Ingredients
- Maida 1 1/2 cups (200g0
- Salt 1/2 tsp (3g)
- Water 100ml (6 tbs + 2 tsp)
- Yellow food colour a few drops
- Sugar 1/2 cup (100g)
- Water 1/4 cup (60ml)
- Add food color to water
- Combine together flour, salt and water
- Cover and allow it to rest for minimum 30 minutes
- Divide the dough into 5 equal pieces
- Shape them to smooth balls
- Spread some rice four on the counter top
- Roll out each ball to 6 inch circles
- Apply some ghee and then sprinkle rice flour over each dough circles
- Stack them and roll into a rectangle shape
- Again brush some ghee and sprinkle rice flour over it
- Now roll this to get a log shape
- Cut this into 1 inch pieces
- Roll out each pieces slightly and deep fry in hot oil
- Keep the flame to medium and fry them until very crispy
- When they are ready, remove from oil and allow them to cool down completely
- To make the sugar syrup, add sugar and water to a vessel
- Boil till it reaches one string consistency
- Dip each fried kaja in the syrup
- Allow them to dry
- And the delicious , flaky and crunchy kaja / madakk is ready to serve
