ഒരു സ്പെഷ്യൽ ബീഫ് ബിരിയാണി റെസിപ്പി | Beef Biryani Recipe


 Ingredients:
 To cook beef:-
  • Beef 1 kg
  • Ginger garlic crushed 1 tbs
  • Curry leaves 2 sprigs
  • Turmeric powder 1/2 tsp
  • Pepper powder 3/4 tsp
  • Garam masala (homemade) 1/2 tsp
  • Salt 1.5 tsp
  • Chilli powder 1 tsp
 For masala:-
  • Onion 4 (400g)
  • Tomato 3 (300g)
  • Ginger 20g
  • Garlic 30g
  • Green chilli as needed
  • Garam masala 1tsp
  • Pepper 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Mint leaves
  • Coriander leaves
  • Beef stock 3/4 cup
 For rice:
  • Jeerakasala rice 4 cups (900g)
  • Water 6 cups (1500 ml)
  • Beef stock 1 cup (1 cup)
  • Cardamom 6, cloves 3, cinnamon stick 1" piece, sajeera 1/2 tsp, mace a small piece, star anise 2 petals
  • Ghee 5 tbs (75g)
  • Oil 1 tbs
  • Ginger garlic crushed 1 tsp
  • Onion 2 tbs
 For layering:-
  • Fried cashew
  • Fried raisins
  • Fried onion
  • Mint leaves & coriander leaves
Method:
  • Cook beef with ingredients listed under ' to cook beef '
  • Drain from stock and shallow fry for 4-5 minutes
  • Saute sliced onion until golden
  • Add crushed ginger, garlic and green chilli
  • Saute for 2 minutes
  • Add tomatoes and cook until very soft
  • Add turmeric powder, garam masala and pepper powder
  • Add fried beef and stock
  • Mix well and cook covered for 3 minutes
  • Open the lid, add garam masala, coriander leaves, mint leaves and fried onion
  • Mix well and keep aside
  • To make rice, soak the rice for 30 minutes and then drain from water
  •  Heat up ghee and oil in a heavy bottomed vessel
  • Add whole spices, crushed ginger-garlic, and onion
  • Add water and beef stock
  • Let this boil
  • Add salt as needed
  • Add rice and cook without lid until rice and water become same level
  • Cover the pot and cook on low heat for 8 minutes
  • Turn off the heat and open the pot after 10 minutes
  • Layer the rice and beef masala
  • Add fried cashews, raisins, onion, mint laves , coriander leaves and garam masala in each layer
  • Cook on low heat for 10 minutes
  • Turn off the heat
  • Serve after 30 minutes

ക്രിസ്മസിനും ന്യൂ ഇയറിനും ഉണ്ടാക്കാൻ ഒരു സ്പെഷ്യൽ കേക്ക് റെസിപ്പി | Yule Log Cake Recipe


