Ingredients:
- Boiled eggs 4
- Onion 1 (100g)
- Tomato 1small (50g)
- Green chilli 4
- Ginger garlic paste 2 tsp
- Red chilli powder 1/2 tsp (adjust according to taste)
- Pepper 1/2 tsp
- Fennel powder 1/2 tsp
- Garam masala 1/2 tsp
- Coriander powder 2 tsp
- Curry leaves 1 sprig
- Coriander leaves
- Kasoori methi
- Oil 3 tbs
- Salt as needed
- Thick coconut milk 3/4 cup
- Heat up oil in a pan
- Add onion and stir for 4-5 minutes until slightly golden in color
- Add ginger garlic paste, green chilli, and curry leaves
- Stir and cook for 2 minutes
- Add tomato and salt
- Cook till the tomato is soft
- Add the spice powders and stir on low heat for 1 minute
- Further add 1.5 cups of water
- When it begin to boil, add the eggs, coconut milk, coriander leaves and kasoori methi
- Cover and cook for a couple of minutes and turn off the heat.
- Delicious egg curry is ready to serve
- This egg curry is an amazing combination with chapati, idiyappam, appam etc.
