Ingredients:
- Boiled eggs 5
- Tomato 3 (300g)
- Onion 2 (150g)
- Green chilli 2
- Ginger 1 small piece
- Garlic 4-5 cloves
- Curry leaves 3 sprigs
- Coconut 1/2 cup
- Kashmiri chilli powder 2 tsp
- Spicy chilli powder 1/2 tsp
- Turmeric powder 1/2 tsp
- Cumin 1/4 tsp
- Dried red chilli 2
- Heat some coconut oil and add cumin seeds
- Add onion and stir well till the onions are soft
- Add green chilli, ginger, garlic and curry leaves
- Stir for 1 minute
- Add tomatoes and needed salt
- Cook till the tomatoes are very soft
- Add chilli powder and turmeric powder
- Stir for 2 minutes
- Add coconut paste and water
- Add boiled eggs and mix gently
- Turn off the heat when it begin to boil
- Add some oil and crack some mustard seeds
- Add dried red chilli and curry leves
- Pour it over the curry
- Serve with rice