Ingredients:
 For sponge cake:-
  • Eggs 4
  • Sugar 80g (5 tbs +2 tsp)
  • Maida 80g (8 tbs)
  • Cocoa powder 6g (1 tbs)
  • Lemon juice / Vinegar 10 ml (2 tsp)
  • Pinch of salt
  • Milk 40ml (2 tbs + 2 tsp)
  • Oil 40ml (2 tbs + 2 tsp)
  • Vanilla essence 1/2 tsp
   Butter cream filling:-
  • Butter 50g
  • Powdered sugar 100g
  • Vanilla essence 1/2 tsp
  Chocolate ganache:-
  • Milk chocolate 50g
  • Dark chocolate 50g
  • Fresh cream 60 ml
  Meringue mushrooms
  • Egg whites 2
  • Sugar 75g (5 tbs)
  • Pinch of salt
  • Lemon juice 1 tsp
Method:
 Sponge cake
  •  Mix together maida and cocoa powder; Keep this aside
  • Separate white and yolk of eggs
  • To the yolk, add salt and lemon juice
  • Beat them until frothy
  • Now add 40g of sugar in three batches
  • Beat well until it reach stiff peak
  • To the yolk, add vanilla essence and remaining sugar
  • Beat well until thick and creamy
  • Now add milk and oil
  • Beat well
  • Add flour to this mix
  • Combine gently and make a smooth batter 
  • Add 1/3 portion of meringue (beaten egg white) and combine gently
  • Combine this with the remaining meringue 
  • Transfer this to a baking tray lined with baking paper
  • Spread the batter evenly
  • Bake at 180 degree Celsius for 25 minutes
  • Take out from the oven
  • Allow the cake to cool completely
 Butter cream filling:
  • Beat together butter , vanilla and powdered sugar until smooth and creamy
 Chocolate ganache:
  • Chop the chocolate
  • Heat the cream
  • Pour the hot cream over the chocolate
  • Let this sit for 2 minutes
  • Then stir with a spatula
  • Smooth ganache is ready
  • Let it sit until thick
  Meringue Mushrooms:
  • To the egg whites, add salt and lemon juice
  • Beat until frothy
  • Add sugar in batches and beat well
  • Stop beating when it reach stiff peak
  • Pipe this to baking tray lined with baking paper and make cap and stem of mushrooms
  • Bake this at 120 degree Celsius for 2 hours
  • Take out from oven
  • Allow them to cool
  • They should be stored in refrigerator
 Assembling
  • Apply filling to the cake and roll it
  • Cut a small piece of cake
  • Place it on the side of big piece
  • Apply ganache all over the cake
  • Make lines using a fork to look like tree bark
  • Decorate with meringue mushrooms and powdered sugar
  • Delicious Yule Log Cake is ready to serve

പാവയ്ക്കാ കൊണ്ട് ഇങ്ങനെ ഉണ്ടാക്കിയിട്ടുണ്ടോ | Pavakkai Recipe


Ingredients:
  • Bitter gourd 1 small (120g)
  • Onion 1 small (75g)
  • Ginger a small piece (8g)
  • Green chilli 3
  • Curry leaves
  • Curd 1 cup (250 ml)
  • Salt as needed
 Method:
  • Heat up coconut oil in a pan
  • Crack mustard seeds
  • Add onion, ginger, green chilli and curry leaves
  • Saute for 2 minutes
  • Add chopped bitter gourd and salt
  • Stir and cook on medium heat until turn golden
  • Add to curd and mix well
  • Adjust salt
  • Serve with rice

നല്ല നാരങ്ങാ അച്ചാർ എങ്ങനെ ഉണ്ടാക്കാം | Naranga Achar Recipe | Lemon Pickle Kerala Style Recipe | Lime Pickle Recipe


Ingredients:
  • Lime 10 (500g)
  • Ginger a big piece (20g)
  • Ginger bulbs (30g)
  • Green chilli 3
  • Curry leaves 3 sprigs
  • Kashmiri chilli powder 3 tbs
  • Spicy chilli powder 1 tbs
  • Turmeric powder 1/2 tsp
  • Asafoetida 1.5 tsp
  • Fenugreek powder 1/4 tsp
  • Mustard seeds 2 tsp
  • Fenugreek seeds 1/2 tsp
  • Vinegar 1/4 cup
  • Salt
  • Sugar 1/2 tbs
  • Gingelly oil 1/2 cup
  • Cardamom 1, cloves 1, cinnamon a small piece
Method:
  • Steam the lime for 8 minutes
  • Remove from steamer and allow them to cool
  • Once cool slice them to small pieces
  • Add salt and sugar
  • Keep aside for minimum 30 minutes
  • Heat up gingelly oil in a pan
  • Add cardamom, cloves and cinnamon
  • Add mustard seeds and fenugreek seeds
  • Add ginger, garlic, green chilli and curry leaves
  • Fry until golden
  • Reduce flame to low
  • Add chilli powder, fenugreek powder , turmeric powder and asafoetida
  • Add vinegar and let it boil
  • Add sliced lemon and mix well
  • Add 1/4 cup of water and allow to boil
  • Adjust salt and turn off the gas
  • Store in clean and dry bottle
