Ingredients :
- Brinjal 3 medium (250g)
- Drum stick 2 (100g)
- Onion 1 (75g)
- Shallots 7 (40g)
- Tomato 1 (100g)
- Garlic 20 cloves (20g)
- Turmeric powder 1/2 tsp
- Spicy chilli powder 1 tsp
- Kashmiri chilli powder 1 tsp
- Coriander powder 1 tbs
- Fennel powder 1 tsp
- Curry leaves
- Mustard seeds 1 tsp
- Fenugreek seeds 1/4 tsp
- Tamarind 15g or as needed
- Heat up oil in a pan
- Crack mustard and fenugreek seeds
- Add onion, shallots, garlic and curry leaves
- Stir and cook until they are very soft
- Add tomato and salt
- Cook till tomato is very soft
- Add chilli powder, coriander powder, turmeric powder and fennel powder
- Stir for 2 minutes
- Add drumstick pieces and stir for 2 minutes
- Add brinjal and mix well
- Now add 2 cups of hot water
- Mix well till vegetables are soft
- Add tamarind juice
- Cook on low flame for 6 minutes more
- Turn off the heat and the delicious curry is ready to serve
