Thrissur Style Mutta Manga Curry



Mutta Manga Curry

 Ingredients :


  • onion - 1 (sliced)
  • shallots - 2 tbs + 3tbs(for tempering)
  • a small piece of ginger crushed
  • mango (with less sourness) - 1(peel and cut into small pieces)
  • green chilly - 4,5
  • chilly powder - 3/4 tbs
  • coriander powder - 1 tbs
  • turmeric powder - 1/2 tsp
  • curry leaves as needed
  • salt
  • boiled eggs - 4
  • thin coconut milk - 2 cups 
  • thick coconut milk - 1 cup

 Method :



  • in a vessel mix together onion, shallots, ginger, mango pieces, green chilly, curry leaves, chilly powder, coriander powder, turmercic powder and salt
  • add in 2 tbs coconut oil and mix well with hands
  • now add thin cocnut milk
  • cook this mix until the mango pieces are soft, about 4 - 5 minutes (do not overcook)
  • reduce flame and add in thick coconut milk
  • bring to a good boil
  • adjust salt
  • now slowly add in eggs and mix gently
  • turn off the flame
  • heat up some coconut oil in a separate pan and fry some shallots and curry leaves until the shallots are golden
  • pour it over the curry and mix gently
  • yummy egg mango curry is ready to serve.
  • serve with rice
