Ingredients:
- Mushrooms 200g
- Onion 2 (200g)
- Tomato 1 (150g)
- Garlic 12 cloves (15g)
- Ginger 1 piece (10g)
- Curry leaves
- Green chili 2 (15g)
- Turmeric powder 1/2 tsp
- Chili powder 1 tsp
- Pepper powder 3/4 tsp
- Coriander powder 1.5 tbs
- Garam masala 1/2 tsp
- Coriander leaves
- Coconut milk 1/4 cup
- Heat oil in a pan
- Add crushed ginger and garlic
- Stir and cook for 1 - 2 minutes
- Add finely chopped onions, slitted green chili and curry leaves
- Stir and cook on medium high flame for 6 minutes until the onions turn light brown
- Add tomato and salt
- Cover and cook on low flame till the tomato is cooked well
- Once the tomato become mushy add the spice powders and cook for 1 minute
- Add cleaned mushrooms and stir on high flame for 4 minutes
- Add 1/4 cup of hot water and cook covered on low flame for 2 minutes
- Open the lid and add coconut milk, garam masala, 1/2 teaspoon of pepper and coriander leaves
- Cook for one minute more and turn off the flame
- Serve this delicious mushroom masala with steamed rice or roti.
