Madakku Recipe | Madakku San | Madakku Seva | Ainas | Khaja


Ingredients
  • Maida 1 1/2 cups (200g0
  • Salt 1/2 tsp (3g)
  • Water 100ml (6 tbs + 2 tsp)
  • Yellow food colour a few drops
 For the syrup
  • Sugar 1/2 cup (100g)
  • Water 1/4 cup (60ml)
 Method
  • Add food color to water
  • Combine together flour, salt and water
  • Cover and allow it to rest for minimum 30 minutes
  • Divide the dough into 5 equal pieces
  • Shape them to smooth balls
  • Spread some rice four on the counter top
  • Roll out each ball to 6 inch circles
  • Apply some ghee and then sprinkle rice flour over each dough circles
  • Stack them and roll into a rectangle shape
  • Again brush some ghee and sprinkle rice flour over it
  • Now roll this to get a log shape
  • Cut this into 1 inch pieces
  • Roll out each pieces slightly and deep fry in hot oil
  • Keep the flame to medium and fry them until very crispy
  • When they are ready, remove from oil and allow them to cool down completely
  • To make the sugar syrup, add sugar and water to a vessel
  • Boil till it reaches one string consistency
  • Dip each fried kaja in the syrup
  • Allow them to dry 
  • And the delicious , flaky and crunchy kaja / madakk is ready to serve
