Ingredients:
- Prawns 120-150g
- Raw mango 1 (75g, without seed)
- Coconut 3/4 cup (75g)
- Green chilli 5 (15g)
- Shallots 10 (40g)
- Curry leaves
- Ginger 20g
- Garlic 5 cloves
- Chilli powder 2 1/2 tsp
- Coriander powder 1 tsp
- Turmeric powder 1/2 tsp
- Fenugreek powder 1/4 tsp
- Rub together crushed ginger and garlic, green chilli, curry leaves, chilli powder, coriander powder, salt, turmeric powder and 1 tbs of coconut oil
- To this add 1.5 cups of water
- Cook this mix
- When it begin to boil add cubed mango and cook for 1 minute
- Add prawns and cook for 6 minutes
- Then add coconut paste
- Turn off the flame when it begin to boil
- Add fenugreek powder and mix well
- Heat up some coconut oil and fry 4-5 chopped shallots and 2 sprigs of curry leaves
- Pour this over the curry
- Cover the pot let this sit for 30 minutes
- Serve with rice, appam or puttu
