and then add water
  • Bring to boil
  • Add salt and drained rice
  • Cook on high flame without lid
  • When the rice and water become the same level, put the lid and cook on low flame for 8 minutes
  • For layering, remove half portion of the cooked rice
  • Add biryani masala, mint leaves, coriander leaves, fried onion, fried cashews and fried raisins
  • Add the chicken masala as the next layer
  • Now add the rice
  • Add biryani masala, mint leaves, coriander leaves, fried onion, fried cashews and fried raisins
  • Cover the pot and cook on low heat for 10 minutes
  • Open the pot only after 30 minutes
  • Delicious chicken biryani is ready to serve!!

മുളപ്പിച്ച ചെറുപയർ തോരൻ | Mulappicha Cherupayar Thoran


Ingredients:
  • Sprouted green gram 1.5 cups
  • Coconut 1/2 cup
  • Shallots 4
  • Garlic cloves 4
  • Curry leaves 2 sprigs
  • Chilli flakes 2 tsp
  • Pepper 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Salt
  • Coconut oil 1.5 tbs
  • Mustard seeds 1/2 tsp
 Method:
  • Cook the sprouted gram along with salt and a little water
  • Heat up oil in a pan
  • Crack the mustard seeds
  • Add crushed shallots, garlic and curry leaves
  • Fry till golden
  • Add chilli flakes, pepper and turmeric
  • Stir for 1 minute
  • Add cooked green gram and coconut
  • Mix well
  • Nutritious green gram thoran is ready

  • Crumbled paneer 3 tbs

Ingredients:
 For cooking beef:-
  • Beef 1kg
  • Onion 1 small (75g)
  • Ginger 10g
  • Garlic 15g
  • Green chilli 15g
  • Curry leaves
  • Chilli powder 1tsp
  • Pepper powder 3/4 tsp
  • Turmeric powder 1/2 tsp
  • Garam masala 1/2 tsp
  • Salt 1.5 tsp
For masala :-
  • Onion 2 (200g)
  • Tomato 2 (200g)
  • Ginger garlic green chilli crushed 1tbs
  • Curry leaves
  • Chilli powder 1/2 tsp
  • Kashmiri chilli powder 2 tsp
  • Coriander powder 2 tsp
  • Garam masala 1/4 tsp
  • Turmeric powder 1/2 tsp
  • Coriander leaves
 Method:
  • Mix together all the ingredients listed under 'for cooking beef'
  • Pressure cook until the beef is tender
  • heat up some coconut oil in a pan
  • Add onion and sauté till golden
  • Add crushed ginger-garlic-green chilli and curry leaves
  • Sauté for 2 minutes
  • Add tomatoes and cook until mushy
  • Add powdered masalas except garam masala
  • Stir for 2 minutes
  • Add cooked beef and mix well
  • Cover the pan and cook on low flame till oil appear on top
  • Finally add garam masala and coriander leaves
  • Serve hot with chappathi, appam or puttu
